ASPARAGUS WITH GARLIC BUTTER AND PARMESAN CHEESE

Asparagus With Garlic Butter and Parmesan Cheese image

We had this simple, delicious starter in a Bali restaurant recently. I've since made it at home to rave reviews.

Provided by JustJanS

Categories     Vegetable

Time 15m

Yield 4 serving(s)

Number Of Ingredients 5

2 bunches asparagus, trimmed of woody ends (thick spears)
125 g butter (no substitute)
4 garlic cloves, crushed (I actually grate mine on my microplane grater)
salt and pepper
40 g parmesan cheese, grated (finely)

Steps:

  • Bring a pan of water to the boil, drop the asparagus in and cook for about 2 minutes or until just, just tender crisp. Plunge into iced water to stop them cooking, then drain.
  • Melt the butter in a large frying pan over medium heat, add the garlic and cook for a minute until fragrant.
  • Season with salt and pepper, the add the asparagus to the pan, tossing and turning gently in the butter until hot.
  • Divide amongst 4 plates, then sprinkle each serve with the cheese.
  • We liked crusty bread to mop up the rest of the garlic butter, but it's up to you!

  • Asparagus with Cream Sauce on Pasta. Pasta with asparagus in a parmesan cream sauce is pretty much everything good in the world. Creamy. Cheesy. Bright. Rustic.
  • White Cheddar Sauce. We’re big fans of hearty and bold, sharp cheddar cheese. It has so much body and tang that it’s irresistible. And when it’s combined with a silky and decadent cream sauce, that makes it all the better.
  • Tahini Lemon Sauce. Now that you can find tahini in every grocery store and health food store, (could corner bodegas be far behind?) , we’re using it as a shortcut for amazing and deceptively complex flavors.

  • Pour 1 inch of water into a saucepan. Fit a steamer basket into the saucepan. Bring the water to a boil.
  • Chop off about an inch from the bottom of the asparagus. There's generally no need to peel them since we're using medium-thickness spears, but if some of the spears are very thick or woody, go ahead and peel the bottom.
  • Once the water has boiled, place the asparagus in the steamer basket. Cover and steam until the asparagus are just barely tender, about 5 minutes. Thinner spears will require just 3 minutes of steaming.
  • Immediately remove the asparagus from the steamer and transfer to a serving platter. Drizzle it with melted butter and lemon juice, and sprinkle with kosher salt, black pepper, and garlic powder. Serve immediately.
