STEAK WITH BLUE CHEESE DRESSING



Steak with Blue Cheese Dressing image

Number Of Ingredients 9

8 oz blue cheese, crumbled
1 garlic clove, finely chopped
2 Tbsp dry white wine
1 dash(es) ground red pepper
2 Tbsp butter
4 small new york strip, 1 inch thick
1 dash(es) freshly ground black pepper
1/4 c water
1 parsley for garnish

Steps:

  • 1. Cook and stir cheese, garlic, wine and red pepper over low heat, stirring frequently, until cheese is melted.
  • 2. Keep warm.
  • 3. Heat butter in 12-inch skillet until hot.
  • 4. Cook beef steaks over medium-high heat, turning once, until medium doneness, about 5 minutes on each side.
  • 5. Sprinkle with pepper.
  • 6. Remove from skillet and keep warm.
  • 7. Add water to skillet.
  • 8. Heat to boiling, stirring constantly to loosen browned bits.
  • 9. Boil 2 minutes.
  • 10. Stir pan juices into cheese mixture.
  • 11. Pour over steaks.
  • 12. Sprinkle with parsley.

MORTON'S BLUE CHEESE DRESSING



Morton's Blue Cheese Dressing image

From the legendary Morton's Steak House. Simply amazing Blue Cheese Dressing. As much as I love to lighten things, this just isn't the same using light ingredients. This calls for Durkee's Famous Sauce, if you can't locate Durkee's, I have another recipe for a similar sauce called Mustard-Mayonnaise Sauce. Cook time includes overnight chilling.

2 cups mayonnaise (not Miracle Whip)
1 cup sour cream
2 tablespoons sour cream
1/4 cup buttermilk
1 teaspoon Durkee's sauce (sold in the condiment aisle or with the dressings)
1/2 teaspoon seasoning salt
7 ounces blue cheese, crumbled (about 1.5 C)
salt and pepper

Steps:

  • In a large mixing bowl, whisk together the mayonnaise and sour cream.
  • Add the buttermilk, Durkee sauce, and seasoned salt.
  • Whisk until well mixed.
  • Season to taste with salt and freshly ground black pepper and whisk again.
  • Using a rubber spatula, gently fold in the blue cheese.
  • Transfer to a storage container with a tight-fitting lid and refrigerate for at least a day and up to four days.

1 tablespoon 2% milk

1/4 teaspoon pepper
1/8 teaspoon garlic powder

Steps:

  • In a small food processor, combine all ingredients; cover and process until blended. Transfer to a small bowl. Cover and refrigerate until serving.

1 dash fresh ground black pepper (1 good twist)

1 teaspoon garlic powder or 1 teaspoon garlic salt

Steps:

  • Mix all the ingredients together by hand in a large bowl until smooth and creamy.
