2 pkgs. (10 oz. each) chopped frozen spinach
2 cups Pepperidge Farm herb stuffing
1 large onion (diced)
1/2 cup Parmesan cheese
1 1/2 tsp thyme
Dash of salt
4 eggs
3/4 cup butter (melted)
1 garlic clove (minced)

Steps:

  • Cook spinach and squeeze dry. Mix all ingredients together until well blended. Chill 2 hours or more. Roll into 1" balls. Bake at 300 degrees for 30 minutes or until slightly brown.

Dressing:
1 lb. fresh spinach
1 quart strawberries-cut in halves or thirds
1 Cup pecans or walnuts-(sprinkle with 1/2 tsp. PENZEYS CINNAMON or 2 tsp. CINNAMON-SUGAR if desired) and roast for 10 minutes or so at 350°
3 TB. white wine vinegar (you may also use raspberry vinegar)
1/4 Cup sugar
1/2 Cup vegetable oil (Patty uses salad oil)
1/4 tsp. REGULAR MUSTARD POWDER
1 TB. WHOLE BLUE POPPY SEEDS
dash salt

Steps:

  • Wash the spinach well and chop if needed. Combine the spinach, strawberries and roasted nuts in a serving bowl right before serving. Pour the dressing over the salad and toss, or serve the dressing in a carafe at the table. (Mixing the ingredients with the dressing too far in advance of serving turns the salad soggy.) Dressing: Mix together in a blender and pour about half over the salad. Toss and add more as desired, or serve extra on the table.

Garnish:
8 oz/250g macaroni(preferably long tubes as opposed to typical American macaroni)
1 tablespoon butter or margarine
12 oz/375g sharp cheddar cheese, grated
1 egg
1 cup 8floz/240ml milk
2 teaspoons onion powder
1 teaspoon hot English mustard
1 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon red pepper sauce or cayenne pepper (optional)
2 tablespoons fine breadcrumbs
2 teaspoons butter
2 tablespoons grated cheddar cheese

Steps:

  • Bring water to the boil and add the broken up macaroni or macaroni elbows and salt. Boil it uncovered until it is just tender but not overcooked (about 8 minutes). Preheat a moderately hot oven 350F, 180C or Gas Mark 4. Drain the macaroni thoroughly, put it back into the same hot saucepan it was cooked in and mix in the butter. Grate the cheese and mix it in with the macaroni a bit at a time, while it is still warm. Whisk the egg until fluffy and add the milk, onion powder, white pepper, salt, pepper sauce and mustard. Pour in with the macaroni and mix. Place in a greased oven proof casserole dish. Top with a little butter, some grated cheese and fine breadcrumbs. Bake in the centre of the oven for about 30-45 minutes depending on the depth of the dish.

1-2/3 cups hot water
1/4 cup butter or margarine
2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained and patted dry
1 cup KRAFT Grated Parmesan Cheese
1 cup chopped fresh mushrooms
1 small onion, finely chopped
4 eggs

Steps:

  • HEAT oven to 400ºF. MIX stuffing mix, hot water and butter in large bowl until blended. ADD remaining ingredients; mix lightly. Shape into 60 (1-inch) balls. Place in single layer on 2 rimmed baking sheets sprayed with cooking spray. BAKE 15 to 20 min. or until lightly browned.
