I started making our own supply of Irish Cream a few years ago, but noticed that we never use Irish whiskey, we only have the Scottish stuff in our house, thanks to good friends and Duty Free shopping.

Number Of Ingredients 7

1 cup light cream (don't use heavy or whipping cream)
1 (14 ounce) can sweetened condensed milk
1 2/3 cups single malt Scotch whisky
1 teaspoon instant coffee
2 tablespoons chocolate syrup (we use Hershey's)
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • Dump all the ingredients in a blender and whizz on high for 30 seconds.
  • Bottle in a tightly sealed container and keep in the fridge.
  • Be sure the shake the bottle well before serving.
  • This will keep for up to two months in the fridge.
  • Note: Don't use heavy cream, it tends to separate.
  • If you can't find light cream, use half and half, or whole milk.

3 lbs boneless lamb shoulder, trimmed and cut into 1-inch pieces
1 1/2 tablespoons minced fresh parsley leaves
1 teaspoon dried thyme, crumbled
6 cups chicken broth
3 lbs boiling potatoes, peeled and quartered
1 large onion, finely chopped
1 lb carrot, peeled and cut into 1/2-inch pieces
6 stalks celery, trimmed and ribs cut into 1/2-inch pieces
6 tablespoons all-purpose flour
1/4 cup vegetable oil

Steps:

  • In a 7 to 8-quart kettle simmer lamb, parsley, thyme, and salt and pepper to taste in 4 cups broth, covered, 1 1/2 hours.
  • To lamb mixture add potatoes, onion, carrots, celery, and remaining 2 cups broth and simmer, covered, 1 hour.
  • In a small bowl whisk together flour and oil until smooth and stir into simmering stew until well incorporated.
  • Simmer stew, uncovered, until thickened, 3 to 5 minutes, and season with salt and pepper.

While making this recipe for Zaar World Tour 8 (http://www.food.com/recipe/homemade-baileys-irish-cream-337038) I had to substitute the whiskey for scotch and my housemate, who loves scotch loved it. Therefore I'm saving my change here.

1 cup scotch (Johnny Walker Black was what I used)
3 eggs
1 cup cream (Liddles Lactose Free)
1 (395 g) can condensed milk
1/2 teaspoon vanilla essence
1 1/2 teaspoons chocolate essence

Steps:

  • Pour the scotch into a blender and start adding ingredients, I added them in the following order; blending in between each addition (including a blend for each egg) Choclate essence, vanilla essence, cream, eggs, condensed milk.
  • Pour into a container (recipe makes approx 1 litre).
  • The recipe I adapted from suggests that you can store for up to 2 weeks, so I'm going to suggest you follow some very sound advice.
