GARLIC CHICKEN STIR-FRY



Garlic Chicken Stir-Fry image

Lighten up takeout-inspired fare with this delicious Garlic Chicken Stir-Fry recipe. For more fiber, serve this stir-fry chicken dinner with brown rice instead of white rice.

12 ounce skinless, boneless chicken breast halves
1 cup water
3 tablespoon reduced-sodium soy sauce
1 tablespoon rice vinegar or white wine vinegar
1 tablespoon cornstarch
2 tablespoon cooking oil
10 green onions, bias-sliced into 1-inch pieces
1 cup thinly sliced fresh mushrooms
12 cloves garlic, peeled and finely chopped
0.5 cup sliced water chestnuts
2 cup hot cooked white, jasmine, or basmati rice

Steps:

  • Cut chicken into 1/2-inch pieces. Place chicken in a resealable plastic bag set in a shallow dish. For marinade, stir together water, soy sauce, and vinegar. Pour over chicken; seal bag. Marinate in the refrigerator for 30 minutes. Drain chicken, reserving the marinade. Stir cornstarch into reserved marinade; set aside.
  • Pour oil into a wok or large skillet. (If necessary, add more oil during cooking.) Heat over medium-high heat. Add green onion, mushrooms, and garlic to wok; cook and stir for 1 to 2 minutes or until tender. Remove vegetables from wok.
  • Add chicken to wok; cook and stir for 2 to 3 minutes or until no longer pink. Push chicken from center of wok. Stir marinade mixture; add to center of wok. Cook and stir until thickened and bubbly. Return cooked vegetables to wok. Add water chestnuts. Cook and stir about 1 minute more or until heated through. Serve with rice. Makes 4 servings.

2 tablespoons peanut oil
6 cloves garlic, minced
1 teaspoon grated fresh ginger
1 bunch green onions, chopped
1 teaspoon salt
1 pound boneless skinless chicken breasts, cut into strips
2 onions, thinly sliced
1 cup sliced cabbage
1 red bell pepper, thinly sliced
2 cups sugar snap peas
1 cup chicken broth
2 tablespoons soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch

Steps:

  • Heat peanut oil in a wok or large skillet. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt. Stir fry until onion becomes translucent, about 2 minutes. Add chicken and stir until opaque, about 3 minutes. Add remaining 4 cloves minced garlic and stir. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover.
  • In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.

1 tablespoon peanut oil
2 to 3 cloves garlic, minced
1 tablespoon minced fresh ginger
1 pound boneless, skinless chicken breasts, cut into strips
1 medium onion, diced
2 cups sliced carrots
1 red bell pepper, seeded and sliced into thin strips
2 cups sugar snap peas
1 (15-ounce) can baby corn, drained
2 cups broccoli florets
1/4 cup reduced-sodium soy sauce
2 teaspoons cornstarch
1 cup reduced-sodium chicken broth

Steps:

  • Heat oil in a wok or large skillet over medium-high heat. Add garlic and ginger and cook 1 minute. Add chicken and cook 3 to 4 minutes, until starting to brown, stirring constantly. Add onions, carrots, and peppers and cook 1 minute. Add snap peas, corn and broccoli and cook 2 minutes. Add soy sauce and cook 2 minutes, until vegetables are crisp-tender.
  • Dissolve cornstarch in chicken broth in a small bowl and add to wok. Simmer 2 minutes, until sauce thickens. Serve over rice.

1/2 cup soy sauce
1 teaspoon pepper
1/4 to 1/2 teaspoon ground ginger

Steps:

  • In a large skillet or wok, scramble egg in 1 tablespoon oil, breaking into small pieces. Remove from skillet and set aside. Add remaining oil to skillet; stir-fry celery and garlic over medium-high heat until crisp-tender. Add rice; cook, stirring constantly, for 3 minutes. 2 tablespoons olive oil
1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
7 cloves garlic, sliced, or to taste
salt and ground black pepper to taste
4 tablespoons honey, or to taste
4 tablespoons soy sauce, divided, or to taste
2 (16 ounce) packages frozen Asian vegetable medley
1 cup sliced mushrooms
3 cups water
3 cups instant white rice (such as Minute®)

Steps:

  • Heat oil in a wok over medium heat. Add chicken and garlic, and season with salt and pepper. Cook and stir until chicken is browned, about 5 minutes. Add honey and 1 tablespoon soy sauce; stir to coat chicken. Transfer chicken to a plate, leaving juices in the wok.
  • Add frozen vegetables, mushrooms, and remaining soy sauce to the wok. Cook and stir over medium heat until vegetables are crisp on the outside and tender on the inside, about 7 minutes.
  • Stir chicken back into the wok and cook until no longer pink in the centers and sauce has reduced, 5 to 10 minutes.
  • Meanwhile, stir water and rice together in a microwave-safe bowl. Cover and cook in the microwave on high until water is fully absorbed, about 5 minutes.

2 teaspoons light soy sauce
2 teaspoons oyster sauce

1 1/2 lbs boneless skinless chicken thighs
4 teaspoons garlic, finely minced
1 tablespoon fresh ginger, finely minced and peeled
20 snow pea pods, trimmed
1 onion, medium, cut into 1/4 inch slices
1 tablespoon hoisin sauce
1 tablespoon ketchup
1 tablespoon toasted sesame oil
1 1/2 teaspoons dark soy sauce
1/2 teaspoon red pepper flakes
2/3 cup chicken stock
3 scallions, sliced lengthwise into thin strips, then cut into 2 inch sections
2 tablespoons peanut oil

Steps:

  • In a medium bowl mix together the cornstarch, white wine, soy sauce, oyster sauce, salt, and sugar.
  • cut the chicken into 1 1/2 by 1/2 inch pieces.
  • toss in the soy sauce mixture.
  • cover with plastic wrap and let stand for 20 to 30 minutes.
  • On a small plate place the minced garlic and the fresh ginger.
  • In a small bowl, thoroughly mix together the hoisin sauce, ketchup, toasted sesame oil, soy sauce, and red pepper flakes.
  • Have ready the chicken stock and scallions.
  • Heat a wok or large skillet over high heat until hot.
  • Add the peanut oil.
  • swirl the oil around the pan until very hot but not smoking.

  • add the chicken and quickly stir and flip in the oil to separate the pieces.
  • continue to toss and cook for about 3 minutes.
  • add the chicken stock and swirl until the stock is heated through.
  • add the snow peas and onions, stir once, cover, and cook for 2 minutes.
  • Uncover the pan and add the soy sauce mixture.
  • stir lightly until all pieces are thoroughly coated.
  • sprinkle with the scallions, stir lightly, and remove to a serving dish.
  • serve immediately.
