- Cook noodles, drain.
- Preheat oven to 350.
- Melt butter and saute the onions and garlic until tender. Season with salt and pepper to taste.
- Place half of the cooked noodles in the greased bottom of a casserole dish.
- Layer with ½ of the cheese, all potatoes, the remaining noodles and top with remaining cheese.
- Poke holes through the top layer of cheese; pour butter mixture over top, making sure it seeps through the holes.
- Bake at 350 for 10 minutes.

- In a skillet, saute onion in butter until tender; set aside. In a bowl, combine cottage cheese, egg and onion salt. In another bowl, combine potatoes, 2/3 cup cheddar cheese, salt and pepper. Place 3 noodles in a greased 13x9-in. baking dish. Top with cottage cheese mixture and 3 more noodles. Top with potato mixture, remaining noodles and sauteed onion. Top with remaining 1/3 cup cheese. Cover and bake at 350° until heated through, 25-30 minutes. Let stand 10 minutes before serving.

We in PA love our pierogi's; and here is an easy, tasty casserole that substitutes the real deal. Most commonly served as a main dish, but can be served as a side.

- Cook noodles, drain.
- Melt butter and saute the onions until tender, meanwhile cook mashed potatoes according to package.
- *Steps1 and 2 should be done around the same time.
- Place half of the cooked noodles in the bottom of a 13x9 casserole dish.
- Layer with 8 slices of cheese, all potatoes, the remaining noodles and top with remaining 8 slices of cheese.
- Poke holes through the top layer of cheese; pour butter and onion mixture over top, making sure it seeps through the holes.
- Serve.

This recipe is inspired by Yooper's Awesome Pierogi Casserole (which truly lives up to its name!) recipe#47419 We love it, but DH loooooves cabbage pierogi, and I hate messing with lasagna noodles. So I modified it a bit to suit my family's requests....(and I cheat and use instant mashed potatoes, too)

Steps:
- In a skillet, brown one onion in 2 tbs butter, add drained sauerkraut, shredded cabbage, salt and pepper.
- Cook for 5 minutes.
- Set aside.
- In a separate skillet, cook bacon and onions to desired"doneness" (I prefer well-done).
- Preheat oven to 350 degrees Spread 1/3 of the mashed potatoes in 9x13 baking dish.
- Top with 1/3 of the cheese followed by a layer of egg roll wrappers cut to fit.
- Top with bacon mixture, 1/3 of the potatoes, and 1/2 of the cheese, and more egg roll wrappers.
- Spread cabbage-sauerkraut mixture over the this and top with egg roll wrappers.
- Spread remaining potates, top with egg roll wrappers, and sprinkle with remaining cheese.
- Bake at 350 for 30-40 minutes or until the cheese is melted and bubbly.
- Serve with Sour cream.
AWESOME PIEROGI CASSEROLE

- Preheat oven to 350 degrees.
- Place the potatoes in a large pot with water to cover over high heat.
- Bring to a boil and cook until the potatoes are tender.
- Remove from heat, drain, then combine with milk and 6 tablespoons of butter, mash and set aside.
- Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat.
- Saute the bacon, onions and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
- Cook the lasagna noodles according to package directions and cool under running water.
- Place 1/2 of the mashed potatoes into the bottom of a 9x13-inch baking dish.
- Top this with 1/3 of the cheese, followed by a layer of lasgana noodles.
- Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles.
- Then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese.
- Season with salt and pepper to taste.
- Bake, uncovered at 350 for 30 to 45 minutes, or until the cheese is melted and bubbly.
- Serve with sour cream and chopped fresh chives.
PIEROGI NOODLE CASSEROLE
Found this in the local paper. This is sort of the WV take on the PA pierogi's. It is a common dish for tailgating (or for church pot lucks!). I haven't played with the recipe yet to see what can be done with other common pierogi ingredients.

- Boil egg noodles until al dente. Drain. Add salt and pepper to taste. Melt 1 stick butter into the noodles.
- Cook instant mashed potatoes using water, milk, and butter as required by the instructions on the box. Use whole box.
- Chop onions. Melt 1 stick butter in saute pan and saute onions till soft.
- In casserole pan, layer 1/2 of the noodles. Then layer 1/2 of the onions. Then layer all the potatoes. Top with remaining layers of noodles and onions. Pour all juices/butter over casserole.
- Bake at 350 F for 30 minutes.

QUICK & EASY PIEROGI CASSEROLE
I had something similar to this at a potluck and recreated it on my own. It's super easy and will probably please the whole family. I generally serve this dish with a side of salad to compliment the heaviness of the casserole. Sometimes I add some fried onions beneath the ham for something different.

- Preheat the oven to 350 degrees.
- Make the Steam n' Mash Russet Potatoes according to package directions.
- Sauté the onions in the butter until cooked through, but not browned. Season with salt and pepper to taste.
- Spray a 9" x 13" casserole with non-stick pan spray.
- Place a layer of noodles on the bottom of the casserole; spread about ½ of the potatoes on top of the noodles.
- Sprinkle with ½ of the grated cheese and top with 1/3 of the onion / butter mixture.
- Repeat this step; ending with the final third of the onion / butter mixture. Cover with foil and bake the casserole for 30 minutes.
- Serve immediately.
