SOUTHERN BANANA PUDDING RECIPE
Nothing tops off a great home-cooked Southern meal any better than down home, made-from-scratch, banana pudding. Or, as we sometimes call it...'naner puddin'. It's just downright good and most definitely...a Southern tradition.

Steps:
- Preheat your oven to 350 degrees.
- Separate 3 eggs, set the whites aside for later use in the meringue.
- Add 3 cups of milk to a medium saucepan. Place over LOW heat on your stovetop.
- Slowly add flour, whisking continually to avoid lumps.
- Slowly stir in 1/2 cup of sugar, whisking continually until fully dissolved.
- Use a fork and break up the egg yolks.
- Slowly add the egg yolks to the saucepan, whisking continually to avoid making scrambled eggs. It's very important to stay with the cooking process at this point. Keep stirring.
- Increase the heat gradually up to about medium as you constantly whisk the pudding mixture.
- Using a candy thermometer, bring the mixture up to 170 degrees. Continue to stir it constantly as it thickens. When it reaches 170 degrees, remove from heat but continue to stir.
- Add the teaspoon of Vanilla Extract and continue to stir off and on as it cools down. The mixture must cool down before you begin to assemble the banana pudding.
- When fairly cool, spread a light layer of the pudding in a casserole dish.
- Add a layer of Vanilla Wafers. Reserve about 5 or 6 wafers for topping later.
- Add a layer of sliced bananas.
- Add a layer of pudding mixture, spreading it out to the edges of the dish.
- Repeat the layer process as needed, ending with a layer of the pudding mixture on top.
- Crumble the 5 or 6 reserved wafers and sprinkle on top. If not adding the meringue, bake this at 350 degrees for about 10-15 minutes. Let cool and serve. Hopefully you'll try the meringue.

- In medium saucepan combine sugar, flour, and salt. Add eggs and stir well. Stir in milk, and cook over low heat, stirring constantly. When mixture begins to thicken, remove from heat and continue to stir, cooling slightly. Stir in vanilla and butter until smooth.
- Layer pudding with bananas and vanilla wafers in a serving dish. Chill at least one hour in refrigerator before serving.

- Bring to a boil over medium-high heat, stirring constantly; cook until thickened.

BANANA PUDDING RECIPE
Steps:
- First, I combine my 2 boxes of instant vanilla pudding and 4 cups of milk in a large bowl. Which means you will use 2 cups of milk per box of pudding
- You can use a whisk or a hand mixer, whichever you prefer they're both fairly easy. You will want to whisk/mix until all the lumps are gone.
- Next, you add in 1 cup of whipped cream into your pudding mixture.
- You fold in the whipped cream, do not whip or stir because you want to keep your pudding light, fluffy, and airy.
- Now, you're going to set your pudding aside. I use my trifle bowl, which is typically used for layered desserts.
- I start to layer my vanilla wafers at the bottom of the bowl as well as around.
- Then, I begin to peel and slice my bananas, laying them on top of the wafers.
- After layering in the wafers and bananas, add a generous amount of pudding. You will continue this process of layering until you reach the top of the trifle bowl.
- Now that you've completed your banana pudding, you will need to refrigerate until chilled.
STOVETOP BANANA PUDDING
A mixture of eggs, milk, vanilla and a pinch of salt is heated, then stirred together with bananas and vanilla wafer cookies for a slightly crunchy, fruity pudding.

- To make the pudding:
- Whisk the egg yolks, sugar, cornstarch, and salt together in a medium bowl and set aside. Bring the milk to a boil in a medium saucepan. Remove from the heat and whisk a little at a time into the egg mixture. Once the bottom of the bowl is warm, slowly whisk in the remaining hot milk. Pour the mixture back into a clean medium saucepan (cleaning the saucepan prevents the pudding from scorching), add the banana liqueur, and whisk over medium-low heat until it thickens, about 2 minutes. Cook while constantly whisking until the pudding is glossy and quite thick, 1 1/2 to 2 minutes longer. Transfer the pudding to a clean bowl.
- Add the vanilla and butter and gently whisk until the butter is completely melted and incorporated. Press a piece of plastic wrap onto the surface of the pudding to prevent a skin from forming. Refrigerate for 4 hours.
- To make the crumble:
- While the pudding sets, heat the oven to 325°F. Line a rimmed baking sheet with parchment paper and set aside. Place the wafers in a resealable plastic bag and seal (make sure there is no air in the bag prior to sealing). Using a rolling pin or a flat-bottomed saucepan or pot, crush the vanilla wafers until they're coarsely ground. Transfer them to a small bowl and stir in the sugar, cinnamon, and salt. Use a spoon to evenly stir in the melted butter, transfer to the prepared baking sheet, and toast in the oven until brown and fragrant, 12 to 15 minutes. Remove from the oven and set aside to cool. (The crumbs can be stored in an airtight container for up to 5 days at room temperature or frozen for up to 2 months; re-crisp in a 325°F oven for 6 to 7 minutes if necessary.)
- To serve:
- Slice the bananas in half crosswise and then slice in half lengthwise so you have 4 quarters. Slice the banana quarters crosswise into 1/2-inch pieces and divide between 6 custard cups or martini glasses (sprinkle with a squeeze of lemon juice if you like-this helps prevent browning). Whisk the pudding until it is soft and smooth, about 30 seconds, and then divide it between the custard cups. Top with the vanilla wafer mixture and serve. (If not served immediately, the pudding will keep in the refrigerator for up to 3 days, with plastic wrap intact. Sprinkle the crumbs on just before serving.)
OLD FASHIONED BANANA PUDDING
Steps:
- In a medium-size mixing bowl, whisk together the evaporated milk, granulated sugar, flour and salt until dissolved.
- On the stove top in a heavy bottomed saucepan over medium-high, warm the evaporated milk mixture.
- In the same mixing bowl, whisk the egg yolks with the half & half. Whisk into the warmed evaporated milk mixture.
- Cook stirring constantly for 10-15 minutes over medium heat until the flour has cooked and the custard has thickened. Once thickened remove from the heat and whisk in 2 Tbsp of butter and 1 Tbsp of pure vanilla. Set aside
- Layer the bottom of a 7 x 11-inch oven safe dish with vanilla wafers. Top with banana slices. Cover with 1/2 of the custard. Repeat ending with custard.
- Whip the 6 reserved egg whites with the vanilla, and cream of tarter. Sweeten with granulated sugar.
- Whip for 3-5 minutes or until stiff peaks form. Spread the meringue on top of the banana pudding.
- Set the oven to broil to toast the top until golden.
- Garnish the edge with vanilla wafers, if desired.
- Store chilled.

- In a medium bowl, slice bananas and sprinkle with lemon juice to keep them from turning black. In a 2 quart casserole dish layer the vanilla wafers and bananas. (I use 10 of the wafers to go around the side of the bowl just because I think it is pretty this way). In a saucepan on top of the stove with a whisk mix together the sugar, salt, flour, egg yolks, regular and evaporated milk. Cook on medium heat, stirring continuously with whisk, about 7 or 8 minutes until thickens. (It will burn very easily so be sure to stir) Remove from stove and stir in vanilla flavoring. Pour over wafers and bananas.
BANANA PUDDING CRUNCH

- Prepare Instant Pot: Place steamer rack in the inner pot along with 1 cup of water and set to "Sauté" while preparing pudding mixture. (This decreases time that it takes to come to pressure.)Prepare pudding: Beat egg and Virtue in a medium bowl until well blended. Then add cream, milk, vanilla and salt and continue to whisk until mixture is well combine. Do NOT over mix to create foam or air bubbles.
