ZUCCHINI STIR FRY



Zucchini Stir Fry image

Simple and quick stir fry made with Zucchini, bell peppers, garlic, onions and black pepper. Serve it as a side.

Number Of Ingredients 10

1½ cups zucchini ((250 grams))
1 small onion (sliced)
½ cup bell peppers ((sliced thin))
¾ tablespoon garlic (chopped (1 clove))
½ teaspoon ginger (chopped (optional))
1¼ tablespoons oil ((sesame or olive oil))
1 teaspoon soya sauce
1 teaspoon vinegar ((I used apple cider))
¾ teaspoon black pepper ((coarse crushed))
1 teaspoon toasted sesame seeds (or 2 tbsps roasted & crushed peanuts)

Steps:

  • Rinse all the veggies. Slice onions and bell peppers thin. Chop zucchini to ¼ inch thickness. Chop ginger and garlic.
  • Pour oil to a hot pan. Stir fry ginger and garlic for 30 seconds.
  • Add onions and fry until transparent. Then stir fry bell peppers for 30 seconds.
  • Next add zucchini and stir fry on a high heat until half done yet crunchy. Do not over cook as they tend to turn too soft.
  • Then pour soya sauce and vinegar. Add black pepper. Stir fry just for 30 to 60 seconds.
  • Turn off the heat and sprinkle toasted sesame seeds or roasted & crushed peanuts.
  • Serve zucchini stir fry as a side or in your wraps and sandwiches.

2 tablespoons fresh lemon juice
4 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
2 teaspoons chopped fresh thyme leaves
1 red bell pepper, seeded and chopped
2 small zucchini, halved lengthwise, seeded and cut into 3/4-inch pieces
1/2 cup grape tomatoes
2 cloves garlic, finely chopped
2 scallions, white and green parts, cut into 2-inch-long pieces
Pinch of red pepper flakes
1/2 cup lightly packed fresh basil leaves, sliced
Hot white rice, for serving

Steps:

  • Whisk together the lemon juice and 2 tablespoons of the oil in a large bowl; season with salt and black pepper. Add the chicken, toss well and set aside at room temperature for 15 minutes.
  • Drain the chicken and pat dry. Heat a wok or large skillet over high heat. Add the remaining 2 tablespoons oil and then the chicken and thyme. Cook, stirring until just cooked through, about 4 minutes. Use a slotted spoon to transfer the mixture to a large bowl. Add the bell pepper to the pan and quickly cook, stirring, until softened, 1 to 2 minutes. Transfer the bell pepper to the bowl with the chicken. Add the zucchini to the pan and cook, stirring, until crisp-tender, about 2 minutes. Transfer to the bowl with the chicken. Add the tomatoes, garlic, scallions and red pepper flakes to the pan and cook, stirring, until lightly browned, about 2 minutes more. Return the chicken and vegetables to the pan; season with salt and black pepper. Cook, stirring, until well combined and warmed through, about 2 minutes.
  • Remove from the heat and stir in the basil. Serve over rice.

Steps:

  • Heat oil and garlic in a large skillet or wok over medium heat. Add onion and cook until almost translucent, about 5 minutes. Add zucchini and cook until zucchini is slightly crisp, but not mushy, stirring constantly, about 10 minutes. Add diced tomatoes and cook for 5 minutes more. Add Italian seasoning, salt, and pepper.   • Stir-fry onion and garlic in oil for 1 minute.

1 1/2 cups panko breadcrumbs
3/4 cup finely grated Parmesan cheese
Coarse salt and freshly ground pepper
1/4 cup all-purpose flour
2 large eggs, lightly beaten
3 small zucchini, cut lengthwise into 1/2-inch thick wedges, then crosswise if desired
Lemon wedges, for serving

Steps:

  • Heat 2 inches of oil in a heavy pot such as a Dutch oven over medium heat until a deep-fry thermometer reads 350 degrees. Line a baking sheet with paper towels. Whisk together panko and Parmesan in a pie plate; season with salt and pepper. Place flour and eggs in two separate pie plates, and season each with 1 teaspoon salt and 1/4 teaspoon pepper.
  • Dredge zucchini in flour, tapping off excess. Dip into eggs, turning to coat, then remove, allowing excess to drip back into dish. Transfer to panko mixture, turning to coat, and pressing gently to adhere.
  • Working in batches so as not to crowd the pan, carefully lower zucchini into hot oil. Cook, turning occasionally, until golden brown all over and tender in the center, 1 1/2 to 2 minutes total. Allow oil to return to 350 degrees between batches. Remove and drain on prepared baking sheet. Season with salt. Serve with lemon wedges.

  • Cut zucchini into 1/4-inch pieces.
  • In 5-quart Dutch oven over high heat, in very hot salad oil, cook zucchini, stirring quickly and frequently (stir-frying) until well coated.

1 large red bell pepper

Steps:

  • Roast and peel poblanos and bell pepper . Mince garlic cloves and cut zucchini into 2-inch-long spears. Chop cilantro. Cut poblanos and bell pepper into 2- by 1/4-inch strips.
  • Heat a dry small skillet over moderate heat until hot but not smoking and toast cumin seeds, stirring constantly, until fragrant and several shades darker, being careful not to burn them. With a mortar and pestle coarsely grind cumin seeds.
  • In a 12-inch skillet heat oil over moderate heat until hot but not smoking and cook garlic, stirring, until softened, about a few seconds. Add zucchini and sauté over moderately high heat, stirring constantly, 2 minutes. Add poblano and bell pepper strips and cumin and cook, stirring constantly, until zucchini is crisp-tender, about 4 minutes. Add lime or lemon juice and salt and pepper to taste.
  • Serve zucchini sprinkled with cilantro.
