GARLIC MASHED CAULIFLOWER
This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

Steps:
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
- Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
- Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.

STEAMED MASHED CAULIFLOWER
Steamed head of cauliflower without butter, milk, extra calories, or carbs. Very light, very tasty. My 12-year-old child is very picky, but absolutely loves my faux mashed potatoes as they are very similar in texture and taste to the real thing. As an extra we've even added roasted garlic cloves. Heavenly!

- Place cauliflower florets in a large microwave-safe bowl with enough water to just cover the bottom of the bowl.
- Cover bowl loosely with waxed paper or a paper towel and steam cauliflower in microwave on high until tender, 4 to 5 minutes; drain.
- Place drained cauliflower in a food processor with goat cheese and puree until completely smooth; season with black pepper.

- Set a steamer basket in a large saucepan with a lid. Fill with enough salted water to come just below basket; bring to a boil. Add 1 head cauliflower (about 2 pounds), cored and cut into small florets. Reduce to a simmer, and cover; cook until tender, 10 to 15 minutes.

- Remove and discard any outer leaves on the cauliflower. Halve through the stem and cut out and remove the inner core. Break the cauliflower into florets.
- Pour about an inch of water into a skillet or wok and bring to a boil over medium-high heat. Put the cauliflower florets in a steamer basket and season with salt. Set the steamer basket over the boiling water and cook until tender, 4 to 8 minutes depending on the size of the florets. Transfer the cauliflower to a plate, sprinkle with black pepper and serve.

- Wash the head of cauliflower. Then remove the leaves and the hard stem and break or cut it into florets.
- Add a steamer insert to a large soup pot. Then add 2 cups of water, cover, and bring the water to a boil over high heat. Add the cauliflower and steam until fork tender (13-15 for 1-2 heads, or 17 minutes if you are using 3 heads).
- Remove the cauliflower from the pot and let it cool enough to handle. You can discard any of the steaming liquid that is left.
- Add the steamed cauliflower florets to a thin cotton kitchen towel and give it 5 good squeezes to remove some of the liquid. This will make the texture more like real mashed potatoes.
