A steamed basin sponge hits the spot every time and uses up half-full jars of marmalade, syrup or jam - serve hot with custard!

custard , to serve (optional)
4 tbsp jam (we used strawberry), marmalade, curd, golden syrup or chopped stem ginger (or 200g/7oz canned fruit, drained and roughly chopped)
175g/ 6oz butter , softened
175g/ 6oz caster sugar
3 eggs
175g/ 6oz self-raising flour
1 tbsp milk
1 tsp vanilla extract

Steps:

  • Generously grease a 1.2-litre pudding basin and put your chosen topping in the base. Boil a kettle of water. To prepare your steamer, put a snugly fitting upturned bowl in the base of a large, deep saucepan, big enough to hold the pudding.
  • Put the ingredients for the sponge in a food processor and blend until smooth (but don't overwork the mix), then tip into the pudding basin. Cover with a lid made of baking parchment and foil, and tie with string to secure (see step-by-step). Stand the pudding on the upturned bowl in your saucepan. Pour in enough hot water to come halfway up the side of the pudding basin. Set over a medium heat and bring to the boil. Cover the pan with a tight-fitting lid, lower the heat to a gentle simmer and leave to steam for 2½ hrs, topping up with boiling water if the level gets too low.
  • Check the pudding is cooked by inserting a skewer through the foil and parchment lid into the centre of the pudding. If the skewer still has some wet mixture on it, return the pudding to the steamer for a further 15-20 mins, then check again. Once cooked, uncover and turn the pudding onto a plate. Serve straight away with custard, if you like.

This is an old family recipe that originates from Yorkshire England -- you can try substituting maple syrup or jam for the golden syrup.

½ cup margarine
½ cup white sugar
2 eggs, beaten
¼ teaspoon vanilla extract
1 ⅜ cups self-rising flour
2 tablespoons milk
4 tablespoons golden syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a two pint heat proof bowl or basin.
  • In large bowl, cream together margarine and sugar. Add, a little at a time, beaten eggs, vanilla and flour, until well mixed. Fold in milk to make a smooth consistency.
  • Pour syrup in bottom of prepared basin and layer batter over the top. Cover basin with firmly tied parchment paper covered with foil. Line a roasting pan with a damp kitchen towel. Place basin on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the basin.
  • Steam in the oven for 1 to 1 1/2 hours, or until pudding springs back when touched. Invert onto serving plate and serve warm.

A syrupy basin pudding with a moist sponge and sticky sauce- a Great British tradition with retro charm

175g unsalted butter, softened, plus extra for greasing
3 tbsp golden syrup, plus extra for drizzling
1 tbsp fresh white breadcrumbs
splash brandy (optional but delicious)
175g golden caster sugar
zest 1 lemon
3 large eggs, beaten
175g self-raising flour
2 tbsp milk
clotted cream, to serve

Steps:

  • Use a small knob of butter to heavily grease a 1-litre pudding basin. In a small bowl, mix the golden syrup with the breadcrumbs and brandy, if using, then tip into the pudding basin.
  • Beat butter with sugar and zest until light and fluffy, then add eggs gradually. Fold in the flour, then finally add the milk.
  • Spoon the mix into the pudding basin. Cover with a double layer of buttered foil and baking paper, making a pleat in the centre to allow the pudding to rise. Tie the foil securely with string, then place in a steamer or large pan containing enough gently simmering water to come halfway up the sides of the basin. Steam for 1½ hrs. Turn out onto a serving dish. Serve with lashings of clotted cream and a little extra golden syrup drizzled over if you wish.

If the winter weather is getting you down or you're feeling grey or sad, I'm certain a steamed treacle sponge will put you right in no time at all. It takes moments to prepare, will steam away happily all by itself without needing attention, and is the ultimate in comfort foods.

1 tablespoon black treacle
3 tablespoons golden syrup
6 oz (175 g) self-raising flour
1 rounded teaspoon baking powder
6 oz (175 g) butter, softened
3 large eggs
6 oz (175 g) soft light brown sugar
3 extra tablespoons golden syrup
custard or crème fraîche

Steps:

  • First of all butter the basin, then measure 3 tablespoons of golden syrup into it. Then take a large mixing bowl, sift the flour and baking powder into it, add the softened butter, eggs, sugar and black treacle. Next, using an electric hand whisk (or a large fork and lots of elbow grease), beat the mixture for about 2 minutes until it's thoroughly blended. Now spoon the mixture into the basin and level the top using the back of the tablespoon. Place the sheet of foil over the greaseproof paper, make a pleat in the centre, and place this, foil-side uppermost, on top of the pudding. Pull it down the sides and tie the string, taking the string over the top and tying it on the other side to make yourself a handle for lifting. Trim off the excess paper all the way round. Now steam the pudding for 2 hours, checking the water level halfway through. To serve, loosen the pudding all round using a palette knife, invert it on to a warmed plate, and pour an extra 3 tablespoons of syrup (warmed if you like) over the top before taking it to the table. Serve with Proper Custard (see our Cookery School Video), or some well chilled crème fraîche.

A fantastic, syrupy microwave sponge pudding, great for when you need a quick fix dessert.

  • In a microwavable bowl, put the jam or syrup so that it covers the bottom. This will be the top of your cake.
  • Here it is best to use a food processor, although if you want to you can do it by hand. Put all of the remaining basic ingredients into a bowl (or the mixer) with one of the flavour ingredients. If you want to, you can keep it plain.
  • Mix or blend all of the ingredients together until smooth.
  • Put in bowl on top of jam/syrup and microwave without a lid on full for 5 mins. Leave for 1-2 mins to stand.

  • You will need a 1.2 litre pudding basin, a large saucepan with a lid, a saucer, baking parchment, tin foil and string (unless your pudding basin has it’s own lid).
  • Start by thoroughly greasing a 1.2 litre pudding basin. Place a disc of baking parchment in the bottom to prevent the top of the pudding from sticking. Pour 3 Tbsp of the maple syrup into the greased basin and set aside.
  • Pop the kettle on. Cut a large square of baking parchment and another of tin foil. Make a pleat in the centre of each square. The pleat gives the pudding room to rise. (If you have a pudding basin with a lid you can skip this step.)
