There's something very satisfying about a cup of tea with a slice of buttered malt loaf - this simple, good-for-you version makes two and improves on keeping

Steps:
- Heat oven to 150C/130C fan/gas 2. Line the base and ends of two greased 450g/1lb non-stick loaf tins with strips of baking parchment.
- Pour the hot tea into a mixing bowl with the malt, sugar and dried fruit. Stir well, then add the eggs.
- Tip in the flour, then quickly stir in the baking powder and bicarbonate of soda and pour into the prepared tins. Bake for 50 mins until firm and well risen. While still warm, brush with a little more malt to glaze and leave to cool.
- Remove from the tins. If you can bear not to eat it straight away, it gets more sticky after wrapping and keeping for 2-5 days. Serve sliced and buttered, if you like.

- In a large bowl or glass jug, mix together the tea, malt extract, molasses and butter. Add the raisins and sugar. Stir to combine and set aside for 10 minutes to cool.
- Mix the beaten egg into the cooled mixture. Sift over the flour and salt, stirring gently to combine. Pour into the prepared loaf pan. Bake for about 1 hour in the preheated oven, or until a skewer inserted into the centre comes out clean (it will sink a little in the middle).
- Warm the extra malt extract for 10 seconds in the microwave and brush over the top of the loaf while it is still hot to create a shiny glaze. Set aside to cool in the pan.

- For the tea, place 400ml boiling water in a measuring cup. Place tea bags in measuring cup and allow tea to steep for 5 minutes. Meanwhile place raisins and prunes in a very large bowl.
- When tea is ready, discard tea bags and pour tea over top of fruit. Add butter so it can melt in the hot tea. Allow mixture to sit for a few minutes so the fruit can soak up some of the tea.
- Add treacle, sugar and malt extract to the bowl and mix to combine. Beat in the eggs and then add in both flours, baking powder and baking soda. Fold to combine. Divide between the two loaf pans and bake for 1 hour or until loafs are risen and spring back to the touch.

- Loading the Breadmaker. Mix the two flours together. Place the yeast first into the breadmaker's pan in a little heap on one side. Then add all the other dry ingredients except for the fruit, on top.
- After Baking. When the programme finishes, remove the loaf quickly or it might become soggy. Leave it to cool on a wire rack. When you cut the first slice, check to see whether the dried fruit is evenly distributed throughout the loaf.
- How to Serve It. I think slices of malt loaf are best toasted. The outside will crisp up and caramelise a little while the inside stays slightly chewy.

- Put the raisins and sultanas in a large mixing bowl with 1 tbsp of the malt extract, then pour over the hot tea. Leave to stand, covered, for at least 2 hours, preferably overnight.
- Heat the oven to 150°C/fan130°C/ gas 2. Grease and line a 1 litre loaf tin with baking paper. Add the remaining 4 tbsp malt extract, the treacle and sugar to the soaked fruit. Beat the eggs into the mixture, then stir in the flours, baking powder and bicarbonate of soda. Pour the mixture into the prepared tin, then bake on the middle shelf for 1 hour 20-30 minutes. The malt loaf should be firm and well risen, and a skewer pushed into the centre should come out a little sticky but not wet. Leave to cool completely in the tin (see Make Ahead).
- To make the butter, pour the cream into a sterilised mixing bowl (see Know-how). Beat with an electric hand mixer on a medium speed until the cream becomes stiff, then continue to whip until the cream collapses and separates into butterfat and buttermilk. Line a sieve with clean muslin or a new J-cloth and set over a bowl. Pour in the cream mixture and allow the buttermilk to drain into the bowl (you can use this for making bread or other cakes). Put the butter from the sieve into another sterilised bowl, then beat briefly to extract even more buttermilk. Drain again.
- Fill a bowl with very cold or iced water. Add the butter and knead it with your hands. If there’s still any buttermilk left, it will come out in the water. Change the water 2 or 3 times (see tips). The butter is ready when the water stays clean.
