STEAMED CABBAGE ROLLS (翡翠包肉)



Steamed cabbage rolls (翡翠包肉) image

A tasty filling wrapped with cabbage leaves and served with a delicious sauce, steamed cabbage rolls are pretty, low-carb and very simple to make.

8 savoy cabbage leaves (see note 1)
1 long carrot (optional)
4 dried shiitake mushrooms, rehydrated in water
200 g minced pork/beef/chicken (7oz)
1 stalk scallions, finely chopped
2 tsp light soy sauce (Use gluten-free soy sauce to make the dish gluten-free)
1 pinch Chinese five spice powder
1 pinch sugar
1 dash sesame oil
3 tbsp mushroom water (see note 2)
1 tbsp oyster sauce
1/2 tsp cornstarch

Steps:

  • Blanch cabbage leaves in boiling water until they begin to wilt (it should take no more than 20 seconds). Drain and set aside.
  • Use a vegetable peeler to peel off 8 narrow strips of carrots. Blanch for a few seconds then drain (carrot is purely for an aesthetic reason so it's optional).
  • Squeeze out excess water in shiitakes mushrooms (keep the water in which the mushrooms are soaked for later use). Chop them into tiny pieces.
  • Put mushrooms, minced meat and all the seasonings into a bowl. Mix well.
  • Place 1/8 of the filling in the middle of a cabbage leaf. Wrap it into a cylinder shape.
  • Tie the roll with a strip of carrot (please refer to my tutorial video below). Repeat to finish the rest.
  • Place the rolls into a serving plate then put into a steamer. Steam for 10 minutes.
  • If you don't have a steamer, see note 3 for an alternative solution which is also demonstrated in my tutorial video below.
  • While waiting for the rolled to cook, mix 3 tablespoons of the mushroom water with oyster sauce and cornstarch. Stir well.
  • Heat up the sauce over high heat. Remove as soon as it thickens. Pour it over the rolls. Serve warm.
  • You may keep raw, wrapped cabbage rolls in the fridge for up to 24 hours. Extend the steaming time to 12 minutes if just taken out from the fridge.

1 medium head cabbage (3 pounds)
1/2 pound uncooked ground beef
1/2 pound uncooked ground pork
1 can (15 ounces) tomato sauce, divided
1 small onion, chopped
1/2 cup uncooked long grain rice
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon snipped fresh dill or dill weed
1/8 teaspoon cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon sugar

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. Arrange the cabbage rolls seam side down over sliced cabbage. Combine the tomatoes, sugar and remaining tomato sauce; pour over the rolls. Cover and bake at 350° until cabbage rolls are tender, 1-1/2 hours.

These rolls are incredible! The dish had a hint of an Asian flair to it despite the absence of any traditionally Asian ingredients. Very tasty. (The tomato sauce would also be good on its own with other dishes as well.)

2 tablespoon(s) flour
1/2 teaspoon(s) salt
1/2 teaspoon(s) chili powder
4 tablespoon(s) butter
- SAUCE INGREDIENTS
1 dash(es) ground nutmeg
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/4 teaspoon(s) sage, ground
1/2 cup(s) soft bread crumbs
3 tablespoon(s) butter, melted
1 1/2 cup(s) cooked rice
1/2 cup(s) chopped onion
1 pound(s) lean ground beef
2 cup(s) tomato juice

Steps:

  • Cut the core from cabbage.
  • Under running water, carefully remove about 15 leaves to use for the recipe.
  • Have about 2 quarts water boiling; add 1 teaspoon of salt.
  • Dip the cabbage leaves in boiling water, 3 at a time, for about 3 minutes.
  • Remove with tongs, drain and set aside.
  • Mix the meat, onion, cooked rice, butter, bread crumbs, sage, pepper, nutmeg and salt.
  • Lay a cabbage leaf on a flat surface.
  • Put 2-4 tablespoons of the mixture on each leaf, depending on the leaf size.
  • Put the meat near the base of the leaf, fold leaf up and over the meat, turning under the sides.
  • This will make about 15 rolls.
  • Place the rolls, seam side down, in a greased 2-quart casserole dish.
  • Make two layers of the rolls.
  • Place this dish on rack over 2 inches of simmering water in wok or large heavy pan with rack.
  • Cover pan or wok and steam for 35-40 minutes.
  • TOMATO SAUCE: Melt 4 tablespoons butter in a skillet.
  • Add the salt, chili powder and the flour.
  • Mix to a smooth paste.
  • Cook over high heat, stirring constantly, until mixture comes to a boil.
  • Remove from heat and slowly stir in the tomato juice.
  • Return to heat and cook until it boils and thickens.
