1 teaspoon vanilla extract

1 large apple (peeled and cut into small pieces)
1 cup unsweetened apple sauce ((stir in after cooking if using Instant Pot))
1/3 cup chopped pecans ((to top))
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon vanilla extract
1 cup pumpkin puree ((stir in after cooking if using Instant Pot))
2 tablespoons pumpkin seeds/pepitas ((to top))
zest from 1 lemon ((add after cooking base recipe))
1-2 cups blueberries ((add after cooking base recipe))
chia seeds ((add after cooking base recipe))
1 tablespoon cocoa powder
2 tablespoons peanut butter ((stir in after cooking base recipe))
1-2 cups berries ((to top))
chia seeds ((add after cooking base recipe))
1 teaspoon coconut extract ((omit cinnamon from base recipe))
1 tablespoon key lime zest ((stir in after cooking base recipe))

1-2 cups chopped fresh strawberries ((to top))

Steps:

  • (Optional but adds extra flavor). Select the 'sauté' function on the Instant Pot. Add the butter and melt. Add the steel cut oats and sauté, stirring occasionally for 5 or so minutes, until fragrant and golden.
  • Add the water, vanilla and cinnamon (and other ingredients as needed for flavor variations)
  • Cook on high pressure for 2 minutes, followed by natural pressure release (let the Instant Pot sit for 20 minutes up to 120 minutes).
  • Remove lid and stir in maple syrup and any other ingredients for the flavor variations.
  • (Optional but adds extra flavor). Heat a pan over medium heat. Add the butter and melt. Add the steel cut oats and sauté, stirring occasionally for 5 or so minutes, until fragrant and golden.
  • Spray the inside of your slow cooker with cooking spray or use a slow cooker liner. Transfer steel cut oats and add the water, vanilla and cinnamon (and other ingredients as needed for flavor variations)
  • Cover and cook on low for 6-8 hours.
  • Stir in maple syrup and any other ingredients for the flavor variations.
  • Heat a 4 quart pot over medium heat. Add the butter and melt. Add the steel cut oats and sauté, stirring occasionally for 5 or so minutes, until fragrant and golden.
  • Add the water, vanilla and cinnamon (and other ingredients as needed for flavor variations).
  • Reduce heat and simmer, stirring occasionally, for 25-35 minutes.
  • Remove from heat and stir in maple syrup and any other ingredients for the flavor variations.

Steps:

  • Bring water and salt to a boil in a saucepan. Stir oats into boiling water.
  • Cook oats until thick and soft, 20 to 30 minutes.

1 cup steel-cut oats
1 cup milk
1 egg
3 tablespoons vegetable oil
2 tablespoons pureed prunes
1 cup wheat flour, sifted
¼ cup white sugar
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with foil liners. Spray liners with cooking spray.
  • Place oats into a bowl and add milk. Let stand 10 minutes.
  • Mix egg, oil, and prunes together in a bowl. Add oat mixture and stir to combine.
  • Combine flour, sugar, baking powder, and salt in a bowl and mix well. Pour flour mixture into oat mixture and stir batter gently until just blended.
  • Spoon batter into the prepared muffin cups, filling each 2/3 full.

2 tablespoons canola oil (or melted, cooled unsalted butter or melted, cooled coconut oil)
3/4 cup nonfat plain Greek yogurt
1/2 cup nonfat milk
2 cups old-fashioned oats (, divided (or quick oats; do not use steel cut or instant))
2 large eggs
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup mix-ins of choice: toasted chopped nuts (, chocolate chips, blueberries, or diced fresh or dried fruit (optional))
For serving: pure maple syrup (, butter, or any of your favorite pancake toppings)

Steps:

  • If you'd like to keep the pancakes warm between batches, place a rack in the center of your oven and preheat the oven to 200 degrees F.
  • Place the oil, Greek yogurt, milk, 1 1/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt in a blender.
  • Blend until the batter is smooth, stopping to scrape down the sides of the blender as needed. Continue blending until you don't see any remaining bits of oats.
  • Stop the blender, stirring the remaining 3/4 cup oats and any desired mix-ins. Do not blend again. Let the batter sit for 10 minutes while you heat the skillet/griddle and prep any toppings.
  • Heat a large nonstick skillet or griddle over medium-low heat. Lightly butter or oil the pan if needed (some nonstick pans do not need this).
  • Once the skillet is hot, drop the batter by 1/4 cupful into the pan. Let cook gently for 3 to 4 minutes on the first side, until the pancakes look dry at the edges and small bubbles form on top.
  • Gently flip, then cook on the other side for 1 to 2 minutes. They should look golden on both sides. If desired, transfer the pancakes to a baking sheet and keep them warm in the oven between batches. Repeat with the remaining batter.
  • Serve hot with desired toppings.

1/8 c sugar

  • 1. Combine the dry ingredients in a large bowl
  • 2. Combine the wet ingredients in a small bowl
  • 3. Mix the wet ingredients into the dry ingredients.
  • 4. Pour 1/4 cup batter onto a greased griddle and cook till golden brown on each side

I just recently started eating Coach's 'steel-cut, cracked and toasted' Oats and it's got me hooked. It's nutty and full of flavor. This is from the back of their package...slightly modified. I use butter for greasing ... I know, but I love the flavor of butter! Please note that I'm not sure how this will work with regular oatmeal. Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach's brand for this recipe.
