- Mix the cocoa and water in a saucepan over medium-low heat. Whisk in the stevia and agave nectar, if using. Cook until it's the consistency that you want, whisking the whole time. It can be anywhere between a thin syrup to a thick fudge-like consistency. Store in the fridge. If it thickens too much in the fridge just ad a teaspoon or 2 of water and mix in. At first it will seem like the sauce is breaking but it will come together with a few stirs.

STEVIA HOT CHOCOLATE
If you want to decrease your sugar intake and feel good about it, well this may be just what you need. I put in the desired amount of stevia for me, you may want to add a tad more, BUT, remember it is powerful so only a little pinch at a time for the desired sweetness, too much stevia will give you a bitter aftertaste. Now you will have to get used to not having a sickening sweet cocoa like a lot of mixes make, but you will have just the perfect cup of cocoa with all the sugar! Plus it really is good. If you want to, you can experiment, add a drop of peppermint essential oil, or a peppermint candy to your hot cup of cocoa. Since you are saving lots of sugar, you can splurge there! Sometimes I will put in a chocolate kiss and just let it melt in the hot cocoa! I hope you like it.

- If you are using a granular or other kind of dry Stevia sweetener, start by combining it with the unsweetened cocoa mix in your mug. Liquid forms of Stevia sweetener can be added later on.
- In a microwave, using a microwave-safe mug or bowl, warm your dairy (milk, half and half, etc). Or, you could warm this ingredient on a stove. Usually this will take 1- 1/2 minutes on high in the microwave but, this depends on your liquid, the microwave and your personal preferences for hot.
- Pour the heated liquid/dairy into your mug and stir it into the Unsweetened Cocoa Powder. Be sure to break up any chunks of cocoa. Stir in the remaining ingredients, the vanilla extract and if you are using liquid Stevia then the liquid Stevia.

- Gather the Ingredients. Supplies: 1. Jar you wish to store it in or gift. make sure it's clean *winks* 2. Jar decorations and labels 3. Large tape to seal the labels and directions from getting damp or mod podge.
