1 beef eye round roast

2 tsp. salad oil
2 beef-flavor bouillon cubes or envelopes
1 clove garlic
1 bay leaf
1 1/2 lb. baby carrots
1 1/2 lb. asparagus
1 3/4 lb. baby red and white potatoes

Steps:

  • Trim all fat from eye round roast. Rub roast with pepper.
  • In nonstick 5-quart Dutch oven over medium-high heat, in hot salad oil, cook eye round roast until browned on all sides. Add bouillon, garlic, bay leaf, and 2 1/2 cups water; heat to boiling. Reduce heat to low; cover and simmer 20 minutes.
  • Meanwhile, peel and trim tops from carrots. Discard tough ends from asparagus.
  • After roast has cooked 20 minutes, add carrots and unpeeled potatoes to Dutch oven; over high heat, heat to boiling. Reduce heat to low; cover and simmer 30 minutes longer or until carrots and potatoes are fork-tender and temperature of roast reaches 135 degrees F on instant-read meat thermometer when inserted in thickest part of meat. Internal temperature of meat will rise to about 140 degrees F (medium-rare) upon standing.
  • When roast is done, place on platter and let stand for 15 minutes for easier slicing; keep warm.
  • In 12-inch skillet over high heat, in 1/2 inch boiling water, cook asparagus 3 to 5 minutes until tender-crisp.
  • Remove carrots and potatoes to platter, reserving cooking broth. Discard garlic and bay leaf.
  • Skim fat from broth. Thinly slice roast. Serve sliced roast, carrots, potatoes, and asparagus in deep dinner plates with broth.

1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1-1/2 to 2 pounds boneless beef top round steak, trimmed and cut into thin strips
3 tablespoons butter
1 cup chopped onion
1 garlic clove, minced
1 can (10-1/2 ounces) condensed beef broth, undiluted
1/2 teaspoon ground mustard
3 tablespoons chili sauce
1 pound sliced fresh mushrooms
2 cups sour cream
Hot cooked noodles
Minced fresh parsley

Steps:

  • In a large resealable plastic bag, combine the flour, salt, paprika and pepper. Add beef; shake until well coated. , In a large skillet, melt butter. Brown beef in batches. Remove and keep warm. Add onion and garlic to the pan; cook until tender. Add the broth, mustard, chili sauce and mushrooms; return beef to the skillet. Cover and cook until the meat is tender, about 1 hour., Just before serving, stir in sour cream. Heat through, but do not boil. Serve over noodles. Garnish with parsley.

2 ½ to 3 ½ pound eye of round roast
2 tablespoons olive oil (or enough to generously coat all sides)
1 teaspoon kosher salt
1 teaspoon dried crushed rosemary
1 teaspoon dried thyme
¾ teaspoon fresh ground black pepper
¾ teaspoon granulated garlic or garlic powder
¾ teaspoon onion powder
½ teaspoon paprika
2 tablespoons softened butter
3 tablespoons all-purpose flour
¼ cup red wine (like cabernet sauvignon, pinot noir, or merlot)
2 cups low sodium beef broth
¼ to ½ teaspoon browning sauce (like Kitchen Bouquet)
salt and freshly ground black pepper (to taste)

Steps:

  • Remove your roast from the refrigerator and allow it to rest on the counter for 45 minutes to 1 hour to take the chill off.
  • Meanwhile, preheat your oven to 500 degrees F.
  • Combine all the Roast Beef Seasoning Mix ingredients in a small bowl.
  • Pat your roast with paper towels to dry the surface and then drizzle with olive oil and use your hands to rub the olive oil, coating all sides of the roast.
  • Sprinkle all sides, including the ends, with the seasoning mix. Place your roast on a rack in a roasting pan with the fat cap side facing up.
  • Transfer to the preheated oven and roast for 15 minutes until nicely browned. Reduce oven temperature to 300 degrees F and continue to roast for another 40 to 50 minutes or until internal temperature reads 130 and no more than 135 degrees F. (medium rare). Begin checking temperature after 35 minutes by inserting an instant read thermometer through the center of the roast from the side. Watch it closely because the temperature can rise quickly towards the end of the cooking time. I don't recommend cooking this roast beyond 135 degrees for the most tender, delicious result.
  • Remove from the oven and loosely tent a piece of foil over the meat while still on the rack in the roasting pan. Allow to rest for 15 to 20 minutes.
  • Transfer the roast to a cutting board and set the roasting pan aside (you will need the pan and drippings to make the gravy later). Use a sharp knife to slice it against the grain about ¼-inch thick slices. Transfer the sliced beef to a serving platter and cover with foil to keep warm. Pour all of the juices that have accumulated on the cutting board into the roasting pan with the drippings.

Steps:

  • Combine the oil, salt, pepper, thyme and garlic into a paste, then rub all over the roast. Set aside at room temperature for 1 hour. Forty minutes into the hour, pre-heat the oven to 500 degrees F.
  • On a baking sheet, place two sheets of Reynolds Wrap® Aluminum Foil large enough to cover the roast. Place the roast on the foil sheets and transfer everything to the oven. Roast for 6 minutes per pound.
  • Remove from the oven. Fold up the foil so it wraps the roast then return it to the oven. Reduce the oven temperature to 170 degrees F and roast for one hour. After an hour, check the internal temperature with an instant-read thermometer: 120-125 degrees F will yield a rare center, 130-140 degrees F will yield a medium-rare center, and 140-150 degrees F will yield a medium center.
  • When the roast is finished, remove it and set it on a cutting board to rest. Transfer any drippings from the roast into a saucepan, then combine with the red wine and beef broth. Bring to a simmer over med-high heat and reduce by 1/4; reduce heat to medium-low and whisk in the cubes of butter one at a time until incorporated into the sauce. Add salt and pepper to taste and set aside.
  • Slice the roast into 1/2 inch thick slices and serve with the pan sauce poured on top.

Herb and Garlic Stuffed Eye of Round Roast Recipe image

This is the best way to cook an eye of round roast, a less tender cut of beef. High heat and searing a buttery herb mixture onto the top, stuffing it with garlic and a a low, slow cook yields a tender, juicy, delicious roast!

one 3-5 pounds eye of round roast
3/4 cup butter (softened)
1 1/2 tablespoons dried rosemary (freeze dried works the best)
1 1/2 tablespoons dried thyme ( freeze dried works the best)
1 1/2 tablespoons flaked sea salt
2 teaspoons ground black pepper
5 small cloves of garlic (peeled and sliced in half)
1/2 cup drippings
1 cup strong beef stock
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Remove your roast from all its packaging and let it sit out for an hour until it's about room temperature.
  • Place a roasting rack (I use oven safe metal cooling racks for smaller roasts) into a cookie sheet that has at least a 1/2 inch high rim. Place the roast on top of the baking sheet, fat cap side UP.
  • Combine the butter and herbs ( minus the garlic cloves) together in a bowl.
  • Using a sharp little knife, cut small slits into the top fat cap of the roast in an even placement through the top. Take the garlic cloves, slather them in some of the butter herb mixture and push them into the roast, making sure they are completely stuffed into the beef.
  • Take the remaining butter and cover the roast completely.
  • Preheat your oven to 450°F.
  • Now we want to sear the roast. Place it in the 450 degree oven for 10 minutes.
  • After 10 minutes, turn down the oven to 325 degree and cook some more.
  • In the post above are some guidelines for cooking beef roasts. You want to pull the roast out a minimum of 10 degrees BEFORE you hit these temperatures.
  • Once the roast is out, tent it with foil, and let it sit for 10-15 minutes.The temperature will rise at least another 10 degrees if you cover it in foil. It also lets the juices set and flow back to the meat.
  • Remove all of the drippings and place in a saucepan Make sure to scrape the good browned bits off the bottom of the cookie sheet! Add half of the broth, then bring to a boil and boil for 2 minutes.
  • Add the remaining beef broth. If needed, add some more broth or bouillon powder to taste.
  • Whisk the cornstarch and water together, then whisk into the pot.
  • Cook until thickened.
  • Slice the eye of round into thin slices and serve.

I adapted this recipe from another recipe that I came across in a Greek cookbook, omitting a couple of ingredients that I knew my family wouldn't like. It makes a very flavourful roast and is a good way to do a roast in the summer, especially if you don't have air conditioning! The leftovers make great sandwiches.

1/3 cup olive oil
1 large onion, sliced
3 cloves garlic, sliced
3 lbs beef eye round
salt and pepper
1/2 cup dry red wine
2 cups beef stock
6 sprigs fresh thyme
2 bay leaves
3 sprigs fresh oregano
1/4 cup chopped fresh parsley
1 tablespoon all-purpose flour
1/4 cup cold water

Steps:

  • Heat half the oil in a Dutch oven.
  • Add the onion and garlic and cook, stirring, until the onion is soft.
  • Remove with a slotted spoon and set aside.
  • Sprinkle the meat with salt and pepper to taste.
  • Heat the remaining oil in the same pan.
  • Add the meat and cook, turning, until brown all over.
  • Return the onion mixture to the pan.
  • Add the wine, stock and herbs.
  • Cook, covered, over low heat for 1-1/2 hours, turning the meat once during cooking.
  • Remove the meat from the pan and let stand for 10 minutes before slicing.
  • While the meat is standing, make a gravy by mixing together the flour and cold water and blending them into the remaining pan juices.
  • Add a little extra stock to the pan if necessary.
  • Cook until thickened and strain.
  • Serve the sliced meat and gravy sprinkled with parsley.
