If you lived in Kansas City from the late 60's to mid 90's you have no doubt visited Stephenson's Old Apple Farm Restaurant. The restaurant has since closed, but I was able to purchase an Stephenson's Restaurants Receipts Old Family Secret Recipes which has most of the Restaurants Signature dishes. I am happy to be able to bring this recipe to you to enjoy!

2 tablespoons butter
1/4 cup flour
1/4 teaspoon salt
1 cup hot milk
1/2 cup grated swiss cheese
1/2 cup tomato sauce
6 slices ready-to eat ham (thin slices)
1/4 cup evaporated milk
1/2 cup grated swiss cheese
2 tablespoons butter

Steps:

  • Sauce: Melt butter over low heat. stir in flour, salt to make smooth paste. Remove from heat. Stir in milk gradually until smooth. Add cheese. Stir over low heat to melt. Cool.
  • Roulades: Pour tomato sauce into 10x6x2 inch baking pan. Roll about 2 spoonsful of cheese sauce into each ham slice and roll ham slice, Place folded side down on tomato sauce. Blend evaporated milk into rest of cheese sauce. Pour over ham. Sprinkle with the 1/2 cup grated swiss cheese. Dot with butter. Bake at 350 degrees about 15 minutes or until hot and bubbly.

1/2 cup chopped green onion
2 garlic cloves, minced
1/4 cup chopped celery
1/4 cup minced parsley
1 cup fresh breadcrumb
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup parmesan cheese
12 slices bottom round steaks (paper-thin slices) or 12 slices tenderloin (paper-thin slices)
1/2 cup olive oil
3 cups beef stock
1 1/2 cups dry red wine
1 bay leaf
1 (12 ounce) package spinach noodles

Steps:

  • Mix onions, garlic, celery, parsley, & bread crumbs.
  • Add salt, pepper, & Pamesan cheese.
  • Blend well.
  • Spread 1-2 tablespoons of filling on each slice of meat & sprinkle with olive oil.
  • Roll up & secure with toothpicks or string.
  • Brown rolls in small amount of olive oil.
  • Add stock, wine, & bay leaf.
  • Simmer for 30 minutes.
  • Remove meat & reduce liquid.
  • Serve rolls & sauce over noodles.
  • Garnish with parsley with desired.

GERMAN CHICKEN, HAM, AND CHEESE ROULADES



German Chicken, Ham, and Cheese Roulades image

A substantial and altogether winning appetizer. Flattened chicken breasts with thin slices of Westphalian or Black Forest ham, garlic and herbs rolled up and cooked in chicken stock and white wine. Chilled and sliced crosswise into rounds.

2 whole boneless skinless chicken breasts, halved (about 1 pound each)
4 slices Westphalian ham (thin slices) or 4 slices black forest ham (thin slices)
4 slices gruyere (thin slices) or 4 slices emmenthaler cheese (thin slices)
1 medium garlic clove, very finely chopped
1/4 teaspoon marjoram or 1/4 teaspoon sage
fresh ground white pepper
1/3 cup dry white wine
1/3 cup chicken broth
watercress or parsley sprig

Steps:

  • Place each chicken breast between sheets of plastic wrap and pound it lightly with the flat side of a cleaver or a wooden mallet until it is about 1/4 inch thick. Trim the slices of ham and cheese so that they are the same size as the flattened pieces of chicken. Place a slice of ham on each piece of chicken and cover the ham with a slice of cheese. Season with the finely chopped garlic, thyme, marjoram, or sage and white pepper. Roll up the pieces tightly and fasten with wooden picks, or tie securely with string.
  • Arrange the roulades in a greased baking sheet just large enough to hold them comfortably in one layer and pour the wine and broth over them. Cover with aluminum foil. Bake in a preheated 350°F oven 35 to 40 minutes or until the chicken is tender.
  • Transfer the roulades to a platter and cool to room temperature, then cover and chill. Remove the wooden picks or string. Slice the roulades crosswise into rounds and arrange on a chilled serving platter. Garnish with watercress or parsley sprigs and serve. Makes about 20.
  • VARIATION: In a medium sized, heavy skillet melt 2 Tablespoons Clarified Butter, or heat a mixture of 1 tablespoon each butter and flavorless vegetable oil or olive oil over moderate. Add the roulades and sauté, turning to brown lightly on all sides. Add the wine and chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer about 30 minutes or until the chicken is tender. Cool, chill, slice, and serve as directed above.

These tasty little appetizers are a hit at gatherings. I usually make 1/2 of these without the horseradish when kids will be around. Plan ahead, as these need to chill. Time does not include chill time.

6 ounces cream cheese, room temperature
1 1/2 teaspoons horseradish
2 teaspoons heavy cream
6 slices boiled ham, sliced thin

Steps:

  • Combine cheese, horseradish, cream, and beat until smooth.
  • Spread over slices of ham.
  • Roll up ham jelly-roll style, starting at narrow end.
  • Wrap each roll in waxed paper and chill several hours or overnight.
  • Cut into 1/2-inch slices.
  • Serve with toothpicks.

PECAN PRALINES BY MICROWAVE

Here's a recipe I adapted from a stove-top recipe in a church women's collection back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. Check out the companion recipe for Peanut Patties. These candies make great gifts----I can make up a batch in less time than it takes me to "run" to the store.

1/4 cup water
1/4 cup light corn syrup
1 cup white sugar
1 cup dark brown sugar
1/8 teaspoon salt (dash)
1 teaspoon oleo
1 teaspoon vanilla
2 cups pecans (halves and or or pieces)
1/4 cup powdered sugar (apx.)

Steps:

  • Put 1st six items in large glass bowl. Cover.
  • Cook on High 4 minute ( 5 ).
  • Stir. Cook on High 4 minute (6 ).
  • Add vanilla and pecans.
  • Stir, then cook on High 2min. (5).
  • Stir in powdered sugar.
  • Drop by teaspoonfuls onto waxed paper over newsprint. If candy gets too thick, reheat 20-30 secs.
  • Add more nuts at the end if you run out of nuts before candy, (but these don't taste as good as the cooked nuts.).
  • You can also drizzle the extra candy at the end over the first pralines which don't have as much because it was too hot at first.
  • It's the powdered sugar that makes the syrup crystalize as it cools.
  • You can cook on stove---get syrup to softball stage -234*; stir constantly.

If you lived in Kansas City, Mo from the late 60's to mid 90's to probably had gone to Stephenson's Restaurants the original being at 40 Highway and Lee's Summit Road. They have long since been closed, however I was able to purchase a recipe book called Stephenson's Restaurants Receipts Old Family Secret Recipes that have some of the original restaurants popular dishes. The Apple Fritters were a signature dish,. This is a wonderful recipe and I am glad I was able to share it again with those who remember it.

Number Of Ingredients 11

1 cup milk
1 egg (beaten)
4 tablespoons margarine
1/2 cup sugar
1/2 teaspoon salt
1 orange, juice and zest of
1 cup apple (chopped fine)
3 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
4 cups vegetable oil, to fry fritters enough they float in a pot

Steps:

  • Beat egg, In a mixing bowl combine the milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on ) and vanilla. Sift together the flour, salt, baking powder and stir into milk mixture with a spoon until blended. Do not over mix. Preheat oil in a skillet to 350 degrees. drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly. Allow to cool. Roll in powdered sugar. Serve with salads or eat as dessert.
