Steps:
- Bring chicken broth and pepper flakes to a boil in a large saucepan. Add collard greens; reduce heat to a simmer, and cover. Cook, stirring occasionally, until tender, 1 hour to 1 hour 15 minutes.
- Season with salt. Serve greens with liquid spooned over the top.

- Cook 4 slices chopped bacon in a large pot until crisp; drain on paper towels. Add 1 diced onion and 2 teaspoons Cajun seasoning to the pot with the drippings; cook, stirring, 5 minutes. Stir in 2 bunches chopped collard greens in batches. Add 4 cups each chicken broth and water and bring to a boil. Reduce the heat and simmer until the greens are tender, about 2 hours. Stir in the bacon. Add cider vinegar, hot sauce, salt and pepper to taste.

- In a 6-qt. stockpot, heat 1 tablespoon lard over medium heat. Add onion and garlic; cook and stir until tender. Add ham hocks, water, seasoned salt, pepper flakes, and sugar. Bring to a boil. - Cook bacon over medium heat in a 10-qt. stockpot for 10 to 12 minutes or until almost crisp.

- Heat 2 tablespoons water in a large skillet over medium heat. Cook and stir onion and garlic in water until onion is softened and translucent, about 10 minutes, adding more water as needed to prevent scorching. Stir vegetarian bouillon into onion mixture.
- Stir collard greens, tomatoes, and 1 1/4 cup water into onion mixture. Season with salt and pepper; cover and simmer until vegetables are tender, about 20 minutes. Stir in great Northern beans and sugar and continue to simmer until liquid evaporates, about 10 minutes more. Adjust seasoning as needed.

INDIAN-STYLE STEWED GREENS (SARSON KA SAAG)
Nearly every household in Northern India enjoys sarson ka saag regularly. It's got a ton of greens-packed with nutrition, antioxidants, and fiber-cooked in a single pot, and then flavored with onion fried in pure ghee.

- Prepare greens by separating the stems and leaves. Discard the larger stems. Roughly chop the remaining stems and leaves. Place chopped greens in a large bowl and fill with cold water. Swish greens with your hand. The dirt will sink to the bottom.
- Heat oil in a large saucepan over medium-heat. Add ginger and green chilis. Sauté 1-2 minutes until you see golden brown bits. Scoop out the prepared greens from the water, and add them to the saucepan along with 1 cup water and the salt. Turn heat to medium-low, cover, and steam for 30 minutes. The greens will become very soft.
- Meanwhile, in a separate small skillet on medium-low, heat ghee and add onion. Sauté until lightly browned (about 10-15 minutes). At the beginning, nothing much will happen, but as soon as the moisture evaporates it will brown quickly, and even burn. So be careful. You want it evenly and lightly browned. Turn off the heat and set aside until needed.
- After 30 minutes of simmering the greens, turn off the heat. Use an immersion blender to blend the greens right in the saucepan, or blend separately in a blender after cooling slightly. (If you use the blender method, be very careful and ensure that the steam has a way to escape so the lid doesn't blow off.) After blending, turn the heat back on low.
- Add prepared onion saute to greens, along with garam masala and fresh lime juice. Simmer until the oil rises to the surface (about 3-5 minutes). Taste, and adjust for salt. If you find it too bitter, add a teaspoon of raw sugar.

- Cook 1 sliced red onion in olive oil in a Dutch oven over medium heat until softened, 4 minutes. STEWED COLLARD GREENS
Some traditional Southern cooks swear you have to cook your collards all day long. This recipe has a great silky, tender texture and good bacony flavor, but you don't have to quit your day job to make it. Collards also pair well with Double Orange Pork Chops (page 24) and Down-Home Pinto Beans and Ham Hocks (page 127).

- Cook the bacon in a large saucepan over medium-high heat for 5 minutes, or until crisp. Add the onion and cook for 5 minutes more, or until the onion is tender.
- Add 2 cups of water and simmer for 10 minutes. Add the collards and simmer for about 20 minutes, or until very soft. Season with the salt and Tabasco and serve.

- In a large pot, heat the oil over medium heat and add the onions and garlic, cooking them for 5 minutes, stirring occasionally until softened.
- Add ginger, cinnamon,poppy seeds, mustard seeds, coriander, and cloves and cook, stirring frequently, for 2 minutes.
- Add potato to the mixture an stir to combine. Stir in 4 cups of water and turn heat up to high and bring to a boil, add the teaspoon of salt and stir well. Turn heat to low and simmer stew, uncovered, for 5 minutes, stirring occasionally.
