1 cup steel-cut oats (such as Bob's Red Mill Steel-Cut Oats)
1 cup milk
2 cups water
1/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
2 teaspoons honey
Desired toppings (such as fresh fruit, sliced almonds, chia seeds, or your favorite nut butter)

Steps:

  • Combine oats, milk, water, salt, and cinnamon in a medium saucepan. Bring to a boil, then reduce heat to low.
  • Simmer uncovered for 15 to 20 minutes until desired thickness, stirring occasionally. Remove from heat and let cool slightly.
  • Divide equally between four bowls. Drizzle each serving with 1/2 teaspoon honey. Add additional desired toppings and serve.

2/3 cup natural creamy almond butter slightly heated
1/3 cup liquid honey
1 2/3 cups old-fashioned rolled oats gluten free as needed - I use Bob's Red Mill
1/4 cup ground flaxseeds
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1/3 cup raisins

Steps:

  • In a large bowl, mix together heated nut butter and honey until smooth.
  • Stir in the oats, flaxseeds, cinnamon, salt, vanilla and raisins until well combined.
  • Wet hands slightly and form dough tightly into 1" - 1.5" balls. If dough doesn't stick together add 1/2 tablespoon water (or melted coconut oil) at a time until dough comes together or place dough in the fridge for 30 minutes prior to forming dough balls so it's easier to handle.
  • Store in airtight container in refrigerator or freezer until ready to enjoy.

1 cup steel-cut oats
½ cup milk
½ cup cashews
¼ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
2 tablespoons flaked coconut
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 pinch white sugar, or to taste

Steps:

  • Bring water and salt to a boil in a saucepan. Stir oats into boiling water.
  • Cook oats until thick and soft, 20 to 30 minutes.
  • Stir milk, cashews, cranberries, coconut, vanilla extract, and cinnamon into cooked oats; continue cooking 10 minutes more, stirring frequently.
  • Sprinkle sugar over the oats to serve.

Steps:

  • Add the nut butter and honey and stir to combine well. Add the all of the other ingredients and stir to combine well.
  • Refrigerate the mixture for about 30 minutes.
  • Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 oatmeal energy balls.
  • Store the balls covered in the fridge for up to a week, or in the freezer for much longer.
  • In a medium bowl, add the peeled banana and mash thoroughly with a fork.
  • Add the dry oats and chocolate chips and stir to combine.
  • Refrigerate until the mixture holds together, about 30 minutes.
  • Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 oatmeal energy balls.
  • Store the balls covered in the fridge for up to a week, or in the freezer for much longer.
