- Heat oven to 400°F.
- Toss shrimp with 2 Tbsp. dressing in medium bowl. Refrigerate 10 min. Meanwhile, mix remaining dressing with remaining ingredients.
- Remove shrimp from dressing; discard dressing. Partially split each shrimp lengthwise by making long cut along underside of shrimp, being careful to not cut all the way through shrimp. Open shrimp slightly; place, cut sides up, in shallow baking dish. Top with crumb mixture.
- Bake 7 to 8 min. or until shrimp turn pink.

SHRIMP STUFFED PEPPERS
Shrimp Stuffed Peppers - Sweet red bell peppers stuffed with a creamy creole shrimp rice dressing is a fabulous meal and great for company too!

- Begin by making rice so it can be ready when shrimp sauce is ready.
- Slice 6 red bell peppers in half. Remove ribs and seeds. Rinse peppers. Place them in boiling water to parboil them for about 5 minutes. Remove from water and arrange in a large casserole dish.
- Heat olive oil and butter in a large pot over medium high heat.
- Season shrimp with creole seasoning.
- Add shrimp and saute until shrimp are cooked through about 3 to 5 minutes. (At this point, it may be necessary to discard extra liquid out of the pot. A little liquid is fine to leave. My shrimp were just defrosted so I had a lot of liquid to take out).
- Remove shrimp to a bowl.
- Add a little more oil to pot, and saute onion, green peppers, and garlic. Season with a little more creole seasoning. Saute until onions are clear about 10 minutes.
- Reduce heat to medium low and add diced tomatoes, tomato sauce, cream of mushroom and stir.
- Add shrimp back to sauce and stir.
- Stir in cooked rice. Turn off heat.
- Fill each pepper with a good amount of shrimp mixture.
- Pour about 1//2 cup of water into the bottom of casserole dish (or both dishes if using two). This is to allow the peppers and the rest of the dish to continue to steam a little.
- Cover casserole dish with foil and seal tightly.
- Bake at 350 for 25 minutes.
- Remove from oven. Carefully remove foil (be careful of steam) and top with a little shredded cheese and fresh parsley.

I've ordered these "Shrimp-scargot" several times at a New Orleans restaurant (they were named differently) and I just knew that I could figure out how to make it at home. I love Escargot, especially the garlic butter left over for the bread to soak up. This is my shrimp version on this decadent and so easy dish. I've tweaked it...

- 1. Save the mushroom stems for another use. Either chop them or leave them whole and freeze until needed.
- 2. Place the mushrooms in a foil lined baking dish or baking pan if you're making a large batch.
- 3. Preheat oven to 350 degrees F. Lightly sprinkle creole seasoning over shrimp and toss to coat. Set aside.
- 4. Heat the butter, sherry, garlic, and chives in a skillet over medium heat until the butter begins to bubble.
- 5. Stir in the shrimp, and cook until they just turn pink, about 3 minutes.
- 6. Place one shrimp in or on each mushroom cap, spoon the garlic-chive butter over the shrimp and into the mushroom caps; then sprinkle each with a pinch of mozzarella or your favorite cheese. Five Cheese Italian Blend, Havarti, Bleu, Parmigiana Reggiano, etc.
- 7. Bake in the preheated oven until the mushrooms are tender and the cheese is golden and bubbly, 10 to 15 minutes. Serve immediately with lemon wedges and french bread to mop up the extra yummy garlic butter!
- 8. Cook's Tips: If you want to make mini appetizers use smaller mushrooms and shrimp and place each one in a mini muffin pan to keep all that delicious garlic butter contained. If you want to get fancy, serve on a gently warmed deviled egg platter. Make sure it's oven safe - about 200 degrees is plenty warm enough. Recipe can be doubled, tripled, etc., which is what I usually do. I've made as many as 75 for a catering party.

- Preheat oven to 450 degrees F (230 C).
- Cut bread into tiny cubes.
- Peel shrimp leaving tail on.
- Butterfly shrimp by inserting a knife about three-quarters of the way into shrimp near the head and cut nearly all the way down the center of the shrimp's back to the tail, leaving the front of the shrimp intact.
- Remove vein with tip of the knife.
- Open cut shrimp until it lies flat.
- Place shrimp butterflied side down on a baking sheetsprayed with non-stick spray.
- Press flat part of shrimp gently down to make it even flatter.
- In a frying pan over medium heat, cook the butter, olive oil, dried minced onion, minced garlic, chicken broth, salt and pepper. Cook and stir 3 minutes.
- Stir in bread cubes and chopped parsley until combined.
- Use a melon baller to scoop stuffing mixture into butterflied shrimp.
- Curl the shrimp tails over top of the stuffing mixture.
- Bake 5 - 8 minutes.
- Remove pan from oven and sprinkle stuffed shrimp with more parsley if desired. Serve immediately.

- Preheat oven to 500 degrees. In a large skillet, heat oil over medium-high. Add onion and diced celery and saute until softened, 8 minutes. Add garlic and cook until fragrant, 30 seconds; season with salt and pepper. Remove from heat, add broth and cornbread, and stir until combined. Mince 4 shrimp (discard tails) and stir into stuffing along with egg.

- Preheat the oven to 375 degrees F. Butter a large baking dish and set aside.
- Place the crabmeat in a large bowl and season with the Essence. Cover and refrigerate until ready to use.
- In a large skillet, melt 4 tablespoons butter over medium-high heat. Add the onions, celery, and bell peppers and cook, stirring, until softened, about 4 minutes. Add the parsley and the garlic, and cook, stirring, for 1 minute. Remove from heat and let cool.
- Add the cooled vegetables to the crabmeat and toss to combine. Add the mayonnaise, egg, lemon juice, Worcestershire and hot sauce and stir gently with a large wooden spoon. Add 1 cup of the cracker crumbs, the salt, and pepper, and stir gently, being careful not to break up the crabmeat.
- Mound about 2 tablespoons of the crabmeat stuffing into each shrimp, press gently to close, and place, stuffed sides up, in the prepared baking dish. Sprinkle the remaining 1/2 cup of the flaky, buttery cracker crumbs over the stuffed shrimp and drizzle with the remaining melted butter. Bake until golden, about 20 minutes.
- While the shrimp are baking, heat a large saute pan over medium-high heat. When the pan is hot, add the olive oil. Add the garlic and crushed red pepper and cook, stirring continuously, for 1 minute. Add the kale and saute until the kale is just wilted, about 3 to 5 minutes. Season with salt and pepper.
- Place the kale on 4 plates. Remove the shrimp from the oven and divide among plates, on top of the kale. Garnish with parsley and lemon wedges. Serve immediately.
