A mashed potatoes recipe that is more like smashed potatoes because they have some texture left to them. They are creamy and buttery and taste just like you ordered them at a bomb diggity steakhouse.

Steps:
- Leaving the skins on the potatoes, use a potato chopper to create a fine dice, or chop by hand.
- Heat a large pot of water over medium high heat and add the potatoes.
- Bring to a soft boil and cook until tender.
- Drain the potatoes and place them in a large bowl.
- Immediately add the butter and allow it to start to melt down.
- Start smashing the potatoes just until the butter is incorporated.
- Add the cream cheese and smash until well incorporated and it reaches the texture you desire.
- Season to taste.

LONGHORN STEAKHOUSE MASHED POTATOES

- Peel and cook potatoes until soft with preferred method. I personally used my Instant Pot using this Instant Pot Mashed potato recipe (I just stopped after I drained the water, as this recipe is different). I peel the potatoes and quarter them, cover with water (or you can just do two cups) and cook on manual high for 7 minutes.
- If you cook in a pot, bring the water to a boil, add potatoes, and then bring down to a simmer. Cook for about 20-25 minutes, or until a fork goes through easily.
- Drain excess water. Set aside one potato in a bowl.
- Mix together the softened butter with the minced garlic.
- Add the heavy cream, butter, and sour cream to the potatoes and mix until pureed with a hand mixer. You may have to add more heavy cream to get them REALLY smooth.
- With the potato you set aside, mash coarsely.

- Bring the chicken broth to a boil in a large pot over high heat.
- Meanwhile, cut the unpeeled potatoes into 1 inch cubes or chunks. Place the potatoes chunks and garlic cloves into the boiling chicken broth and boil until potatoes are tender, about 15 minutes.
- Strain the potatoes from the broth and put the cooked potatoes into a large mixing bowl.

- Preheat the oven to 375 degrees. Wash the sweet potato and wrap it with foil. Place on a baking sheet lined with parchment paper. Bake potato for approximately 1 hour, or until you can easily pierce the potato with a fork.
- While the potato is baking use a mixer to mix together the butter and honey until the texture is uniform. To serve remove the foil and split the potato open with a knife. Top with the brown sugar, cinnamon, and finally a scoop of the honey butter. Store leftover honey butter in the refrigerator.
- Serve each potato with 2 tablespoons of the honey butter.

CHIMICHURRI CAULIFLOWER STEAKS WITH MASHED SWEET POTATOES
A few years back my best friend and I took a brief road trip to Scottsdale, Arizona, and stayed in a beautiful desert resort that had a well-known steakhouse on site. I was intrigued to see a cauliflower steak on the menu and ordered it. I was absolutely blown away and wanted to create my own version at home. The savory cauliflower steak pairs beautifully with the sweetness from sweet potatoes, and the chimichurri seals the deal!

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- For the cauliflower: Remove the outer green leaves from the head of cauliflower and trim the stem. Using a large knife, cut the cauliflower in half lengthwise, through the core. Cut a 1 1/2-inch thick steak from each half (save the remaining cauliflower for another use).
- Place the steaks on the prepared baking sheet and season with salt and pepper on both sides.
- Whisk the oil, lemon juice, paprika, garlic powder and coriander together in a small bowl. Brush half of the mixture on the top of the steaks, flip them and brush the remaining mixture on the other side. Roast the steaks until golden brown, about 15 minutes, flipping halfway through.
- For the mashed sweet potatoes: While the cauliflower roasts, bring a small saucepan of water to a boil. Add the sweet potatoes and a pinch of salt and cook until fork tender, 10 to 12 minutes. Drain, return to the saucepan and cover to keep warm.
- Just before serving, with the back of a fork or potato masher, mash the potatoes until smooth. Add the warm soy milk and continue to mash. Grate the garlic clove into the saucepan, add a pinch each of salt and pepper and stir to combine. Keep warm.
- For the chimichurri: Combine all the chimichurri ingredients in a small bowl and stir to combine. Set aside.
- Spread the mashed potatoes on plates and top with cauliflower steaks. Drizzle with some of the chimichurri. Serve and enjoy!

STEAK, MASHED POTATOES AND SALAD

- STEAK: Heat saute pan over high heat. Salt and pepper steaks on both sides. Sear on both sides until crust forms about 4 to 5 minutes. Transfer to a preheated 400 degree F oven for 5 minutes.
- To make sauce: in the saucepan that you cooked the steak, place over high heat and add wine. Reduce until almost dry add butter 1 piece at a time until emulsified season with salt and pepper.
- MASHED POTATOES: Place potatoes in saucepot, cover with water and pinch of salt. Bring to a boil and cook until tender. Drain well. Heat milk and butter together add to potatoes using potato masher, mash. Add salt and pepper and truffle oil. Set aside and keep warm.
- SALAD: Heat 1 tablespoon of oil in a saucepan, add onion and sweat for 5 minutes, add apple, vinegar and remaining 1/4 cup olive oil. Toss string beans, beets and Romaine lettuce. Let vinaigrette cool and toss with salad. Drizzle with truffle oil.

- Combine sweet potatoes, milk, brown sugar, vanilla and nutmeg in a large saucepan.
- Bring to a slow boil, reduce, cover and cook over low heat stirring the sugar & milk mixture onto the potatoes.
