SAUTéED PEPPERS AND ONIONS
These Sautéed Peppers and onions have a sweet caramelized outside and a tender flavorful inside. They cook to perfection in just minutes in a hot skillet.

Steps:
- Cut the onion in 1/4 in strips. Remove the seeds and ribs from the bell pepper and cut into 1/2 in strips.
- Heat oil in a large skillet over medium high to high heat. Once the oil is hot, carefully add the peppers and onions and season with salt. Allow to cook on the first side for 2-4 minutes without stirring to get a little char on the edges. Then stir and cook an additional 3-4 minutes stirring about every 1 minute.
- Cook until the onions just start to turn translucent and the peppers are still slightly firm. If at any point, the peppers and onions start to get too brown, turn the heat to low and continue to cook to the desired consistency.

- Thinly slice the peppers. Thinly slice the onions. Toss them in a bowl with 1 tablespoon olive oil, oregano, salt and pepper.
- In large skillet, heat the remaining 1 tablespoon olive oil over medium high heat. Cook the peppers until tender and lightly charred, about 10 to 12 minutes for crisp tender or about 15 minutes for tender, stirring occasionally. Taste and add additional salt to taste. Serve immediately.

This fast yet tasty colorful vegan dish is a hit with my picky vegetarian friend and non veg husband. I remember making several vegetarian dishes before and this was the one that had no left-overs.

Steps:
- Heat oil til really hot.
- Stir fry onions (1 minute), then garlic (20 seconds).
- Then add peppers and mushrooms. Stir-fry until it becomes a bit soft, (about 2 minutes).
- Add the wine and soy sauce and continue to stir for 2 minutes.
- When done, remove from heat and add the sesame sauce mixing it all together, and serve.

- In a large skillet, stir-fry peppers and onion in 2 tablespoons oil over medium-high heat until crisp-tender, 5-7 minutes. Add garlic; cook 1 minute longer. Remove and keep warm. In the same skillet, stir-fry chicken and Cajun seasoning in remaining oil until no longer pink, 7-9 minutes., In a small bowl, combine the brown sugar, cornstarch, water, lemon juice, mustard, soy sauce and Worcestershire sauce; pour over chicken. Return pepper mixture to the pan; cook and stir until combined and sauce has thickened, 1 minute. If desired, serve with rice.

HOW TO SAUTE ONIONS AND PEPPERS - NO SPOON NECESSARY

- Sauté onions: Heat oil in a large skillet over medium heat (SEE NOTES). Add the onions. Sauté, stirring frequently, until softened and slightly golden in color, about 8-10 minutes.
- Add peppers and seasonings: Add the peppers, Italian seasoning and crushed red pepper flakes. Increase heat to medium-high. Sauté, stirring occasionally, until the peppers are softened and slightly browned, about 12-15 minutes. NOTE: The bottom of the pan should start to develop browned bits, known as Fond during cooking. You can either use a wooden spoon to stir the vegetables into the browned bits, or add a few splashes of water, wine or broth to the pan and stir it into the vegetables. The fond is what adds a rich flavor to the dish!)
- Add garlic and balsamic: Add the garlic to the pan and season with ½ teaspoon salt and ¼ teaspoon pepper. Stir well to combine. Reduce heat to low and add the balsamic. Stir again to combine. Continue to cook for 3-4 minutes, or until the vegetables are very tender.
