This bread is steamed in cans. My Gram saved small coffee cans for this. Gram didn't have a steamer so she used a tin pie plate with holes in it turned upside down in a large covered pot with 4 inches of water.

1 cup bread flour
1 cup whole wheat flour
1 cup cornmeal
1 cup molasses
2 cups water
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • In large bowl, stir together bread flour, whole wheat flour, cornmeal, baking soda. Stir in molasses and water; mix until combined. Pour batter into two lightly greased coffee cans, fill about 2/3 full.
  • Place loaves into a steamer, cover and steam over low heat. Steam for 1 hour and 45 minutes, until loaves are set.

Created in colonial times and also called Boston brown bread, this authentic dark bread is made with cornmeal and molasses. Originally, it called for rye meal, which was available at the time.

1 cup Gold Medal™ all-purpose flour
1 cup whole wheat flour
1 cup whole-grain cornmeal
1 cup raisins
2 cups buttermilk
3/4 cup molasses
2 teaspoons baking soda
1 teaspoon salt

Steps:

  • Heat oven to 325°F. Grease 2-quart casserole dish with shortening or cooking spray.
  • In large bowl, beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 30 seconds, scraping bowl constantly. Pour batter into casserole.
  • Bake uncovered about 1 hour or until toothpick inserted in center comes out clean. Immediately loosen sides of bread with metal spatula and remove bread from casserole. Cool 30 minutes on cooling rack before slicing. Serve warm.

Steps:

  • Combine all bran cereal, raisins, nuts, egg, buttermilk, and molasses.
  • Sift flour, baking soda, baking powder, and salt.
  • Add dry ingredients into wet mixture; stir just until combined.
  • Fill quart cans that have been greased.
  • This will fill 2 quart cans.
  • Steam for 2-1/2 hours.

2 cups All-Bran
1 cup all-purpose flour
1 cup whole wheat flour
1 cup dried cranberries
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg, room temperature
1-3/4 cups buttermilk
1/2 cup molasses
2 tablespoons honey

Steps:

  • Layer two 24-in. pieces of foil. Starting with a long side, roll up foil to make a 1-in.-wide strip; shape into a coil. Place on bottom of a 5-qt. slow cooker to make a rack., Combine bran, flours, cranberries, baking powder, baking soda, salt and cinnamon. In another bowl, beat egg, buttermilk, molasses and honey. Stir into flour mixture just until blended (do not overbeat). Pour into a greased and floured 2-qt. baking dish. Tightly cover with lightly greased foil. Place in prepared slow cooker. Cook, covered, on high about 3 hours, until a thermometer reads 190-200°., Remove dish to a wire rack; cool 10 minutes before inverting loaf onto the rack. Serve warm or cold.

½ cup molasses
1 tablespoon vegetable oil
3 tablespoons white sugar
salt to taste
2 teaspoons baking soda
1 ½ cups all-purpose flour
2 cups graham flour

Steps:

  • Use a canning kettle, and invert the wire rack. Fill with water to just below the wire rack. Bring to a boil on top of the stove.
  • In a large bowl, mix together molasses, oil, milk, sugar, salt, and baking soda. Stir in white and graham flour. Divide batter into two 1 pound coffee cans. Place a double thickness of aluminum foil over top, and secure with rubber bands.
  • Keep water at a slow boil, and steam for one hour.

2/3 cup old-fashioned oats
2/3 cup cornmeal
2 teaspoons baking soda
1/2 teaspoon salt
1-1/3 cups buttermilk
1/2 cup molasses

Steps:

  • In a large bowl, combine the flour, oats, cornmeal, baking soda and salt. Combine buttermilk and molasses; stir into dry ingredients. Pour into two greased 10-oz. ramekins or custard cups; cover with foil., Place ramekins on a rack in a deep kettle; add 1 in. of hot water to kettle. Bring to a gentle boil; cover and steam for 35-45 minutes or until a toothpick inserted in the center comes out clean, adding more water as needed. , Remove ramekins from kettle; let stand for 5 minutes before removing bread from ramekins.
