STEAK IN RED WINE SAUCE

A versatile sauce great on lots of meat dishes, and perfect for steak - a comforting main for a dinner party.

Yield Makes 850ml-1.2 litres/1½-2 pints

Number Of Ingredients 11

6 fillet steaks
knob of butter
1 garlic clove , chopped
4 shallots , chopped
2 celery sticks, chopped
1 bay leaf
sprig thyme
olive oil , for frying
200g lean beef trimmings, chopped
75cl bottle red wine (Fitou gives a very rich, red colour)
1.2l fresh beef jus (or try using cans of beef consommé)

Steps:

  • Melt the butter in a medium saucepan. Add the garlic, vegetables and herbs, and cook on a medium heat until they soften and begin to colour. Heat a drop of olive oil in a frying pan. Season the beef trimmings and fry until coloured and sealed all over. Add the meat to the vegetables.
  • Pour 1-2 glasses of wine into the frying pan in which you have cooked the meat. Bring this to the boil, scraping and lifting all the meat residue from the bottom of the pan. Pour the liquid into the pan that contains the meat and vegetables. Let the pan's contents bubble until the wine has reduced by three-quarters.
  • Now add and reduce the rest of the wine, 1-2 glasses at a time. If you tip it all in at once, you wash the vegetables and meat of their roasted edge, so their flavour in the finished sauce is bland. Reduce by three-quarters, glass by glass until all the wine is used.
  • Now add the beef jus, bring to a simmer and cook gently for 45 mins to 1 hr. Regularly skim away any impurities by weaving a small ladle in and out of the top of the sauce. Taste regularly and when you are happy with the flavour, strain the sauce through a fine sieve, squeezing out all the juices from the meat and vegetables.
  • Ideally, also pass the sauce through a sieve lined with a piece of muslin, which will help remove fine impurities. Check for seasoning. You can make ahead up to this point, cool and refrigerate or freeze.
  • Heat a grill or pan to hot, smear the steaks with oil and cook them, turning once, 4-5 mins for rare, 7-8 mins for medium, 8-10 mins for well done. Serve the steaks on a bed of wilted spinach with sticky shallots and pour the red wine sauce around. Mashed potatoes make a good accompaniment to this.

250g shallot, sliced
4 tbsp olive oil
1 garlic clove, lightly crushed
sprig rosemary
5 tbsp balsamic vinegar
400ml red wine
400ml beef stock or brown chicken stock, preferably homemade
knob of butter

Steps:

  • Sauté 250g sliced shallots in a medium saucepan with 4 tbsp olive oil over a high heat for about 3 mins until lightly browned, stirring often.
  • Season with ground black pepper and add 1 lightly crushed garlic clove and a sprig of rosemary.
  • Continue cooking for a further 3 mins, stirring often to prevent the shallots burning.
  • Pour in 5 tbsp balsamic vinegar and cook until evaporated away to a syrup, then pour in 400ml red wine and cook until reduced by two thirds.
  • Pour in 400ml beef or brown chicken stock and bring to the boil.
  • Turn down the heat and simmer until reduced by two-thirds again, to around 250ml. Remove the garlic and rosemary.
  • Add a little salt to taste and finally 'monte' (whisk) in a knob of butter. Add any juices from the steaks just before serving.

1 1-pound New York strip steak (about 1-inch thick)
Kosher salt and freshly ground pepper
1 large shallot, minced
3/4 cup boxed red wine
2 to 3 tablespoons cold unsalted butter, cubed

Steps:

  • Remove the steak from the refrigerator 30 minutes before cooking. Heat a large heavy-bottomed skillet over medium-high heat. Pat the steak dry and season generously with salt and pepper on all sides. Place the steak, standing up on the strip of fat, in the pan and hold it with tongs until the fat renders and the pan is slick, about 2 minutes.
  • Place the steak flat in the pan and sear until deep brown on one side, 4 to 5 minutes. Turn and cook on the other side until a thermometer inserted sideways into the thickest part registers 120 degrees for medium-rare, 3 to 4 more minutes. Transfer to a cutting board and let rest 10 minutes. Reserve the drippings in the skillet.
  • Add the shallot to the drippings and cook over medium heat until golden, about 2 minutes. Add the wine and scrape up any browned bits with a wooden spoon. Bring to a boil and cook until reduced by half and slightly syrupy, about 7 minutes; remove from the heat. Whisk in the butter, one piece at a time, to make a glossy sauce. Add 1/2 teaspoon salt and 1/4 teaspoon pepper or season to taste. Slice the steak against the grain and serve with the sauce.

3 tablespoons butter
½ yellow onion, chopped
½ red onion, chopped
2 large shallots, chopped
2 tablespoons minced garlic
1 roma (plum) tomato, chopped
1 pound carrots, chopped
¾ pound fresh mushrooms, sliced
1 (14 ounce) can beef broth
1 ¼ cups Merlot wine, divided

Steps:

  • Heat the butter in a saucepan over medium-high heat; cook and stir the yellow and red onion, shallots, garlic, tomato, carrots, and mushrooms until the onions are translucent and the carrots have softened, 10 to 15 minutes. Pour in the beef broth and 1 cup of Merlot, and bring to a boil, scraping and dissolving any browned bits of flavor from the bottom of the pan. Reduce heat, and simmer until the vegetables are very soft and the pan juices have reduced by half, about 20 minutes.
  • Strain out and discard the vegetables from the sauce. Return the sauce to a boil over medium-high heat, stir in 1/4 cup of Merlot wine, and reduce heat. Simmer the sauce until it is reduced to 1/4 of its original volume, stirring occasionally, about 20 minutes.

1 teaspoon vegetable oil
2 (12 ounce) boneless rib-eye steaks or 2 (12 ounce) beef tenderloin steaks
1 teaspoon butter or 1 teaspoon margarine
1/2 teaspoon salt
1/4 teaspoon pepper, coarsely ground
2 medium shallots, finely chopped
1 cup dry red wine

Steps:

  • In 12-inch skillet, heat oil over medium-high heat until very hot but not smoking.
  • Meanwhile, pat steaks dry with paper towels.
  • Add margarine to skillet.
  • Add steaks; sprinkle with salt and pepper and cook 8 to 10 minutes for medium-rare or until desired doneness, turning steaks over once.
  • Transfer steaks to cutting board; keep warm.
  • To drippings in skillet, add shallots and cook over medium heat 3 to 4 minutes or until browned and tender.
  • Add wine to skillet and heat to boiling over high heat. Boil 2 minutes.
  • To serve, thinly slice steaks and spoon wine sauce on top.

1 cup dry red wine
1/2 cup shallot, chopped
2 garlic cloves, chopped
1/2 teaspoon dried thyme
1 bay leaf
1 cup chicken stock
1 cup beef stock
12 garlic cloves, peeled
12 shallots, peeled
2 tablespoons vegetable oil
24 ounces beef tenderloin steaks, 1-inch thick
1/4 cup butter, chilled, cut in pieces

Steps:

  • Combine first 5 ingredients in heavy medium saucepan over medium-high heat.
  • Boil until liquid is reduced by half, about 6 minutes.
  • Add both stocks and boil until liquid is reduced to 1/2 cup, about 20 minutes. (Sauce can be prepared 1 day ahead. Cover and refrigerate).
  • Preheat oven to 375.
  • Place whole garlic cloves and shallots on 12-inch square of foil.
  • Drizzle with 1 tablespoon oil.
  • Season with salt and pepper.
  • Bring 4 corners of foil together to form package; twist to seal.
  • Place foil on baking sheet; roasts 30 minutes.
  • Open foil and roast until garlic and shallots are tender and golden, about 30 minutes.
  • Transfer garlic and shallots to platter.
  • Tent with foil.
  • Heat remaining 1 tablespoon oil in heavy large skillet over medium-high heat.
  • Season steaks with salt and pepper.
  • Add to skillet and cook to desired doneness, about 4 minutes per side for rare.
  • Transfer steaks to platter with garlic and shallots; tent with foil.
  • Bring sauce to simmer.
  • Remove from heat.
  • Add butter 1 piece at a time, whisking just until melted.
  • Strain sauce into medium bowl.
  • Season to taste with salt and pepper.
  • Drizzle over steaks, garlic and shallots and serve.

3 tablespoons minced garlic

4 turns freshly ground black pepper
1 1/2 cups veal stock or brown chicken stock
1/2 cup dry red wine

Steps:

  • Combine the shallots, garlic, salt and pepper in a small nonreactive saucepan over high heat. Stir in the stock and the wine and bring to a boil. Cook over high heat for 15 minutes. Swirl in the butter, remove from the heat, and continue to whisk in the butter until thoroughly incorporated. Mound the potatoes in the center of the plate. Slice a couple of slices off the roast and position them at an angle against the potatoes. Spoon the sauce over top. Garnish with fresh black pepper and long chives.
