They say what happens in Vegas, stays in Vegas, but that's mostly because people just don't remember exactly what happened. Well, the only thing I didn't forget was this special potato gratin that Chef John Schenk taught me how to make 10 years ago at his restaurant Strip House. Not only is it the soul mate of steak, but it's also a great side dish for big holiday gatherings since you can make it the day before and bake when needed.

1 teaspoon butter, or as needed
3 large russet potatoes, scrubbed
2 shallots
3 teaspoons kosher salt
½ teaspoon freshly ground white pepper
1 pinch cayenne pepper, or to taste
2 ½ cups grated sharp white Cheddar cheese
1 ¾ cups sour cream

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a casserole dish.
  • Wrap each potato in foil and place on a baking sheet. Poke holes into potatoes using a knife.
  • Bake in the preheated oven until very tender and easily pierced with a knife, about 1 hour and 15 minutes.
  • Let potatoes cool to room temperature, at least 20 minutes. Unwrap. Cover with plastic wrap and refrigerate until completely chilled, 8 hours to overnight.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Shred potatoes into a large bowl using a cheese grater. Mince shallots to get 1/4 to 1/3 cup.
  • Add shallots in with the potatoes; season with salt, white pepper, and cayenne. Toss with two forks until well combined. Add Cheddar cheese and mix well. Gently toss in sour cream until barely combined. Transfer mixture into the prepared baking dish, piling it up high, then patting it down very lightly.
  • Bake in the preheated oven until piping hot and top is browned, 30 to 35 minutes.

Made simply with sliced potatoes, heavy cream, and grated cheese, potatoes au gratin is the ultimate comfort food.

Butter to grease the baking dish
2½ pounds Russet potatoes (3 to 4), peeled and sliced very thin
1½ teaspoons salt
¼ teaspoon freshly ground black pepper
1 cup (4 oz) finely grated Parmigiano-Reggiano
2¼ cups heavy cream
Fresh thyme, for serving (optional)

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease an 8-inch (or 2-quart) baking dish with butter.
  • In a large mixing bowl, toss the potatoes with the salt and pepper until evenly coated.
  • Arrange some of the potato slices, edges overlapping, in a single layer on the bottom of the prepared baking dish. Sprinkle a quarter of the cheese over the potatoes, and then pour a quarter of the cream over the cheese. Repeat with the remaining potatoes, cheese, and cream, forming 4 layers. Pour any leftover cream over top.
  • Place in the oven and bake, uncovered, for 60 to 75 minutes, or until the potatoes are tender when pierced with a knife and golden brown on top. Let the dish settle on the counter for about ten minutes. Sprinkle with fresh thyme, if using, and then serve.
  • Make Ahead: This dish can be assembled a day ahead; cover tightly with plastic wrap (pressing the wrap directly against the potatoes so they don't discolor), store in the refrigerator, and bake before serving. The potatoes on top will still discolor a bit in the fridge, but it shouldn't be noticeable after baking.

5 garlic cloves, divided
1 tablespoon unsalted butter, room temperature
2 medium shallots, quartered through root ends
2 1/2 cups heavy cream
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon thyme leaves, plus more
4 pounds russet potatoes, scrubbed, very thinly sliced on a mandoline
3 ounces Gruyere, finely grated
1 ounce Parmesan, finely grated

Steps:

  • Preheat oven to 325°F. Cut 1 garlic clove in half and rub the inside of a 3-qt. shallow baking dish with cut sides. Smear butter all over inside of dish. Bring shallots, cream, salt, pepper, 1 Tbsp. thyme, and remaining 4 garlic cloves to a simmer in a small saucepan over low heat; cook until shallots and garlic are very soft, 15-20 minutes. Let cool slightly. Transfer to a blender; blend until smooth.
  • Arrange potato slices in prepared dish, fanning out a handful at a time and placing in dish at an angle (this ensures every scoop will have tender potatoes from the bottom and crisp edges from the top). Shingle as you work until bottom of dish is covered. Tuck smaller slices into any gaps to fill. Pour cream mixture over potatoes and cover dish tightly with foil. Bake potatoes until tender and creamy, 60-75 minutes. Let cool.
  • Place rack in highest position; heat broiler. Remove foil and top potatoes with Gruyere and Parmesan. Broil until cheese is bubbling and top of gratin is golden brown, 5-10 minutes. Serve topped with more thyme leaves.
  • Do ahead
  • Gratin can be baked 1 day ahead. Cover and chill. Bring to room temperature before broiling.

4 medium russet potatoes
1/2 cup milk
1 cup heavy cream
1 1/2 tsp all purpose flour
1 large garlic clove (minced)
1/4 tsp salt
1/8 tsp pepper
1 tbsp butter (softened)
1 1/2 cups cheddar cheese

Steps:

  • Cut potatoes into 1/4 inch slices, then quarter each of those. Beat together the cream, milk, flour, garlic, salt and pepper by hand just until well combined.Coat the inside of a large baking dish with softened butter. Arrange 1/4 of the potatoes on the bottom of the dish; pour some of the cream mixture over the potatoes. Repeat this layering step 3 more times.Cover the potatoes and bake in a preheated 400º oven for 20 minutes. Uncover and bake another 40 minutes or until the potatoes are starting to brown on top. Sprinkle grated cheese over the top of the potatoes and continue to bake for 5 to 10 minutes or until the cheese is melted and slightly browned and the potatoes are tender.

four russet potatoes, baked
1/2 cup sour cream
1/4 cup milk
four strips good-quality bacon, cooked and chopped
3/4 cup shredded sharp cheddar cheese, divided
2 tablespoons dried chives
2 teaspoons salt
1/8 teaspoon ground white pepper
1/2 cup bread crumbs
3 tablespoons melted butter

Steps:

  • 1. peel and dice potatoes to roughly 1/2 to 3/4 inch cubes. In a medium bowl, mix the sour cream, milk, bacon, 1/2 cup cheddar, chives, salt and pepper. Fold in the potatoes until well coated. Put in a 8 inch square baking dish.
  • 2. In another bowl, mix the bread crumbs, melted butter and remaining cheddar cheese. Sprinkle on top of the potatoes. Put uncovered in the center rack of the oven and bake at 325° for 35 minutes.

I decided on a steakhouse dinner of a thick sirloin on the grill, wedge salad with creamy, homemade blue cheese dressing, yeast rolls, sauteed spinach with lots of garlic and au gratin potatoes. Our friends brought the wine...Cyrus, Stag's Leap, we have great friends!

3 lbs potatoes
2 -4 tablespoons unsalted butter
2 cups gruyere, grated
1 1/2 cups half-and-half
kosher salt
freshly cracked black pepper
2 teaspoons thyme
1 teaspoon nutmeg, freshly grated

Steps:

  • Preheat the oven to 375 degrees.
  • Peel and dice the potatoes. *I have a vegetable chopper from Williams-Sonoma and this step only takes 5 minutes.
  • Parboil the potatoes 5 minutes in salty water.
  • Either spray a large baking dish with oil or rub it lightly with butter.
  • Drain and then toss the potatoes in the baking dish with the butter, thyme, nutmeg, more salt and pepper.
  • Mix almost all the cheese (save some for the top) throughout the potatoes and pour the half & half evenly over all.
  • Top the dish with the reserved cheese.
  • Bake for one hour or until the cheese is nicely melted, bubbling and turning a caramel color.
