CHOCOLATE LAYER CAKE WITH MILK CHOCOLATE FROSTING

Steps:
- Make cake:
- Put oven rack in middle position and preheat oven to 350°F. Butter 2 (9- by 2-inch) round cake pans and line bottom of each with a round of parchment or wax paper. Butter paper and dust pans with flour, knocking out excess.
- Sift together flour, cocoa, baking soda, and salt into a small bowl. Beat together butter and sugars in a large bowl using an electric mixer at medium-high speed until light and fluffy, 3 to 4 minutes in a standing mixer or 4 to 5 minutes with a handheld. Add eggs 1 at a time, beating well after each addition. Add chocolate and vanilla and beat until just combined. Reduce speed to low and add flour mixture and buttermilk alternately in 3 batches, beginning and ending with flour mixture and mixing until just combined.
- Divide batter between cake pans, spreading evenly, and bake until a wooden pick or skewer inserted in center of each cake layer comes out clean, 25 to 35 minutes.
- Cool cake layers in pans on racks 10 minutes. Run a thin knife around edge of each layer, then invert onto racks. Peel off paper and cool layers completely.
- Make frosting:
- Heat milk in a 1- to 1 1/2-quart heavy saucepan over moderate heat until hot. Whisk together yolks, flour, 1/3 cup confectioners sugar, and a pinch of salt in a bowl, then add hot milk in a stream, whisking. Transfer custard to saucepan and bring to a boil over moderate heat, whisking. Reduce heat and simmer, whisking, 2 minutes (mixture will be very thick), then transfer to a large bowl. Cover surface of custard with a buttered round of wax paper and cool completely, about 45 minutes.
- Add vanilla and remaining cup confectioners sugar to custard and beat with cleaned beaters at moderate speed until combined well, then increase speed to medium-high and beat in butter, 2 tablespoons at a time, until smooth. Add chocolates and beat until combined well.
- Frost cake:
- Halve each cake layer horizontally using a long serrated knife. Layer cake, using a heaping 1/2 cup frosting between each layer, then frost top and sides with remaining frosting.
NO BAKE CHOCOLATE ECLAIR CAKE
Steps:
- In a large bowl, mix the milk, pudding mix, and whipped topping together until fully combined. Set aside
- In the bottom of a 13x9 inch baking pan, arrange a single layer of graham cracker squares (you can break the squares into smaller pieces to get into the corners of the pan)
- Spread half of the pudding mixture over top of the graham crackers
- Top with another layer of graham crackers
- Spread the remainder of the pudding mixture overtop
- Top with one final layer of graham crackers
- Spread the prepared frosting overtop of the entire cake, and use an offset spatula to spread it right into the corners (chill the cake for 30-minutes prior to help making spreading easier)
- Cover the pan with plastic wrap and chill in the fridge for at least 4 hours before serving

- Combine the cocoa powder, sugar, salt, and water in a medium saucepan.
- Put the saucepan over medium heat. Whisk constantly until the mixture thickens and begins to simmer.
- Let it simmer for about 3 minutes, stirring occasionally.
- Remove the pan from the heat and add in the vanilla. It will thicken as it cools so don't worry if it seems thin.
- Let the syrup cool before storing it in an airtight jar.

CHOCOLATE CAKE WITH CONDENSED MILK
The easiest chocolate cake, made with a cake mix and with a condensed milk toffee sauce poured all over the top. It's absolutely delicious, and so simple to make! A family favorite.

- Preheat oven to 350 F (180 C) and prepare cake mix according to package instructions. Pour mixture into lightly greased and floured 9x13 inch pan and bake until toothpick comes out clean (around 30 min).
- As soon as cake is done, mix together caramel sauce and condensed milk in a small saucepan on low heat, until combined and just warmed through. Remove from heat.
- Poke the cake all over with the bottom of a wooden spoon or a butter knife to get holes evenly over the top. Pour the warm caramel all over the warm cake, sprinkle chopped chocolate on top and let cake sit until cooled completely.
- Beat together whipping cream, using sugar, and vanilla for several minutes on medium high speed until soft peaks form. Spread this all over the cooled cake, and store cake until fridge until ready to serve.
- Leftovers should be refrigerated too, and this cake is yummiest cold! Enjoy!

This is a recipe that my friend's Dad would always make when we were in elementary school. They bought a chocolate cake with vanilla icing. Sliced it up and placed it in a bowl and poured milk over it. I know you all are thinking I flipped my lid! LOL! This is so yummy!
