For the cake
175 g (6oz) butter, diced, plus extra to grease
150g (5oz) dark muscovado sugar
3 level tbsp black treacle
150 ml (5fl oz) semi-skimmed milk
2 balls of stem ginger, grated
225 g (8oz) plain flour, sifted
1 level tbsp ground ginger
11⁄2 level tsp ground cinnamon
11⁄2 level tsp bicarbonate of soda
2 medium eggs, beaten
For the icing
150 g (5oz) golden icing sugar
2tbsp ginger syrup from the jar
1 ball of stem ginger, roughly chopped

Steps:

  • Preheat the oven to 200°C (180°C fan oven) mark 6. Grease a 20.5x 20.5cm (8x8in) cake tin and line with greaseproof paper.
  • Put the butter, sugar, treacle, milk and the grated ginger in a large pan and heat gently until melted, stirring to mix well.
  • Add the flour, spices and bicarbonate of soda, then add the beaten eggs. Quickly mix together, then spoon into the prepared tin. Bake for 30min. Remove from the tin and cool, still in the paper, on a wire rack.
  • For the icing, sift the icing sugar into a bowl, add the syrup and 1tbsp cold water, then mix. When the cake has cooled, pour the icing over, then scatter with the ginger.
  • To freeze. Before icing, wrap well in clingfilm and label. Freeze. To serve. Thaw at cool room temperature. Here's an early holiday present: A festive dessert loaded with dried fruit and brandy that can easily be made up to a week in advance because its flavors just keep improving.

8 ounces dried black mission figs, stems removed and coarsely chopped
6 ounces golden raisins
1 cup brandy, warm (see Cook's Note)
6 tablespoons (3/4 stick) unsalted butter, melted and cooled, plus more for greasing the pan
2 large eggs
3/4 cup milk
1/2 cup dark brown sugar
1 cup all-purpose flour
1 cup breadcrumbs
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Zest of 1 large orange
1 1/2 cups heavy cream
1 1/2 cups dark brown sugar
1 stick (8 tablespoons) unsalted butter
Whipped cream

Steps:

  • For the figgy pudding: Combine the dried figs and raisins with the brandy in a small bowl and let sit 30 minutes to plump the fruit. Strain, then reserve the brandy and fruit separately.
  • Meanwhile, grease a 1.6-liter covered pudding pan generously with butter.
  • Whisk the eggs together with the milk and sugar in a medium bowl.
  • Whisk together the flour, breadcrumbs, baking powder, allspice, cinnamon, salt and nutmeg in a separate large bowl.
  • Stir the wet ingredients into the dry ingredients until well combined. Stir in the soaked fruit and orange zest. Add the batter to the prepared pan, tapping the pan gently on the counter to settle the batter, and smooth the top.
  • Put a metal trivet or aluminum foil ring in the bottom of a large stockpot. Put the pudding pan on the trivet and add enough boiling water to come halfway up the sides of the pan. Set the pot over high heat and bring to a simmer, then cover and simmer over low heat for 1 hour. Turn off the heat and let sit for 20 minutes.
  • For the brown sugar sauce: Meanwhile, combine the cream and sugar in a medium saucepan over medium-high heat. Bring to a boil and cook, stirring frequently, until reduced by half, the bubbles become the size of quarters and the sauce starts to pull away from the side of the saucepan, about 5 minutes. Remove from the heat and stir in the butter. Keep warm.
  • Carefully remove the pudding pan from the pot using oven mitts. Remove the lid and let cool another 15 minutes. Run a small offset spatula around the sides of the pan to release the pudding, then use a skewer to poke about a dozen holes in the cake. Pour the reserved brandy over the top of the cake, then allow it to sit and soak in until the cake cools completely. Invert onto a serving platter and serve immediately with the sauce and whipped cream or store the cake at room temperature wrapped in plastic.

1/3 cup butter or 1/3 cup hard margarine, softened
2/3 cup brown sugar, packed
2 large eggs
1 cup all-purpose flour
2 teaspoons baking powder
1/4 cup minced crystallized ginger
1/2 cup butter or 1/2 cup hard margarine, cut up
1/2 cup brown sugar, packed
1/2 cup whipping cream
2 tablespoons brandy
1/2 teaspoon ground cinnamon

Steps:

  • Place figs in medium bowl. Sprinkle with baking soda. Pour boiling water over top. Let stand for 10 minutes. Process (with liquid) in blender or food processor until almost smooth.
  • Cream margarine and brown sugar in large bowl. Add eggs, 1 at a time, beating well after each addition.
  • Combine flour, baking powder and ginger in small bowl. Add to margarine mixture. Stir well. Add fig mixture. Stir. Line bottom and side of greased 8 inch springform pan with parchment (not waxed) paper. Spread batter evenly in pan. Bake in 350°F oven for about 50 minutes until wooden pick inserted in centre of cake comes out clean. Let stand in pan for 10 minutes before removing to wire rack to cool.
  • CINNAMON BRANDY SAUCE: Heat and stir all 5 ingredients in medium saucepan on medium until boiling. Boil for about 5 minutes, without stirring, until slightly thickened. Let stand for 5 minutes. Makes 1 cup sauce. Drizzle over individual servings of warm cake. Cuts into 8 wedges.
