10 ounces chinese broccoli (gai lan)
1 teaspoon salt
1 teaspoon baking soda
1 slice fresh ginger

Steps:

  • Wash the Chinese broccoli. Cut off the ends if not already trimmed and cut into bite-sized pieces (about 2 inches long).
  • In a large saucepan, add enough water to cover the broccoli. Add the salt, baking soda and ginger. Bring to a boil.
  • While waiting for the water to boil, prepare the sauce. Combine the chicken broth or water, oyster sauce, rice wine or dry sherry and sugar. Bring to a boil in a small saucepan. Turn the heat down and keep warm while blanching the broccoli.
  • Add the Chinese broccoli to the boiling water. Cook until the stalks are tender but crisp (3 - 4 minutes). Rinse in cold running water. Drain.
  • Pour the sauce over the broccoli. Serve immediately.

2 stalks broccoli, stems removed
1/2 cup diced extra firm tofu
1/4 cup oyster sauce
1/2 teaspoon minced garlic
1/2 teaspoon minced fresh chili pepper
2 teaspoons pickled ginger
1/2 teaspoon red miso
1/4 cup rice wine
3 teaspoons toasted sesame seeds

Steps:

  • Cut the broccoli into florets and, along with the dice tofu, placed into a steamer set inside a medium saucepan over boiling water. Steam for about 2 minutes. The broccoli should be bright green and firm still.
  • In a wok over high heat, combine the oyster sauce, garlic, chili pepper, ginger, miso and rice wine. Bring to a boil. Add the broccoli and tofu and mix well. Garnish with sesame seeds and serve at once.

1 tablespoon cornstarch
1/4 cup water
1/2 teaspoon sugar

Steps:

  • Mix together in a small pot the cornstarch, water and sugar.
  • Add the oyster sauce and heat till it thickens.
  • I like this added to snow peas, mushrooms etc.
  • Also nice in a stir fry of your choice.

  • In a small bowl, whisk together oyster sauce, soy sauce, cornstarch, sugar, and 1 tablespoon water.
  • In a large skillet, heat vegetable oil over medium-high. Addgarlic and broccoli. Cook, tossing occasionally,until broccoli is bright green, about 3minutes. Add 1/2 cup water, cover, andcook until broccoli is tender but stillhas some bite, about 2 1/2 minutes. Addoyster sauce mixture; cook until thickened,about 1 minute.

8 ounces Broccolini (also called asparation or baby broccoli)
1 -1 1/2 tablespoon peanut oil
1 tablespoon oyster sauce

Steps:

  • Wash, dry, and cut broccolini into thirds.
  • Heat oil over high in a wok or similar type pan.
  • Stir fry the stems first for about 3-4 minutes. You may need to turn the heat down to medium high.
  • Add the top leaf portion, and cook for another 3-4 minutes.
  • Shut off heat and add oyster sauce, stirring to coat. Serve.
