Steps:
- With hands, mix all ingredients. (Other seasonings that might also be good: 1/4 t white or red pepper, chopped green onions.).
- Press into shallow, heat-proof bowl (pasta bowl or something similar--glass, ceramic, or metal).
- Steam 20 minutes until done and serve as part of a Chinese meal: rice, a soup, and a balanced variety of dishes--one per person.

STEAMED TAIWANESE MEATLOAF
Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether.

Steps:
- Stir soy sauce, water, garlic, sugar, tofu and meat together in ceramic bowl
- HINT: 8 ounces tofu is half a regular pack you'd buy at the store.
- Meanwhile, back at the ranch, boil water in a steamer.
- Chop up your green onion and stir it into the mix.
- Put bowl into steamer for 20 minutes over medium heat. Serve hot over rice.

- Chop the ground pork finely with knife or cleaver and transfer to a bowl. Add sesame oil, salt, white pepper, baking soda, Shaoxing wine, water, cornstarch, grated ginger, minced scallion, and water chestnuts (if using) to the meat. Use a fork and mix everything together vigorously until the pork mixture becomes sticky and smooth––almost like a paste. Set aside to marinate for 1 hour.
- Transfer the meat to a deep dish plate, forming a kind of thin patty. You must use a deep dish because liquid will pool in the bowl (it's almost like a thin broth or sauce, and it's great over rice!).
- Distribute the slices of salted fish on top of the meat. If you put a lot of fish on top, then you may want to eliminate or reduce the salt from the ground meat in the previous step. If you put only a few slices of salted fish, then the fish will likely provide enough salt for the dish. It’s definitely about personal preferences when it comes to how salty you like it!
- Spread the julienned ginger across the top of the meat and salted fish and then sprinkle the chopped scallion evenly over the top. Steam for 10 minutes starting with a pre-heated steamer. You'll see quite a bit of liquid in the plate after cooking. Turn off the heat and let the dish rest for 2 to 3 minutes. Some of that tasty liquid will be reabsorbed into the meat. Spoon the sauce over the top of your pork before servings and enjoy!

- Season minced pork with light soy sauce, sesame oil, corn flour, salt and pepper. Use your fingers or a spoon to mix well. Note: Use salt sparingly, if at all, as there is already hidden salt in salted radish or salted fish, and in preserved cabbage.
- Add all minced ingredients and mix with fingers or a spoon till well combined. Add egg yolk and mix well. The pork should come together in a slightly sticky, mushy paste.
- In a heatproof dish, spoon 1/2 tbsp of the shallot oil (or garlic oil) and spread over the base of the dish. Spoon half of the pork mixture into the dish and using the back of a spoon, flatten and shape into a patty to fill the base of the dish. Leave at least a 2-cm gap from the edge of the dish, as the patty will release juices as it is steamed. Drizzle another 1/2 tbsp of shallot oil (or garlic oil) over the patty.
- Fill a wok 1/4 full with water, place a steaming rack in the wok, cover with wok lid, and heat over high heat. Once water is boiling, place the heatproof dish on the steaming rack. Steam, covered, for 10 to 12 minutes, or until meat has cooked through. Test by poking a fork into the meat.
