Steps:
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- Sift together the flour, baking soda, salt and cinnamon. A wire whisk does well for that.
- In the bowl of a stand mixer (or a large mixing bowl), combine the butter, sugar, brown sugar, eggs and vanilla. Beat until smooth. Then, with the mixer running on low, slowly add the flour mixture, until just combined. Turn off the machine when you are down with these additions. Add the steel cut oats and butterscotch chips. Mix gently (on a low speed) to incorporate.
- Using a cookie scoop, drop the cookies about two inches apart on the cookie sheet. Bake for 10-12 minutes, until lightly browned. Let cool for a few minutes before transferring to a wire rack. Cool completely before storing.
- These can be stored in an airtight container for up to a week.

WHOLE GRAIN 'STEEL-CUT' OATMEAL COOKIES
I just recently started eating Coach's 'steel-cut, cracked and toasted' Oats and it's got me hooked. It's nutty and full of flavor. The original recipe from the package the brown sugar is packed and the table salt is regular salt. Please note that I'm not sure how this will work with regular oatmeal. The number of cookies will depend on the size you make them. Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach's brand for this recipe.

Steps:
- In a large saucepan, combine the water and milk. Bring the mixture to a simmer over medium heat. In the meantime, melt the coconut oil (or butter) in a 12-inch skillet over medium heat. Once shimmering, add the oats and cook, stirring occasionally, until golden and fragrant, around 2 minutes. This toasting step greatly enhances the flavor of the oats.
- Stir the oats into the simmering liquid. Reduce the heat to medium-low, adjusting as necessary to maintain a gentle simmer. Cook for about 20 minutes, stirring occasionally, until the mixture is very thick.
- Stir in the salt. Continue to simmer the mixture, stirring occasionally and reducing heat as necessary to prevent scorching on the bottom, until almost all of the liquid is absorbed, about 10 minutes. (If you doubled the recipe, your oatmeal might need an extra 5 minutes cooking time here.) The oatmeal will be very creamy when it's done.
- Remove from heat and stir in any mix-ins that you'd like. Let the oatmeal rest for 5 minutes before serving so it has more time to thicken up and cool down a palatable temperature.
- Portion oatmeal into bowls and add any toppings you'd like to portions that you intend to serve immediately. Let any extra oatmeal cool completely before covering and refrigerating for future breakfasts.

THE ONLY BASIC STEEL-CUT OATS RECIPE YOU'LL EVER NEED
Our foolproof, basic steel-cut oatmeal recipe is the perfect building block for an ultra-nutritious breakfast. Memorize the ratio-3 parts liquid to 1 part oats-then customize your bowl with a delicious array of fresh toppings. Cinnamon and honey keep things sweet and simple, but there's plenty of space to spice up your bowl with exotic combos-try cardamom, nutmeg, cloves, or ginger. And yes, steel-cut oats take longer to cook than other types of oats, but their toothsome texture and nutty flavor make them well-worth the effort. Best of all, they reheat beautifully, so you can easily cook up a big batch ahead of time. For a richer, nuttier flavor, try toasting your oats in the pan first. Keep the heat at medium-low and stir constantly to prevent burning. Short on time? Our basic oatmeal recipe is your go-to healthy breakfast for busy mornings.

- In a medium Dutch oven or large saucepan (around 3.5 quarts), melt the butter over medium heat (if you’re not using butter, just warm the pan). Add the steel-cut oats and cook until fragrant, stirring often, about 2 minutes (this step enhances the flavor of the oats).
- Add the apple chunks, water and salt. Stir to combine, and raise the heat to high to bring the mixture to a simmer. Once simmering, reduce heat to medium-low and cook for about 35 minutes, until almost all of the liquid has been absorbed and the oats are nice and creamy. Stir every five minutes in the beginning, and more frequently as time goes on (you might need to dial down the heat as well).
- Remove from heat and let the oatmeal rest for 5 minutes before serving so it has more time to thicken up. Carefully taste (it’s hot!) and add maple syrup or honey if you’d like sweeter oatmeal (I used tart apples, so I added 1 tablespoon).
- Divide the mixture into individual bowls and serve with any toppings you’d like. If you’re saving extra portions for later, let them cool to room temperature, then cover and refrigerate for up to 4 days. Leftovers reheat well in the microwave, and would likely reheat well on the stove if you add some extra water to loosen them up.
