Steps:
- Heat butter and olive oil in a large skillt over medium heat until butter is melted.
- Add onions; stir to coat with butter/oil.
- Cover and cook 10 miutes or until onions have wilted; stirring occasionally.
- Remove cover, increase heat to medium-high.
- Sprinkle with sugar; stir to combine.
- Cook 25-30 minutes or until onions are deep golden brown, stirring frequently
- If necessary, reduce heat to medium to keep onions from sticking.
- Stir in 1/2 tsp salt and 1/4 tsp pepper.
- *Onions can be made 3 days ahead and refrigerated or 1 month ahead and frozen*.
- Place potatoes in large saucepan; add enough water to cover potatoes by 1 inch.
- Add 2 tsp of the salt.
- Bring to a boil over medium-high heat.
- Reduce heat to medium-low to low; simmer 12 minutes or until potatoes are tender when pierced with a fork; drain.
- Return to saucepan; cover to keep warm.
- Microwave milk and 2 Tbs butter for 30-60 seconds or until butter is melted and milk is hot.
- Reheat caramelized onions over medium heat until hot.
- Press potatoes through potato ricer into medium bowl or mash with potato masher.
- Stir in milk/butter until potatoes are creamy.
- Stir in caramelized onions, remaining 1 tsp salt and 1/4 tsp pepper.

- Place 2 tablespoons of butter and chopped onions in large skillet over medium-low heat. Cook slowly, stirring occasionally until golden in color and fragrant. Add quartered potatoes to a large pot filled with salted water. Bring to a boil, then cover and turn to low. Cook until fork-tender, about 10 minutes. Drain potatoes and add to large bowl with sour cream, onions and the rest of the butter. Mash with potato masher or with an electric mixer until desired consistency is reached.

- Place potatoes in a saucepan and cover with water; bring to a boil. Cook until very tender, about 20-25 minutes. , Meanwhile, in a skillet over low heat, cook onion and sugar in butter until golden, stirring frequently. Drain and mash the potatoes. Add milk, salt and pepper. Stir in onion mixture. Garnish with parsley if desired.

There is no milk or butter in these mashed potatoes - but they are VERY flavourful because of the caramelized onion and extra virgin olive oil. This is based on a recipe I tried from epicurious.

- Place potatoes in heavy large pot. Cover with cold water. Boil over medium-high heat until potatoes are tender when pierced with fork, about 40 minutes. Drain, reserving 1 1/2 cups potato cooking liquid. Return potatoes to dry pot. Stir over medium heat until any excess liquid evaporates. Add 4 tablespoons olive oil and mash until almost smooth. Mix in enough potato cooking liquid as needed to moisten. Stir in caramelized onions. Season to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm over medium heat, adding more reserved cooking water as needed to moisten.).
- To caramelize onions: Add 3 tablespoons olive oil to a saucepan and add onions. Saute over medium-high heat until onions are starting to caramelize 10-12 minutes. Add the garlic for the last minute of cooking. If you like your onions darker, saute them slightly longer (or if you like them lighter, diminish the saute time).
- Note: A couple of tablespoonfuls of parmesan stirred into these potatoes is a lovely thing!

- Melt 1 tablespoon butter in a medium nonstick skillet over medium-high heat.
- Add onion and sugar; sauté 10 minutes or until caramelized.
- Remove from heat and stir in vinegar if desired.
- Place potatoes in a saucepan and cover with water.
- Bring to a boil; reduce heat and simmer for 15-20 minutes or until tender.
- Drain and return potatoes to pan.
- Add 3 tablespoons butter and milk; mash to desired consistency.
- Cook 2 minutes or until thoroughly heated through, stirring constantly.
- Combine Dijon mustard and remaining ingredients in a small bowl, stirring with a whisk until blended.
- Add Dijon mustard mixture and caramelized onion mixture to potato mixture, stirring to combine.
- Serve.

CARAMELIZED ONION & GORGONZOLA MASHED POTATOES
I love this recipe! It came from Southern Living magazine and is one of my family's favorite. It takes a little bit of time to prepare and cook but is well worth the effort. Very unique taste with the gorgonzola and the sweetness of the onions. Enjoy!

Steps:
- Bring potato, 1 teaspoon salt, and water to cover to a boil in a Dutch oven; cook 20 to 25 minutes or until tender.
- Drain and keep warm.
- Melt 2 tablespoons butter with oil in a skillet over medium heat; add onion, and cook, stirring often, 12 to 17 minutes or until tender.
- Add garlic, and cook 3 minutes.
- Stir in rosemary; remove from heat.
- Mash potato with a potato masher; stir in 1/2 cup butter, half-and-half, and cheese until blended.
- Stir in onion mixture, remaining 3/4 teaspoon salt, and pepper.
- Spoon enough mixture into a decorative, ovenproof dish or 13- x 9-inch baking dish to fill bottom; pipe or dollop remaining mixture over top.
- Broil, 3 inches from heat, 5 minutes or until top is lightly browned.
- Garnish, if desired.
