Steps:
- Shape ground beef into 4 oval patties 1 inch thick.
- Brown in butter and oil in a large skillet over medium high heat for 6-10 minutes or until cooked through.
- Cut the bread diagonally into 4 3/4 inch thick slices and toast.
- Spread each with butter and place on dinner plates.
- Top each bread slice with a hamburger patty and keep warm.
- Add mushrooms to pan drippings.
- Cook over high heat until light brown, stirring constantly.
- Spoon mushrooms over patties.
- Add wine and cream to skillet and boil until sauce is reduced by half and slightly thickened, stirring constantly.
- Pour over patties.

- Heat vegetable oil in a large wok or skillet over medium-high heat; cook and stir beef until browned, 3 to 4 minutes. Move beef to the side of the wok and add broccoli, bell pepper, carrots, green onion, and garlic to the center of the wok. Cook and stir vegetables for 2 minutes.
- Stir beef into vegetables and season with soy sauce and sesame seeds. Continue to cook and stir until vegetables are tender, about 2 more minutes.

BEEF RICHELIEU WITH MADEIRA SAUCE
This is a show-stopping dinner party entree.A whole beef tenderloin is roasted and served with potatoes,tomatoes, and mushrooms. All this is served with a wonderful Madeira wine sauce.Originally from an April 1979 issue of Bon Apetit magazine.

Steps:
- Madeira Sauce:.
- *This can be prepared up to 3 days ahead and refrigerated.
- Combine first four ingredients in small saucepan and bring to a boil.
- Reduce heat and simmer 3 minutes.
- Mix some of the sauce with the cornstarch and then stir into the pan.
- Continue simmering, stirring frequently, until sauce is consistency of whipping cream, about 20-25 minutes.
- Season with salt and pepper.
- Beef Richelieu:.
- Preheat oven to 375°F.
- Cook potatoes in enough boiling salted water to cover until barely tender, about 8 to 12 minutes.
- Drain well and set aside.
- While potatoes are boiling, brown filet in 1 tablespoon oil in large skillet over high heat.
- Transfer to roasting pan and bake 25 minutes for rare (meat thermometer should register 125-130°F).
- When meat is done, remove from oven, cover loosely with foil and keep warm.
- While meat is roasting,cook tomatoes in enough salted water to cover over medium-high heat until tender, about 5 minutes.Do NOT overcook.
- Drain and let cool slightly before peeling; cover and keep warm.
- Melt butter in large skillet over medium high heat.
- Add mushrooms and sauté until lightly browned.
- Remove from skillet and keep warm.
- Add remaining 3 tablespoons butter to skillet and heat over medium- high.
- Add potatoes and saute until evenly browned.
- To serve, transfer meat to heated platter and surround with vegetables.
- Degrease pan drippings with paper towel or spoon, add sauce to pan and reheat, stirring well.
- Spoon some sauce over meat, reserving remainder to pass separately. Garnish with parsley sprigs, if desired.

STIR-FRIED BEEF WITH HOISIN SAUCE

- Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
- Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
- When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
- Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
- Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

- In a large bowl, combine the first five ingredients; add beef and toss to coat. Refrigerate for 15 minutes. For sauce, in a small bowl, combine the cornstarch, broth, ketchup, soy sauce and sesame oil until smooth; set aside., In a large nonstick skillet or wok coated with cooking spray, stir-fry the beef mixture in 1 teaspoon canola oil until no longer pink. Remove and keep warm. Stir-fry the onion in remaining canola oil for 2 minutes. Add green pepper; stir-fry for 2 minutes. Add tomatoes; stir-fry 1 minute longer., Return beef to the pan. Steps:
- Trim fat from steak.
- Partially freeze steak, slice diagonally across grain into thin strips.
- Combine steak, Madeira and pepper in a medium bowl, stirring well, let stand 15 minutes, drain, reserving marinade.
- Coat a large frypan with cooking spray and place over high heat until hot.
- Add steak to frypan, stir fry 1 minute.
- Remove from frypan, set aside.
- Reduce heat to medium and add green onions, stir fry for 30 seconds.
- Add reserved marinade, bring to a boil.
- Combine cornstarach, salt and water, stir well and add to marinade mixture in frypan.
- Return steak to frypan, cook until sauce is thickened, stirring constantly.

- Heat a large heavy pan or wok over high heat and add 1 Tbsp oil. When oil is hot, add beef in a single layer and sautee undisturbed 2-3 mins. Stir and sautee another 2 min or until nearly cooked through. Season lightly with salt and pepper, add ginger and garlic and sautee 1 min.
- Drizzle beef with sauce to taste (I added 5 Tbsp) and stir-fry another 1 min or until beef is fully cooked through. Remove beef to a plate and cover to keep warm. Wipe pan clean with a paper towel.
- Place clean pan over high heat and add 1 Tbsp oil. Once oil is hot, add mushrooms, season lightly with s & p and stir fry until golden (5 min). Transfer mushrooms to the plate with beef.
