Steps:

  • Heat the butter in a skillet over medium heat. Stir in the garlic; cook and stir until the garlic is fragrant, about 2 minutes. Add the spinach a few handfuls at a time, stirring until wilted before adding more, about 5 minutes. Stir in the lemon juice, and season with garlic salt.

This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

¼ cup canola oil
¼ cup unsalted butter
2 (10 ounce) bags fresh spinach leaves
8 cloves garlic, thinly sliced

Steps:

  • Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

This quick cooking side dish is ready in 15 minutes but only five of those minutes are hands-on in the kitchen, making it a perfect addition to any weeknight menu. Look for water spinach (called rau muong or ong choy) in Asian markets. Regular spinach is a fine substitute, though it won't have the same silkiness. You can top it with your favorite protein for a one-dish dinner. Try adding tofu, chicken, shrimp, or even seared tuna to your bowl for a hearty dinner that won't leave you feeling stuffed. Add this recipe to your rotation to expand your palate and bring some flavor to the table.

1 pound fresh water spinach, wide parts of stems trimmed
4 teaspoons canola or other neutral oil, divided
1 tablespoon oyster sauce
1 teaspoon fish sauce
1/2 teaspoon sugar
1 tablespoon minced fresh garlic, divided
2 teaspoons water
1 teaspoon cornstarch

Steps:

  • Cut spinach into 3- to 4-inch pieces. Rinse and drain well. Bring a large Dutch oven filled with water to a boil over high heat. Add spinach; cook 30 seconds or until wilted. Drain; rinse with cold water. Drain well.
  • Combine 1 teaspoon oil, oyster sauce, fish sauce, and sugar in a small bowl; stir with a whisk. Stir in 1 tea­spoon garlic. Combine 2 teaspoons water and cornstarch, stirring with a whisk.
  • Heat remaining 1 tablespoon oil in a large skillet or wok over medium-high until hot but not smoking. Add remaining 2 teaspoons garlic; cook 15 seconds or until fragrant, stirring constantly. Pour off excess water from spinach; add spinach to pan. Cook 3 minutes or until thoroughly heated, stirring constantly. Stir in oyster sauce mixture. When spinach begins to release juices, add cornstarch mixture. Cook, stirring constantly, 1 minute or until sauce thickens and spinach takes on a silky finish.

750 g fresh spinach
1 tablespoon oil
1 tablespoon finely chopped garlic
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Wash the spinach thoroughly.
  • Remove all stems leaving just the leaves.
  • Heat the wok (or large frying pan) until it is VERY hot.
  • Add the oil.
  • When the oil it is very hot and slightly smoking, add the garlic and salt.
  • Stir-fry both for 10 seconds.
  • Add the spinach and stir-fry for about 2 minutes to coat the spinach leaves thoroughly with the oil, garlic and salt.
  • When the spinach has wilted to about one-third of its original size, add the sugar.
  • Continue to stir-fry for another 4 minutes.
  • Transfer to a plate and pour off any excess liquid.
  • Serve hot or cold.

Stir the cornstarch mixture, add it to the wok, and stir-fry the mixture mixture for 1 to 2 minutes, or until the spinach is wilted evenly and the sauce is thickened. Serve the spinach with the rice.

4 cloves garlic (finely chopped)
Optional: 1 red chili (sliced, or 1/3 to 3/4 teaspoon dried crushed chili flakes)
1/4 cup chicken or vegetable stock
2 tablespoon oyster-flavored sauce (or vegetarian oyster sauce/stir-fry sauce)
1 tablespoon fish sauce (or 1 1/2 tablespoons soy sauce if vegetarian)
1 tablespoon sherry (cooking sherry works well too)
1 teaspoon brown sugar
1 teaspoon sesame oil
Optional: 1/2 red pepper (sliced thinly)
1/4 to 1/3 cup roughly chopped peanuts or cashews (for topping)
1 to 2 tablespoons vegetable oil

Steps:

  • Gather the ingredients.
  • In a cup, stir together stock,​ oyster sauce, fish sauce, sherry, and brown sugar. Set aside. Rinse spinach and drain.
  • Heat a wok or large frying pan over medium-high heat. Add 1 to 2 tablespoons vegetable oil and swirl around, then add garlic and chili (if using). Stir-fry 1 minute to release the fragrance.
  • Add the red pepper (if using) and stir-fry 1 minute. Add the spinach and stir-fry briefly, until the spinach leaves are lightly covered in the oil and garlic/chile (about 30 seconds). Add the stir-fry sauce and stir-fry until spinach has cooked down to a nice dark green (stems should still be on the crisp side), about 2 to 4 minutes.
  • Remove from heat and taste-test, adding more fish sauce instead of salt. (If too salty or sweet, add a squeeze of lime or lemon juice. More chile can be added for increased spiciness.)
  • To serve, scoop or slide spinach onto a serving plate or bowl. Top with the remaining liquid at the bottom of your wok/pan. Drizzle over the sesame oil and top with chopped nuts.
  • Serve and enjoy.
