STEAK & PEPPER SAUCE RECIPE
The best creamy pepper steak sauce ever!

Steps:
- Take the steaks out of the fridge 30 minutes before you intend to cook them. Once the steaks are at room temperature, it will be easier to cook afterwards. Then season both steaks with pepper and salt on both sides. Pour the olive oil in a non-stick pan and place it over medium heat. Once the oil is hot enough, add the steaks.
- Cook them the way you prefer them.
- Once the steaks are cooked, remove them from the hot pan and put them on a clean plate. Cover with tinfoil and let them rest at room temperature for now.
- Get rid of the remaining oil in the hot pan but leave the burnt bits on the bottom. They are packed with flavor and will add to the peppercorn sauce later. Put the hot pan over medium heat and add the brandy and worcester sauce.
- Let it reduce for a couple of minutes until it is almost syrupy. Then add the lightly crushed peppercorns.
- Stir a little. Add the heavy cream.
- Let the cream cook and simmer for another couple of minutes per medium-low heat until it starts to thicken.
- Stir regularly. Check the seasoning and add a little salt to taste if necessary. Put the cooked steaks onto warm plates and drizzle with the peppercorn sauce. Serve hot.

- Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the beef and cook until well browned, stirring often. Remove the beef from the skillet. Pour off any fat. Heat the remaining oil in the skillet over medium heat. Add the peppers and onion and cook until the vegetables are tender, stirring occasionally. Add the garlic and oregano to the skillet and cook and stir for 1 minute. Return the beef to the skillet. Stir in the concentrated broth and water and cook until the beef is cooked through.
PEPPER CREAM SAUCE FOR STEAKS, PASTA OR STROGANOFF
I always use this sauce when I make beef tenderloin but I have also used a variation of it on pasta. You could also use this for stroganoff instead of a canned cream of mushroom soup-based sauce.

- Add the butter to an 8-10 inch skillet on medium heat.
- When butter is melted add minced shallot and garlic to pan and saute until shallots are tender. If using mushrooms add them now also.
- Add cracked pepper, beef stock, and heavy cream to pan. If using cheese add it now.
- Reduce heat to low and simmer 15 minutes, stirring occasionally.

- Preheat an oven to 500 degrees F (260 degrees C). Split the rolls open and toast them on a baking sheet in the oven while it is preheating. Mix together the mayonnaise, garlic, and Parmesan cheese in a small bowl. Refrigerate until ready to use. Remove the rolls from the oven when toasted as desired.
- Heat olive oil in a large skillet over medium-high heat. Carefully place the sliced steak and onions in the pan and season with sea salt, Worcestershire sauce, and liquid smoke. Cook and stir until the steak is browned and the onion is tender, about 10 minutes.

- Pound steaks to be 1/4 inch thick, and sprinkle each side with salt, black pepper, and 1/8 teaspoon mustard; rub into the meat.
- Melt margarine in a large skillet over medium-high heat. Fry 2 of the steaks for 2 minutes on each side, and transfer to a hot serving plate. Repeat with remaining 2 steaks.

- Whisk soy sauce, olive oil, balsamic vinegar, mustard, maple syrup, molasses, sesame oil, cinnamon, cloves, salt, and pepper together in a large glass or ceramic bowl. Add steak tips and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 6 to 24 hours.
- Preheat the oven to 425 degrees F (220 degrees C).
- Remove steak tips from the marinade and shake off excess. Discard the remaining marinade. Put steak tips into a baking dish and fill the bottom of the dish with beef broth.

- Combine peppercorns and pepper; rub over both sides of steaks. Chill for 1 hour. , Sprinkle salt in a large skillet; heat on high until salt begins to brown. Add steaks and brown on both sides. Add butter; reduce heat to medium-high. - Place a 10 inch cast iron skillet over medium heat untill hot.
- Sprinkle salt in skillet.
- Place steaks over salt.
- Cook 1 to 2 minutes on each side or until browned.
- Remove from skillet.
- Combine pepper, steak sauce and water in hot skillet.
- Cook over medium heat, stirring constantly, to loosen brown bits on the bottom of the skillet.
- Stir in whipping cream
- Bring to a boil, reduce heat and simmer, stirring constantly 3 to 4 minutes or until slightly thickened.

- Sprinkle steaks with kosher salt and crushed black pepper. Melt the butter in a 12-inch, heavy-bottomed sauté pan over medium heat. Once butter is hot, add the steaks and cook until browned on both sides, 2 minutes per side for medium-rare and 3 minutes per side for medium. Remove steaks from pan and place on a wire rack set on a half sheet pan; place in oven to keep warm.
- Add the stock to the sauté pan and whisk until the crispy bits release from bottom of pan. Reduce the liquid for 3 to 4 minutes over medium-high heat. Add the cream, cognac, and green peppercorns to the pan. Increase the heat to high and cook, whisking constantly, until sauce thickens slightly, just enough to coat the back of a spoon, 5 to 7 minutes.
- Season the sauce to taste with kosher salt. Place steaks on plates, top with sauce, and serve immediately.
