2 pounds sliced zucchini
2 garlic cloves, minced
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper

Steps:

  • In a large skillet, saute the zucchini and garlic in oil until zucchini is crisp-tender, about 5 minutes. Sprinkle with seasonings. Serve immediately.

This is a real favourite vegetable dish at my parties. I make salads or stir fried vegetables for every party and they are usually well recd. From the Readers Digest cookbook.

2 carrots, peel and cut into diagonally cut elongated slices
225 g broccoli (cut into florets, stems chopped)
1 red pepper (deseeded and julienned)
225 g green beans, cut into thirds after cutting the edges
3 spring onions, trim and slice
1/2 cup green peas
6 garlic cloves, chopped
1 tablespoon vegetable oil (the recipe says 2 tblsp)
2 tablespoons sesame oil (the recipe says 4 tblsp)
1 small green chili, deseeded and chopped
3 tablespoons oyster sauce
175 g bean sprouts
1 tablespoon light soya sauce
1 tablespoon caster sugar
1 lime, juice of
salt and pepper

Steps:

  • Prepare the vegetables.
  • Heat the vegetable oil and the sesame oil in a wok.
  • Add the garlic and stir fry a minute Add the remaining vegetables except the bean sprouts and add the oyster sauce too.
  • Stir fry for 3-4 minutes Add the remaining ingredients including the bean sprouts but excluding the lime juice and stir to mix well for another 2-3 minutes.
  • Sprinkle the lime juice and check the seasonings add more if reqd.
  • Serve immediately.

1 pound (455g) boneless skinless chicken breast or chicken thighs (, cut into bite size pieces (or you can use ground chicken))
1 Tablespoon (15ml) cooking oil
2 cloves garlic (, minced)
1 Tablespoon (15ml) Sesame Seed Oil
3 teaspoons Soy Sauce (, or more to taste)
2 teaspoons (10ml) Rice Vinegar
3 Tablespoons Oyster Sauce or Hoisin
2 zucchini or summer squash (, sliced thin)
1/2 Tablespoon (8ml) toasted sesame seeds ((about))
fresh ground black pepper (, to taste)
1/4 cup (60ml) chopped Cilantro

Steps:

  • Heat large skillet on medium heat. Add oil, then garlic. Cook garlic until translucent and fragrant, then add chicken.
  • Cook chicken for about 2 minutes, then add sesame seed oil, soy sauce, rice vinegar and oyster sauce. Cook mixture for about another 5 minutes or until chicken is cooked. Add zucchini and cook until tender, about 1-2 minutes.
  • Before serving, sprinkle with sesame seeds, ground black pepper and chopped cilantro.

This is a basic Chinese vegetable stir fry that can be made with just about any vegetable that can be cooked. Lettuce, spinach, Swiss chard, nappa, bok choy, green beans, asparagus (my favorite), pea pods, broccoli etc are all delicious. Just cut the vegetable properly and, if necessary, blanche before cooking. (Green beans, asparagus & broccoli need 2 - 3 minutes in boiling water).

1 lb zucchini or 1 lb cucumber
2 tablespoons vegetable oil
1 teaspoon minced garlic (to taste)
1/2 teaspoon salt (or use a little light soy and cut back on the salt)
1/4 teaspoon sugar
1 tablespoon oyster sauce
1/2 tablespoon dry sherry
1/4 cup chicken stock
1/4 cup wood ear mushrooms, soaked & shredded (or Chinese black mushrooms, soaked & shredded) (optional)
cornstarch, mixed with a little water
3 -5 drops sesame oil (optional)

Steps:

  • *These are the same mushrooms used in mu shu pork.
  • They are variously called tree ears or wood ears.
  • Pour boiling water over them and let soak for 15 minutes.
  • Remove tough stems with a knife and julienne.
  • They swell up to about four times their original size when soaked so it takes very little to make 1/4 cup!
  • Be sure to remove the stems because they are extremely tough.
  • If using cucumber, peel and remove seeds.
  • Zucchini just needs to be washed.
  • Slice or julienne.
  • Or cut in finger sized pieces.
  • Heat oil with salt in wok or skillet over high heat; add garlic and stir for a few seconds for aroma.
  • Add cucumber& wood ears; stir fry 1 minutes Stir in sauce.
  • Cover& simmer 1 minutes Thicken slightly with cornstarch mixture.
  • Stir in a few drops of sesame oil.
  • Serve immediately.

5-6 slices peeled ginger
1 tablespoon oyster sauce
5 tablespoons water
1 teaspoon sugar
1/2 teaspoon sesame oil

Steps:

  • Mix all the ingredients in the Brown Sauce, stir well and set aside.
  • Heat up your pan/skillet/wok and add the oil. When the oil is heated, add the ginger and stir-fry until aromatic, follow by the shrimp. Stir-fry the shrimp until the surface turns opaque, then add in the zucchini, carrots, and mushrooms.
  • Toss and stir-fry for about 30 seconds.
  • Add the Brown Sauce (stir right before using), stir to combine well with the ingredients. Once the sauce thickens, dish out and serve immediately with steamed rice.

An easy, healthy Asian chicken and zucchini stir fry with onions in a quick teriyaki sauce. Fast and perfect for nutritious weeknight dinners.

1 pound boneless (skinless chicken breasts (or thighs or tenders), thinly sliced then cut into bite-sized pieces)
4 tablespoons low sodium soy sauce (divided)
2 teaspoons apple cider vinegar (divided)
2 teaspoons granulated sugar (divided)
1 tablespoon minced fresh ginger
3 cloves minced garlic (about 1 tablespoon)
2 tablespoons water
1 teaspoon cornstarch
1/4 teaspoon red pepper flakes
2 medium zucchini (yellow squash, or a mix)
1 large red or yellow onion
2 tablespoons extra virgin olive oil
Sesame seeds (optional for garnish)
Chopped green onion (for garnish)

Steps:

  • In a large bowl, combine the chicken, 1 tablespoon soy sauce, 1 teaspoon apple cider vinegar, and 1 teaspoon granulated sugar. Set aside while you prep the remaining ingredients.
  • In a small bowl or large liquid measuring cup, stir together the remaining 3 tablespoons soy sauce, remaining 1 teaspoon apple cider vinegar, remaining 1 teaspoon sugar, the ginger, garlic, water, cornstarch, and red pepper flakes. Set aside.
  • Trim off the ends of the zucchini. Cut in half lengthwise, then place the flat, cut sides on the counter. Slice crosswise into ¼-inch thick half moons. Thinly slice the onion.
  • In a wide skillet, heat 1 tablespoon of the olive oil over medium-high heat. Once the oil is hot, add the chicken and its marinating liquid. Saute until the chicken is golden brown on the outsides and fully cooked through, about 3 to 4 minutes. Remove to a plate.
  • Heat the remaining 1 tablespoon oil. Add the onion. Cook until tender and beginning to brown, 4 to 5 minutes.
  • Give the sauce one more stir, then add it to the pan. Let cook 30 seconds, then add the sliced zucchini. Cook just until the zucchini begins to soften, about 3 minutes more.
  • Remove from the heat, then stir in the reserved chicken. Serve hot with a sprinkle of sesame seeds and green onion as desired.
