It's surprising really, but simple buttered steamed cabbage is a delicacy. Steaming transforms this vegetable into a delectable dish.

1 medium cabbage ((2 lb. trimmed))
4 tablespoons unsalted butter
1 tablespoon minced fresh garlic
1 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/8 teaspoon red pepper flakes
1/8 teaspoon dried parsley

Steps:

  • Trim the cabbage, then shred it. To shred, cut the cabbage in half, then slice each half into thin slices and separate the slices with your hands into strips, as shown in the video below. Place the strips in a colander and rinse.
  • Transfer the rinsed cabbage to a large, deep skillet, without drying it off - the water adhering to the cabbage will allow it to steam. You can a tablespoon of water to the bottom of the pan, but I usually don't find it necessary.
  • Turn the heat to medium-high and cover the skillet. When the cabbage starts to steam, which should take about a minute, lower the heat to medium.
  • Steam, covered, for about 5 minutes. Uncover, stir, and cook for 2 more minutes to allow any remaining water to evaporate. If you still have too much water in the pan, you can drain it into a colander.
  • Add the butter, garlic, salt, and black pepper, stirring to combine. Cook for 2 more minutes, stirring, until the butter has melted. Garnish, if desired, with dried parsley and red pepper flakes. Serve warm.

  • Cut the 1/2 head of cabbage into 4 wedges, core removed.
  • they should be about 1 1/2"-2" on the wide side.
  • Place in a steamer, side by side, one cut side down.
  • Steam for 6 minutes, flip carefully& steam for a further 6-8 minutes.
  • Butter lightly, salt& pepper.

Steps:

  • 1. Cut the cabbage lengthwise into six wedges; remove most of the core from each wedge but leaving enough to keep the leaves intact. Place a steamer basket in a large saucepan or Dutch oven. Add enough water to reach just below the basket. Bring the water to a boil; add the cabbage wedges to the basket. Cover and steam until the cabbage is tender, 8 to 10 minutes.
  • 2. Meanwhile, melt the butter in a small saucepan over medium heat. Add the chile, garlic, and salt. Cook, stirring for 1 minute. Remove from the heat. Transfer to a small bowl and let cool slightly. Stir in the lemon zest, lemon juice, and orange juice.

We celebrate St Patrick's Day with a big meal each year and cabbage usually plays some part in the feast. One year, a guest brought this cabbage dish to share and it was a big hit. She originally found the recipe in an issue of Taste of Home magazine. The chili sauce called for in this recipe is not particularly spicy (although hot versions are also sold) and is usually sold in a bottle in the ketchup aisle in US supermarkets. The brand I most often have used is Heinz.

1 head green cabbage (3 pounds)
1/2 cup green bell pepper, chopped
1/4 cup onion, chopped
1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
3/4 cup cheddar cheese, shredded
1/2 cup mayonnaise or 1/2 cup Miracle Whip
3 tablespoons bottled chili sauce

Steps:

  • Cut cabbage into 8 wedges, leaving a bit of the core on each to help hold eachpiece together.
  • Bring a pot of water to boil and steam cabbage wedges, covered, until crisp-tender, approximately 10-15 minutes.
  • Drain and remove the core, then set wedges in a greased 9x13" casserole.
  • For the sauce, in a medium pot, saute green pepper and onion in butter until tender.
  • Add flour, salt and pepper, stirring quickly, and cook until it gets bubbly.
  • Add milk slowly, whisking, then cook and stir until sauce thickens.
  • Pour over cabbage.
  • Bake, uncovered, at 375 F for 15 minutes.
  • Meanwhile, mix together cheese,mayo, and chili sauce; ladle over the cabbage wedges and return to oven for 5 more minutes.

  • Cut Cabbage: Remove outer leaves and cut cabbage into 8 wedges. Rinse cabbage under cold water to remove any dirt.
  • Pressure Cook Cabbage: Add 3 tbsp (45g) unsalted butter, 8 garlic cloves, ½ tsp (0.7g) dried thyme, and 1 tsp (6.5g) fine salt to Instant Pot. Pour in 2 cups (500ml) unsalted chicken stock, then give it a quick mix. Add in cabbage wedges, and ensure they're all partially submerged in the cooking liquid. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure Cook at High Pressure 3 minutes (tender with some crisp) to 6 minutes (tender), then Quick Release. Open the lid carefully.
