1 package (16 ounces) frozen sugar snap stir-fry vegetable blend, thawed
Hot cooked rice

Steps:

  • In a small bowl, combine cornstarch and broth until smooth. Stir in the soy sauce, sugar, ginger, garlic powder and pepper flakes; set aside. , In a wok or large skillet, stir-fry pork in 1 tablespoon oil until juices run clear. Remove and keep warm. In the same pan, stir-fry vegetables in remaining oil until crisp-tender. , Stir broth mixture and add to the vegetables. Bring to a boil; cook and stir for 1 minute or until thickened. Return pork to the pan; heat through. Serve with rice and, if desired, sprinkle with cilantro.

Steps:

  • Whisk soy sauce, vinegar, and cornstarch together in a small bowl.
  • Heat 1 tablespoon oil in a wok over medium-high heat. Cook and stir tenderloin strips in hot oil until just browned, 2 to 4 minutes. Transfer pork to a plate and return wok to heat.
  • Heat remaining oil in the same skillet over medium-high heat. Cook and stir red chile pepper and garlic in hot oil until sizzling, 15 to 30 seconds. Add onion and green pepper to skillet; cook and stir until onion starts to soften, 2 to 3 minutes. Stir chopped bok choy stalks into onion mixture; cook and stir until stems begin to soften, about 3 minutes.

2 tablespoons cornstarch
2 tablespoons soy sauce
1 tablespoon natural rice vinegar

1 lb pork tenderloin, cut in 1/2-inch strips
1 tablespoon chile garlic sauce
1 teaspoon finely chopped fresh gingerroot

Steps:

  • 1. Whisk all sauce ingredients together in bowl. Set aside.
  • 2. Cut pork into 2" lengths and then cut each length into 1/4" matchsticks. Combine pork with baking soda and water in bowl. Let sit at room temperature for 15 minutes.
  • 3. Rinse pork in cold water. Drain well and pat dry with paper towels. Whisk rice wine and cornstarch in bowl. Add pork and toss to coat.
  • 4. For the stir fry, combine garlic, scallion whites, chili paste in bowl.
  • 5. Heat 1 tbsp oil in large non stick pan over high heat until just smoking. Add mushrooms and cook stirring frequently until tender, 4 minutes. Add water chestnuts and cook for additional 2 to 4 minutes until tender. Transfer vegetables to separate bowl.
  • 6. Add remaining 3 tbsp oil to pan and place over medium low heat. Add garlic scallion mixture and cook until fragrant, 30 seconds. Transfer 1 tbsp garlic scallion oil to small bowl and set aside. Add pork to skillet and cook until no longer pink, 3 to 5 minutes. Whisk sauce to recombine and add to skillet. Increase heat to high and cook stirring constantly until thickened and pork cooked thru, 1 to 2 minutes. Return vegetables to skillet and combine. Transfer to platter, sprinkle with scallion greens and reserved garlic scallion oil and serve.

150 g around 4.5 ounces pork butt or tenderloin, sliced
1/4 tsp. salt
1/2 tbsp. cooking wine
1 tbsp. light soy sauce
3 tbsp. water or chicken stock
1/4 tsp. white pepper
1 tsp. cornstarch
1 tsp. sesame oil
cooking oil as needed
1 garlic cloves ( ,minced)
1 tsp. minced ginger
4 scallions ( ,cut into small sections)
1 black bean sauce or 1 tbsp. chopped black beans
1 tsp. dark soy sauce
3 fresh red chili peppers ( ,cut into small sections)
2 fresh green chili peppers ( ,cut into small sections)
a very small pinch of salt if needed

Steps:

  • Thinly slice the pork. Add salt, cooking wine, light soy sauce, water (or chicken stock) and white pepper. Message the pork slice for 2-3 minutes until all the juice is well absorbed. Set aside for 10 minutes.
  • Add cornstarch and message again. Make sure all the slices are well coated with starch. At last, add 1 teaspoon of sesame oil, mix well too.
  • Heat your wok or pan firstly. Add cooking oil to form a 2-3 cm high layer (do not be scared by the oil amount, we do not eat them all). Spread the pork sliced in. Let them stay for 5 to 10 seconds and then quickly fry them until turns pale. Transfer out immediately.
  • Remove the extra oil and save them for vegetable stir fries. Keep around 1 tablespoon of oil and fry garlic, ginger and scallion until aromatic. Place fresh pepper sections in to fry for 1 minute or until slightly softened. Return pork sliced in, add dark soy sauce and black beans sauce. Mix well and see if any extra salt is needed. Move out immediately after mixed. Be quick in this process and it is better to finish this within 30 seconds.

  • In a small bowl, coat the pork in 1 teaspoon cornstarch and 1 teaspoon oil and set aside. Cut all of your vegetables and arrange on plate for easy access when cooking. Mix the second teaspoon of cornstarch with 3 tablespoons water to make a slurry and set aside.
  • Heat a wok over high heat, add 1 tablespoon of oil and stir fry the pork quickly for about 1 minute. Remove the pork from the wok and set aside.
  • Keep the wok on high heat and add another teaspoon of oil (if needed) and toss in the dried chilis. Cook them for about 10 seconds and then add the vegetables to the wok. Toss the mixture with a sturdy metal spatula and cook for 2 minutes at the highest heat. Pour the shaoxing wine around the perimeter of the wok to deglaze and create some sizzle. Add the pork back to the wok, and give it all a quick toss. Then add the vinegar, sugar, salt, and white pepper.
  • Toss the mixture and add your cornstarch and water slurry along with a tablespoon of chili oil. Give it a last stir and serve with rice!
