STEAMED BROCCOLI WITH CHEESE SAUCE RECIPE

Steps:
- Steam broccoli until crisp-tender, about 4-5 minutes.
- While the broccoli is steaming, melt the butter in a medium saucepan over medium-low heat.
- Whisk in flour and mustard powder and cook for about 1 minute. Pour in the milk, and whisk constantly until the sauce comes to a bubble and has thickened substantially.
- Add cheese in 3 increments, stirring until each addition is completely melted before adding the next.
- Season to taste with salt.
- Pour this wonderful sauce over the freshly steamed broccoli.
- Serve and enjoy!

Steps:
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a bowl, mix cooked sausage, broccoli, and 1/2 cup Cheddar cheese. In a separate bowl, mix 1/2 cup Cheddar cheese, ricotta cheese, eggs, milk, pepper, and salt. Spoon the sausage mixture into the prepared baking dish. Spread the Cheddar and ricotta mixture over the sausage mixture. Sprinkle with remaining Cheddar. Arrange tomato slices on top.
- Cover with aluminum foil, and bake 30 minutes in the preheated oven. Uncover, and bake for an additional 15 minutes. Let stand for 10 minutes before serving.

STEAMED BROCCOLI WITH GINGER
Steps:
- In a steamer place the stems on the bottom, slice 3 thin slices of ginger, place over stems and top with broccoli florets. Steam broccoli for 5 minutes.
- Grate the rest of the ginger, there should be about 2 teaspoons. Mix the ginger with soy, vinegar, and sesame oil, and toss with broccoli (remove the ginger slices before serving). Arrange on platter, top with red pepper, scallions and sesame seeds
- TIP:

- Trim off the bottom, tough stems of the broccoli rabe, wash well. Slice stems into 1/2-inch pieces and saute with whole peeled garlic cloves in olive oil. After 5 minutes add florets, saute until slightly tender, add a pinch of Italian red pepper and serve over pasta.
STEAMED BROCCOLI WITH RICOTTA, BEER AND CHIVE SAUCE

- In a large pot with a steamer insert, bring salted water and a splash of beer to a boil. Steam broccoli until crisp-tender, about 4 minutes. Keep warm.
- In a saucepan over medium heat, melt butter and cook onion and garlic until softened, about 5 minutes. Stir in ricotta cheese, beer, and sour cream until smooth and heated through. Add salt and white pepper. Spoon the sauce over steamed broccoli. Garnish with chives and serve.

- Add 1 inch of water to a saucepan and bring to a boil.
- Rinse the broccoli. Use a vegetable peeler to peel the stalks.
- Cut the broccoli into bite-size florets and pieces, and place them in a steamer basket.
- Steam until tender-crisp. Start checking after 5 minutes. As soon as a fork can pierce the stalks, the broccoli is done. Even if the rest of the meal is not ready yet, remove the broccoli from the steamer onto a plate. Crisp steamed broccoli is delicious even at room temperature. Warm limp broccoli is not.
- While the broccoli is steaming, in a small bowl, whisk together the lemon juice, olive oil, salt, pepper, and garlic powder.
- Place the broccoli in a bowl. Pour the dressing on top and gently mix. Serve immediately.
