- Brown Italian Sausage; remove from pan and set aside.
- In a large saucepan, melt butter.
- Add diced onions and minced garlic, cook for 1 to 2 minutes or until onion is tender.
- Stir in flour.
- Slowly add evaporated milk and chicken broth, stirring occasionally until the mixture comes to a boil.
- Add tomatoes (undrained), cooked sausage and kidney beans.
- Heat through. Season to taste with salt and pepper.

- In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Yummy! This soup is great! I make this soup when I make an Italian dinner for guests and everyone wants the recipe. It's also great on those cold winter days where suppers call for a hot and delicious soup. A combination of sausage and vegetable in a beefy broth. This may be made a day in advance. - Heat a pot over medium heat. Cook and stir turkey sausage in the hot pot until browned and crumbly, 5 to 7 minutes.
- Stir carrots, onion, mushrooms, 1/4 cup parsley, and garlic into sausage. Cook and stir until onion is soft, 7 to 10 minutes.
- Pour water, garbanzo beans with liquid, beef bouillon cubes, and sage into sausage mixture. Bring to a boil, cover the pot, reduce heat to low, and simmer until carrots are tender, about 10 minutes. Skim and discard any accumulated fat. Season with salt and pepper; garnish with remaining 4 teaspoons parsley.

CREAMY WHITE BEAN & ITALIAN SAUSAGE SOUP
This recipe was in a little recipe pamphlet DH received in the mail. I added extra seasonings and increased the cooking times. I served it with hot crusty sourdough bread and it made a wonderful cold weather soup. As an added bonus using canned beans makes it a very quick and easy dish to put together. I like using the parmesean cheese and DH likes the extra "kick" of the crushed red peppers.

Steps:
- Drain beans in colander and remove 1 1/2 cups beans and place in mixing bowl.
- Using a potato masher or the back of a spoon mash beans to a fairly smooth consistency then set aside.
- In large skillet cook sausage over medium heat breaking up into small pieces until browned.
- Remove sauage from skillet and place on paper towels to absorb grease.
- In heavy dutch oven or stock pot heat oil over medium heat.
- Add chopped onions, carrots and celery to hot oil and cook until softened, about 20-25 minutes.
- Add broth, whole beans and minced garlic to vegetable mixture.
- Bring to a simmer, lower heat and stir in cooked sausage and reserved mashed beans.
- Add seasonings, cover and simmer gently over medium heat for about 30 minutes.
- Add heavy cream and cook covered over low heat for about 10 minutes.
- Place in bowls and sprinkle with grated parmesean cheese and crushed red pepper flakes, if desired.

Add the onion, green bell pepper, carrot, and garlic. Season with the kosher salt and pepper, and cook, stirring occasionally, until the onion and pepper softens, about 5 minutes.
- Sprinkle the flour over the sausage and veggie mixture and stir to coat, stirring and cooking for 1-2 minutes or until it loses its raw floury taste and begins to smell toasty. Slowly add the milk and stir until smooth. Cook until the the mixture begins to thicken and bubble, stirring often, then add Worcestershire sauce, sage and beans. Reduce the heat to medium-low and continue to cook for 15-20 minutes or until the flavors come together, stirring occasionally. Add more salt and pepper to taste.
