STEAMED CRANBERRY PUDDING



Steamed Cranberry Pudding image

Easy to make, and delicious to eat using just a few ingredients. This steamed pudding is traditional at Christmas - served with Hard Sauce.

2 teaspoons baking soda
½ cup hot water
1 tablespoon white sugar
½ cup molasses
2 cups whole cranberries
1 ½ cups all-purpose flour
½ cup unsalted butter
½ cup heavy cream
1 cup white sugar
1 teaspoon vanilla

Steps:

  • Dissolve the baking soda in the hot water. Stir in 1 tablespoon of sugar and molasses, then mix in the cranberries and flour. Pour into a greased 6 cup steamer mold.
  • Cover the mold, and place into a steamer basket over boiling water. Cover the steaming pot. Cook over medium heat for one hour before checking, but it will take about 1 1/2 hours total. A toothpick inserted into the pudding should come out clean. Loosen the edges, and cool on a wire rack in the mold.
  • Make the hard sauce just before serving: Heat the unsalted butter, cream, 1 cup sugar and vanilla in a small saucepan over medium heat. Cook stirring constantly until heated through and smooth.

1 ½ cups self-rising flour
1 cup white sugar
1 teaspoon ground cinnamon
2 eggs, beaten
¼ cup melted butter
½ cup prepared mincemeat pie filling
½ cup whole cranberry sauce
½ cup pumpkin puree
1 (8 ounce) container sour cream
1 (8 ounce) package cream cheese
⅓ cup confectioners' sugar

Steps:

  • Grease one 2-quart lidded pudding mold. Sift together the flour, sugar and cinnamon; set aside.
  • In a large bowl, mix together the eggs, butter, mincemeat, cranberry sauce and pumpkin. Add to flour mixture and mix until smooth; pour into pudding mold.
  • Place a rack in the bottom of a large pot, over medium heat, and fill 1/2 way up with boiling water. Place the pudding on the rack. Steam for 2 1/2 hours.
  • Check the pan occasionally and add more water if needed. Check for doneness by inserting a toothpick in the center. When firm, place the pudding mold on a rack outside of the water for 10 minutes and unmold.
  • Prepare a sauce by blending together the sour cream, cream cheese and confectioners sugar. Spoon dollops over warm pudding and serve.

1 1/2 cups water
1 cup brown sugar
3 Tablespoons butter
1 teaspoon vanilla
1 cup sugar
1 cup flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
1 cup chopped dates (seeds removed)
1/2 cup milk
1/2 cup chopped nuts (optional)

Steps:

  • Spray a 9 x 5 inch pan (bread pan) with nonstick cooking spray. Preheat oven to 300 degrees F.
  • For the sauce, boil together water, brown sugar and butter for 3 minutes in a small saucepan; add vanilla and take off heat to slightly cool while putting together pudding.
  • In a mixing bowl, combine sugar, flour, baking powder, and salt; add milk, chopped dates and vanilla. Mix together until a thick, sticky batter forms.
  • Spread pudding cake mixture into prepared bread pan; pour sauce over batter.
  • Bake for approximately 1 hour. If the center still looks wet after an hour, continue to cook 5 to 10 minutes until the center is set. The cake will be sticky, and the sauce layer will move to the bottom.
  • Serve warm or cold, topped with the sauce from the bottom of the pan. Dollop with whipped cream if desired.

1 c dates, chopped
1/2 c butter, softened
1 c sugar
1 tsp vanilla extract
1 c grated raw carrots
1 c grated raw potatoes
1 1/4 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 c almonds, slivered

Steps:

  • 1. Grease a 2qrt pudding mold or any bowl that will fit in a bigger pot to steam it.
  • 2. Sift flour, salt, and baking soda.
  • 3. Cream butter, sugar and vanilla. Add raw veggie along with dates and nuts till just blended. Add dry flour mix and blend till incorporated.
  • 4. Turn into greased mold and cover with plastic wrap. put mold in bigger pot. The water should come up half way in the sides. Cover with lid and cook on med/low for 3 hours. Serve warm with sauce of your choice. I like Almond Cream Sauce.

1/2 c sugar
1/2 tsp salt
3 Tbsp corn starch
2 c milk, you can use cream if you want it richer
2 eggs
2 Tbsp butter
1 tsp almond extract
1 c whipped cream, unsweetened

Steps:

  • 1. Mix sugar, salt and cornstarch in a sauce pan and mix thoroughly. Gradually stir in milk and blend till smooth.
  • 2. Set over med. heat stirring constantly until it bubbles. Remove from heat
  • 3. In a separate bowl whisk eggs and then gradually add hot mix in, whisking while you do it to prevent the eggs from scrambling. Put the mixture back on the heat till it bubbles once again. Remove and add Almond extract and butter. Stir just till the butter in melted and combined.
  • 4. Place plastic wrap directly on the sauce to prevent a skin forming. Place in fridge till cold.
  • 5. When your ready to serve. Whip the whipping cream till stiff (don't add sugar, the sauce will have enough sweetness) fold the whip cream into the almond cream and server over Warm Date Pudding
  • 6. You can use this for any cake or tarts, ect. Enjoy

PUDDING:
1/2 cup light molasses
1/2 cup hot water
2 teaspoons baking soda
1-1/2 cups all-purpose flour
2 cups fresh or frozen cranberries
1/2 teaspoon salt
SAUCE:
1 cup sugar
1 teaspoon cornstarch
Dash salt
1 cup heavy whipping cream
1/2 cup butter, cubed
1 teaspoon vanilla extract

Steps:

  • In a bowl, combine all pudding ingredients in order given. Pour into a well-greased 4-cup pudding mold. Place in a stockpot on a rack. Fill stockpot with boiling water to 1-in. depth; cover stockpot and boil gently. Replace water as needed. Steam about 1 hour or until pudding tests done. Let stand 5 minutes before unmolding. , Meanwhile, for sauce, combine sugar, cornstarch and salt in a saucepan. Add cream and butter. Cook and stir over medium heat until mixture begins to boil. Boil for about 1 minute. Remove from heat and stir in vanilla. Serve pudding and sauce warm.

2/3 cup sugar
2 eggs
2 tablespoons molasses
1-2/3 cups all-purpose flour
3/4 teaspoon baking soda

2-1/2 cups chopped fresh or frozen cranberries
HARD SAUCE:
1 cup sugar
1/2 cup butter,cubed
1/2 cup half-and-half cream

Steps:

  • In a bowl, cream shortening and sugar; beat in eggs and molasses. Combine dry ingredients; stir into creamed mixture and mix well. Fold in the cranberries. Pour into a well-greased and floured 6-cup heat-proof mold. Cover tightly with a double layer of foil. Place on a rack in a stockpot. Fill stockpot with boiling water to a depth of 1 in.; cover stockpot and boil gently. Replace water as needed. , Steam about 3 hours or until a toothpick inserted in the center comes out clean. Let stand 10 minutes before unmolding. Let pudding cool 30 minutes before slicing. , For hard sauce, combine sugar, butter and cream in a saucepan; cook and stir over medium heat until smooth. Remove from the heat; stir in vanilla. Serve pudding and sauce warm.

  • Grease a ceramic bowl with butter and sprinkle with the extra tablespoon of sugar and a tablespoon of the reserved syrup. Pile half the drained apricots in the bottom of the bowl, and cut the rest into a large dice. Set aside while you make the batter.
  • Put the softened butter, sugar, eggs and orange water into a large mixing bowl. Sift the whole wheat flour, almond flour, salt and baking powder over it. Beat together with an electric whisk until well blended. If the mixture seems stiff, add a tablespoon of milk or a little of the reserved apricot syrup to bring it to dropping consistency, where a small amount of the batter will fall off a spoon if gently shaken. Gently fold in half the diced apricots. Pile the batter gently into the bowl covering the apricots. Lightly smooth the top with a spatula.
  • Tear off a piece of parchment paper larger than the rim of the bowl. Fold a double pleat in the center and place the paper over the top of the bowl, folding the edges under the rim. Secure the paper by tying twine tightly around the bowl.
  • Set the bowl on a trivet or coaster inside a large saucepan. Pour enough boiling water into the saucepan to come up to about ⅓ of the bowl. Bring to a boil. Turn the heat down, cover with a lid and simmer for 1 hour. Check from time to time that there is still enough water in the pan.Always add boiling water during steaming to keep the heat up, never cold.
