GARLIC SAUTEED CAULIFLOWER



Garlic Sauteed Cauliflower image

Although I can't say cauliflower is one of my favorite vegetables, I do love it prepared this way. Recipe is adapted from "A Taste of The Hill from St Louis".

1 head cauliflower, cut into florets
1/4 cup extra virgin olive oil (you can probably use less)
4 garlic cloves, minced
crushed red chili pepper, to taste
salt

Steps:

  • Cook cauliflower in a large pot of salted, boiling water until barely crisp-tender; drain well.
  • In a large skillet over medium heat, warm the oil. Saute' the garlic and desired amount of red chile pepper until the garlic just begins to brown (being careful to not let it burn!).
  • Add the cauliflower and cook a few minutes, stirring, until completely coated in oil.
  • Sprinkle with kosher salt to taste and serve.

My 12-year-old child is very picky, but absolutely loves my faux mashed potatoes as they are very similar in texture and taste to the real thing. As an extra we've even added roasted garlic cloves.   • Place drained cauliflower in a food processor with goat cheese and puree until completely smooth; season with black pepper.

1/4 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Heat water, celery, lemon, and garlic together in a saucepan. Place cauliflower in a steamer basket and set over water. Steam cauliflower for 5 to 7 minutes or until fork tender.
  • Meanwhile, combine all dressing ingredients in a small bowl. Season, to taste, with salt and pepper.
  • Transfer cauliflower to a large bowl and toss with dressing. Serve warm.

Steps:

  • Bring one to two inches of water to a boil in a large saucepan fitted with a steamer basket over high heat. Add cauliflower to the steamer basket, cover the saucepan, and steam until the cauliflower is tender, 4 to 5 minutes.
  • Remove the steamer basket from the saucepan, and pour out the water. Empty the cauliflower out of the steamer basket back into the pot. Drizzle on oil, and sprinkle with salt and pepper. Toss to coat. Add herbs and toss to coat. Serve immediately.

1 cauliflower head, about 2 pounds
2 tablespoons butter
1 small lemon (juice and zest)
1 tablespoon chopped parsley
salt, for steaming water

Steps:

  • Trim cauliflower: remove leaves and leaf stalks. Turn head over and trim out the center of the core, but not so much that the florets fall apart. Heat about 2 inches salted water in the bottom of a steamer. Put whole head in the steamer basket and cook just until a sharp knife can pierce it with a slight resistance, 10-20 minutes, depending on the size of the head. Don't overcook; it will continue to cook from residual heat. While the cauliflower cooks, heat butter in a small saucepan until it just begins to brown. This will not take very long--watch closely so it doesn't burn. Zest the lemon, then cut in half and squeeze out the juice. Add to browned butter. Chop parsley and add to butter. When the cauliflower is done, remove to serving dish and spoon sauce over. Slice into quarters to serve.

1 small head cauliflower (1 1/2 to 2 pounds)
1/2 cup water
2 tablespoons olive oil
3/4 teaspoon kosher salt
1 teaspoon Italian seasoning
1/8 teaspoon garlic powder
1 teaspoon lemon zest (zest from 1/2 lemon)

Steps:

  • Chop the cauliflower into florets.
  • Place 1 1/2 cups water into a saucepan or pot. If using a steamer basket without a handle, add it to the pot now: the water surface should be right under the basket. Bring the water to a boil.
  • Once boiling, add the cauliflower (in the steamer basket, if it has a handle). Steam with the lid on 10 to 12 minutes until just tender, testing with a fork to assess whether it's done.
  • Carefully remove the cauliflower to a bowl, draining any excess liquid. Toss with the remaining ingredients and serve. (Store leftovers refrigerated.)

8 ounces pitted green olives
2 tablespoons chopped flat-leaf (Italian) parsley
1 teaspoon minced garlic

Steps:

  • Place a steamer insert into a pot and fill with water to just below the bottom of the steamer. Bring water to a boil. Place cauliflower in the insert, drizzle with olive oil, and spread olives around it; spread parsley and garlic on top and season with salt.

1/2 cup panko
1 teaspoon coarse salt
1/3 cup grated Parmesan
1 head cauliflower, preferably green (about 2 pounds), leaves removed
6 tablespoons unsalted butter
1/2 teaspoon sweet paprika, preferably Hungarian

Steps:

  • Preheat oven to 350 degrees. Toast panko in a large skillet over medium-high heat until golden, tossing occasionally, about 3 minutes. Transfer to a bowl; let cool, then stir in salt and cheese.
  • Place a steamer basket in a pot filled with water to just below basket. Bring to a boil, then place cauliflower in basket; cover and steam 10 minutes. Reduce heat to low; steam until cauliflower is fork-tender, 8 to 10 minutes. Transfer to a serving bowl.
  • Meanwhile, melt butter in a saucepan over medium heat until browned, about 9 minutes. Remove from heat; swirl in paprika. Pour half of brown butter over cauliflower; sprinkle with half of panko mixture. Cut cauliflower into chunks with a paring knife. Pour remaining brown butter over top; sprinkle with remaining panko mixture. Serve.

1 head of cauliflower, trimmed of all leaves but kept whole
1 tablespoon herbes de provence
1 tablespoon butter or olive oil
1 tablespoon each of chopped fresh herbs such as thyme, parsley, chives, mint, etc.
salt and pepper to taste

Steps:

  • In a medium saucepan with a tight fitting lid, bring to a boil 1/2 to 3/4 inch of water and add the tablespoon of herbs de provence. Stem-side down, place the whole head of cauliflower in the boiling liquid and cover with the lid. Reduce the heat to simmer and cook for 10 to 12 minutes, until the cauliflower is easily pierced with a knife. Remove the cauliflower from the pot and place in a shallow bowl. Turn up the heat and reduce the liquid in the pot to 1/3 to 1/2 cup. Add the butter or olive oil and the chopped fresh herbs. Pour the reduced liquid with the herbs over the cauliflower. Slice the cauliflower into wedeges (like a slice of cake) using a sharp knife and spoon a little bit of the sauce over each portion.
