2 tablespoons olive oil
4 fresh mushrooms, or more to taste, sliced
salt to taste
20 sugar snap peas, or more to taste

Steps:

  • Heat a saute pan over medium heat. Add olive oil. Season mushrooms with salt and saute in olive oil until soft, about 5 minutes.
  • While mushrooms are cooking, bring a small pot of water to a boil. Add sugar snap peas; cook until bright green, 1 to 2 minutes. Take sugar snap peas out of the water with a slotted spoon and toss them with the mushrooms in the pan, 1 to 2 minutes. Season with salt and serve immediately.

2 cups sugar snap peas, strings removed
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons soy sauce

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add snap peas, cover, and steam until tender, about 2 minutes.
  • Heat oil in a non-stick skillet over medium-high heat; saute garlic until nearly brown, about 2 minutes. Pour in snap peas and soy sauce. Cook and stir until snap peas begin to brown, about 4 minutes.

1 teaspoon oriental sesame oil
1/4 teaspoon dried crushed red pepper
1 12-ounce package extra-firm tofu, drained, cut into 3/4-inch cubes, patted dry with paper towels
1/4 cup water
1 teaspoon cornstarch
2 tablespoons vegetable oil, divided
6 ounces fresh shiitake mushrooms, stemmed, caps quartered
8 ounces sugar snap peas, trimmed
4 garlic cloves, minced
1 tablespoon minced peeled fresh ginger
4 green onions, sliced on diagonal

Steps:

  • Whisk first 5 ingredients in medium bowl to blend. Add tofu and stir to coat; let marinate 30 minutes. Drain, reserving marinade in small bowl. Whisk 1/4 cup water and cornstarch into marinade.
  • Heat 1 tablespoon vegetable oil in large nonstick skillet over medium-high heat. Add tofu and sauté until golden, about 2 minutes. Using slotted spoon, transfer tofu to plate. Add remaining 1 tablespoon vegetable oil to skillet. Add mushrooms and stir-fry until tender, about 3 minutes. Add sugar snap peas; stir-fry 2 minutes. Add garlic and ginger; stir-fry 30 seconds. Return tofu to skillet; drizzle reserved marinade mixture over. Stir-fry until marinade thickens slightly, about 30 seconds. Season to taste with salt and pepper. Transfer to bowl. Sprinkle with green onions and serve.

6 green onions
4 stalks celery
1 sweet red pepper
1/4 cup water
2 tablespoons oyster sauce
1 tablespoon cornstarch
1 tablespoon dry sherry or 1 tablespoon mirin (rice wine for cooking)
1 tablespoon soya sauce
2 tablespoons vegetable oil
1 tablespoon minced gingerroot
2 cups sliced mushrooms (, about 1/4 lb)

Steps:

  • Drain tofu and weigh down to press for 30 ins.
  • Cut into 1/2 inch cubes.
  • set aside Cut onions and celery into 1/2 inch diagonal pieces.
  • Cut red pepper into 1/2 inch chunks, set veggies aside.
  • Stir together water, oyster sauce, cornstarch, sherry and soya sauce, set aside.
  • In wok or large heavy skillet.
  • Heat 1 tbls of the oil over high heat, stir-fry ginger for 30 secs, add tofu and cook stirring gently, for about 3 mins or until light brown.
  • With a slotted spoon, transfer to heated platter.
  • Add remaining oil to wok and heat, stir-fry mushrooms, onions,celery and red pepper for 1 min.
  • Return tofu to wok, stir to mix well.
  • Stir oyster sauce mixture.
  • Pour into wok and cook, stirring until liquid comes to a boil and boils for 1 minute.
  • Serve immediately.

1/4 cup soy sauce (low sodium )
1 tablespoon fish sauce
1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon sriracha sauce
1 tablespoon dark soy sauce
2 tablespoon oyster sauce
3 cloves garlic (minced)
1/2 cup water
1 tablespoon sesame oil
1 tablespoon olive oil
21 ounce udon noodles (cooked (3 packages, 7 oz package))
12 ounce firm tofu (chopped into small 1 inch pieces (substitute with chicken, shrimp, beef, or pork))
1 small onion (sliced)
1 medium red bell pepper (thinly sliced)
1/2 cup baby corn
2 cups broccoli florets
1 cup mushrooms (sliced)
1/2 cup snap peas
2 green onions (chopped)

Steps:

  • Make the sauce: In a small bowl whisk all the sauce ingredients together.
  • Cook the tofu: To a large skillet or wok add the olive oil and sesame oil and heat over medium-high heat. Add the tofu and cook until browned on all sides, should take about 3 to 5 minutes. You might need to do this in batches.
  • Cook veggies: Add the onion to the skillet and cook until the onion begins to soften a bit, another 2 to 3 minutes. Next, bell pepper and mushroom and continue sautéing the pepper starts to soften and mushrooms begin to brown a bit, stirring occasionally. Finally, add the broccoli, baby corn and snap peas. Toss everything together and cook for another 5 minutes.
  • Finish and Serve: Add the cooked udon noodles to the skillet and pour in the sauce. Toss and cook for 2 to 3 minutes then remove from heat. Sprinkle with green onions and serve.

1 (12 -15 ounce) carton firm tofu, drained and pressed
1 lb fresh cod, rinsed and patted dry
1 lemon, juice and zest of
2 garlic cloves, minced
2 teaspoons gingerroot, finely minced
1 tablespoon sambal oelek
1 teaspoon ground coriander
1/2 teaspoon turmeric
2 tablespoons peanut oil
salt
3/4 cup roasted peanuts, unsalted
1 bunch scallion, thinly sliced
4 lemon wedges

Steps:

  • Cut both the tofu and cod into pieces about 1.5 inches long and .5 inch thick. Place tofu in one bowl and cod in another.
  • Divide next seven ingredients between the two bowls and toss gently. Take care not to break the tofu.
  • Heat half of oil in a wide, ninstick skillet. When hot, add tofu and fry over medium-high heat until golden and crispy, 8-10 mninutes. Turn so that all surfaces have a chance to color. When done, sprinkle with salt, remove to a plate, and cover to keep warm. Return pan to the heat.
  • Add remaining oil, add the peanuts and cod, and cook over high heat until cod is barely cooked, about 3 minutes. Return the tofu to the pan, add the scallions, and cook 1 minute more. Season with salt, then slide the tofu and fish onto a platter and garnish with lemon wedges if desired.
