This is what we called 'Gobbledygook' when we were kids. It's actually a Southern version of very sweet, stewed tomatoes. It isn't the most attractive dish in the world, but it's delicious. Don't try making this with fresh tomatoes. It won't work. And you really do need that much sugar in there.

1 (28 ounce) can whole peeled tomatoes, with liquid
3 slices stale bread, torn into pieces
⅔ cup white sugar
¼ cup butter, melted
1 pinch salt
1 teaspoon black pepper

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
  • Stir the tomatoes, bread, sugar, butter, salt, and pepper in a bowl; pour into the prepared dish.
  • Bake until hot and the tomatoes are tender, about 45 minutes.

  • In a 1-qt. microwave-safe bowl, combine the tomatoes, sugar, butter, seasoned salt and pepper. Cover and microwave on high for 5 minutes. Combine cornstarch and water until smooth; stir into the tomato mixture. Cover and cook 1 minute longer or until thickened and bubbly.

Here is a good recipe for stewed tomatoes that I have on my site. This is a good way to use up the remaining tomatoes you may have on your vines!

4 large tomatoes
2 stalks celery, chopped very fine
1/4 bell pepper, chopped very fine
1 teaspoon Accent seasoning
4 tablespoons sugar
salt and pepper
2 cups water

Steps:

  • Peel the tomatoes by soaking them in boiling water for one minute. Gently pull away the skin.
  • Place tomatoes in a large pot and add the remaining ingredients.
  • Cover and boil gently for 15 minutes, until tomatoes are tender.
  • Serve with croutons.
  • I like my stewed tomatoes with toast and butter.

3 Tablespoons butter
1/2 small green pepper, seeded and diced
1 small onion, diced
2 cloves garlic, minced
5 large ripe tomatoes, seeded and diced
1/4 cup sugar
1/2 cup water
salt and pepper
2-3 slices white bread, torn into 1-inch pieces

Steps:

  • In a large skillet, melt butter over medium heat.
  • Add chopped green peppers and onion, and cook until translucent, approximately 5 minutes.
  • Add minced garlic, and cook for 1 minute.
  • Add tomatoes, sugar and water, and simmer until tomatoes begin to fall apart, approximately 20 minutes.
  • Stir in bread cubes. Start with 2 slices of bread that have been torn into 1-inch pieces, and if the mixture seems soupy, add an additional slice. Cook until bread barely holds it shape.
  • Season to taste with salt and pepper. Serve hot.

1 (8 ounce) package lemon Jell-O gelatin, small size
1 tablespoon white vinegar

Steps:

  • Place stewed tomatoes in a med. size sauce pan. (KEEP THE CAN).
  • Cut up the tomatoes & heat to boiling.
  • Remove from heat & imediately add the lemon jello & vinegar,
  • Stir until jello is comepletely dissolved.
  • Pour everything back into the can & refrigerate overnight.
  • DO NOT take out of refrigerator until ready to sit at the table!
  • To serve: Cut open the other end of the can & push through.
  • Cut into 6, 1 inch slices & serve on a bed of crisp lettuce.

3 tablespoons vegetable oil
3 medium onions, thinly sliced
1 garlic clove, minced
5 medium tomatoes, cut lengthwise into eighths
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat a large skillet over medium-high heat. Add the oil and swirl to coat the pan. Add the onions and saute until translucent and soft, 3 to 5 minutes. Add the garlic and stir for another minute.
  • Add the tomatoes and cook until soft and the juice is slightly evaporated, 5 to 7 minutes. Stir in the salt and pepper. You can serve the mixture hot or cold. It will keep in the refrigerator for about 1 week.

  • In a large pot, cook the elbow macaroni according to package instructions, but stop short of al dente. Drain the macaroni and return it to the pot. Add the tomato sauce, stewed tomatoes, and sugar to the drained macaroni, stirring it all together so the macaroni is well coated with sauce. 2 cups large-diced yellow onions (2 onions)
2 cups large-diced carrots (3 to 4 carrots)
1 cup chopped fennel
1 tablespoon minced garlic (3 cloves)
1 cup French green lentils (7 ounces)
1 (28-ounce) can crushed tomatoes, preferably San Marzano
2 cups chicken stock, preferably homemade
2 teaspoons mild curry powder
2 teaspoons chopped fresh thyme leaves
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon good red wine vinegar

Steps:

  • Heat the oil in a large saucepan. Add the onions, carrots and fennel and cook over medium-low heat for 8 to 10 minutes, until the onions start to brown. Stir occasionally with a wooden spoon. Add the garlic and cook for 1 more minute.
  • Meanwhile, rinse and pick over the lentils to make sure there are no stones in the package.
  • Add the tomatoes, lentils, chicken stock, curry powder, thyme, salt, and pepper to the pan. Raise the heat to bring to a boil, then lower the heat and simmer covered for about 40 minutes, until the lentils are tender. Check occasionally to be sure the liquid is still simmering. Remove from the heat and allow the lentils to sit covered for another 10 minutes. Add the vinegar, season to taste, and serve hot.

1 red bell pepper, julienned
1 tablespoon honey
1 teaspoon Italian seasoning
1 pound fresh mozzarella, cut into 3/4-inch cubes
1/4 cup olive oil
1 tablespoon lemon zest
Juice of 1 lemon
Kosher salt and coarsely ground black pepper

Steps:

  • Peel the tomatoes by first scoring them on the bottom with an "x" and then submerging them in boiling water for 15 seconds. Immediately plunge the tomatoes into a bowl of ice water. The skins will peel right off.
  • Quarter the tomatoes, then cut out the cores and remove the seeds. Add the tomatoes to a heavy medium pot, along with the red peppers, honey and Italian seasoning. Stir and cook over medium heat until the flavors have combined and the peppers and tomatoes have softened, about 10 minutes. Remove from the heat and allow to cool to room temperature¿the mixture can be frozen at this at this stage.
  • While the tomatoes cool, marinate the mozzarella. In a medium bowl, combine the mozzarella, olive oil, lemon zest and lemon juice.
  • When the tomato mixture is completely cooled, strain off and discard the excess juice, and then add the mixture to the marinated mozzarella. Season with salt and pepper to taste. Allow to marinate in the refrigerator for 1 hour. Garnish with basil before serving.

  • Bring a large pot of water to a boil and have a large bowl with ice water and a spider or strainer standing by. Also have a tray ready for when you remove the tomatoes from the ice bath.
  • A few at a time, drop the tomatoes into the boiling water. After a minute or so, you will see the skins pull away from the X. With the spider or strainer, remove to the ice bath and then to the waiting tray. Repeat for all tomatoes adding more ice as needed.
  • Place the tray of tomatoes on your counter and have a bowl with a strainer and a second bowl standing by. One at a time, pull the skin and place in strainer. Hold the tomatoes over the strainer as you seed them. For Roma, dig into the sides and scrape the seeds out, letting the seeds fall into the strainer. Pull the green inner stem and place with the seeds. Place the meat of the tomato into the other bowl. For the large tomatoes, after skinning, cut them in half on the horizon and reach in each half and scrape out the seeds letting them fall into the strainer. Pull the green hard inner stem out and place with the seeds. Place the meat in the bowl with the Roma’s.
