PARMESAN CRUSTED CHICKEN



Parmesan Crusted Chicken image

Parmesan crusted chicken is easy enough to make for a busy weeknight but also special enough for company.

½ cup all purpose flour
2 eggs
⅔ cup seasoned Italian bread crumbs (I use Progresso)
⅓ cup freshly grated Parmigiano-Reggiano cheese
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
3-4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick (see note)
Salt and freshly ground black pepper
¼ cup olive oil
Lemon wedges, for serving

Steps:

  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
  • Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
  • Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
  • Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

4 chicken cutlets (about 1.5 pounds of chicken)
salt and pepper
1 to 1 1/4 cups cracker crumbs
1 cup grated Parmesan cheese
2 large eggs
1/4 cup light oil, for frying (such as vegetable, avocado, or canola oil)

Steps:

  • Lay the chicken out on a cutting board and pat the pieces dry with a paper towel. Salt and pepper both sides of the chicken well.
  • Add the cracker crumbs to a dish (like a pie plate or a Tupperware, something shallow with an edge).
  • Add the Parmesan cheese to a second dish.
  • Add the eggs to a third dish and whisk them well with a fork to beat them until well incorporated.
  • After you've gotten everything in your bowls, put a large nonstick or cast iron skillet on the stove over medium to medium-high heat. Add the oil to the pan and let it heat while you prepare the chicken.
  • First dip the chicken into the Parmesan, patting it to stick and repeat on the second side of the chicken. Next dip the chicken (coated in Parmesan) into the egg mixture on both sides.
  • Then finally dip the egg coated chicken into the bread crumbs, pressing the chicken into the crumbs to help them to stick.
  • Place the prepared chicken into the hot oil.
  • Repeat with remaining chicken.
  • Allow the chicken to cook for 5 or so minutes on one side before flipping to the next side. The coating will be a deep golden brown.
  • Cook the chicken until the center reaches 165 degrees F. on an instant read thermometer.
  • When the chicken is cooked through, remove it from the pan and place it on a plate. Let the chicken rest for 3 minutes before serving hot.

1-1/2 cups stuffing mix, finely crushed
2 tablespoons grated Parmesan cheese
1/4 cup butter, melted
1 garlic clove, minced
5 boneless skinless chicken breast halves (6 ounces each)

Steps:

  • In a shallow dish, combine the stuffing crumbs and Parmesan cheese. In another shallow dish, combine butter and garlic. Dip chicken in butter mixture, then coat with stuffing mixture. Place in a greased 13x9-in. baking dish. , Sprinkle with remaining stuffing mixture and drizzle with remaining butter mixture. Bake, uncovered, at 350° for 40-45 minutes or until a thermometer reads 170°.

4 boneless skinless chicken breasts
1 (6 ounce) box Stove Top stuffing mix (any flavor)
1 (10 1/2 ounce) can cream of chicken soup
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°F.
  • Pour Stuffing mix into a plastic bag and use a rolling pin to crush the bread cubes into a fine mixture. (This can also be done alot faster with a food processor if you have one). You want to "break-down" most of the large pieces or they will become too hard after cooking.
  • Mix the melted butter into the Crumb mixture until well combined. Pour the crumbs onto a plate.
  • Pour the can of soup a bowl and give it a quick stir to loosen the texture. Dip the chicken breasts into soup and coat well.
  • Dredge the soup coated chicken breasts in the crumb mixture. Make sure the breasts are fully coated with the crumbs.
  • Place chicken on a lightly sprayed cookie sheet making sure the pieces do not touch.
  • Bake for 30-45 minutes until chicken is fully cooked. (bake time depends on thickness of chicken breasts).
