BEEF FILLET STRIPS WITH TOMATOES, PEPPERS, AND ONIONS



Beef Fillet Strips with Tomatoes, Peppers, and Onions image

Number Of Ingredients 13

1 1/2 pounds boneless lean beef, such as beef sirloin, tri-tip, or top round
3 teaspoons olive oil or vegetable oil
1 teaspoon Maggi seasoning extract or Worcestershire sauce
1 clove garlic (medium), minced
1 large white onion, coarsely chopped
4 medium tomatoes, peeled and coarsely chopped, or 1 (14-ounce) can diced tomatoes, drained
3 , Anaheim or poblano chile kimmy, , roasted and peeled

1 , serrano chile kimmy, , finely chopped with seeds
1/2 teaspoon dried thyme
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground pepper, or to taste
1/4 cup loosely packed chopped fresh cilantro

Steps:

  • 1. Prepare the chiles. Then, cut out the stem and cut open the chiles to remove the seeds and ribs. Cut the chiles into strips, then into 3/4-inch pieces. Reserve. Trim the meat of fat, and cut the meat into thin slices, then into 1-inch pieces. Put the meat into a bowl, and toss with half of the oil, the Maggi, and garlic. Let stand about 20 minutes. 2. In a large skillet, heat the remaining oil until hot. Add half of the beef, in a single layer, and stir-fry until browned, 3 to 4 minutes. (Don't overcook, or the beef will be tough.) Remove the meat to a bowl, and brown the remaining meat. Add to the first batch of meat and set aside. 3. In the same skillet, cook the onion over medium-low heat until it begins to brown, about 5 minutes. Add the tomatoes, chiles, thyme, and 2 tablespoons of water. Raise heat to medium and cook, stirring frequently, until the tomatoes soften 4 to 5 minutes. Add the meat and the juices from the bowl. Season with salt and pepper. I enjoy the blend of green chile and cheese. In this recipe it takes your steak south of the border for an authentic Mexican Steak. No visa or passport required!

2 -3 thin sliced quality cuts steak
seasoning salt
1 small onion (minced)
2 roma tomatoes (chopped)
2 cloves garlic (chopped)
2 (4 ounce) cans whole roasted green chili peppers (not chopped)
1 tablespoon olive oil
2 -3 slices monterey jack pepper cheese or 2 -3 slices white Mexican blend cheese (sliced length wise)

Steps:

  • Heat olive oil in pan.
  • Sautee onion, garlic and tomato for 3 minutes or until tender.
  • Set mixture aside.
  • Preheat oven to broil.
  • Cut green chile into long strips and set aside.
  • Sprinkle seasoning salt on both sides of steak.
  • Broil steaks (I broil the thin cuts 3-4 minutes) on one side.
  • Remove from oven and place mixture of tomato, onion and garlic evenly on unbroiled side of steaks.
  • Top with 2-3 strips of green chile.
  • Next,place a slice of cheese on top of each steak (you will cover mixture and green chile strips with cheese slice.) Broil until steak is done and cheese is melted (about 3 minutes).
  • Serve and enjoy!

3 teaspoons Yucatán Green Seasoning Paste
2 teaspoons fresh lime juice
1 teaspoon olive oil plus extra to oil the grill
1/4 teaspoon salt
4 (6- to 7-ounce) New York or rib-eye beef steaks, 3/4-inch thick

Steps:

  • 1. In a small bowl, mix the seasoning paste, lime juice, olive oil, salt, and pepper. Trim the fat from the steaks and spread both sides with a thin coat of the seasoning paste. Put the steaks on a plate and let season about 1 hour. 2. Meanwhile, prepare an outdoor grill and brush the grill with oil. When the coals are hot, brush a bit more oil on the steaks to prevent sticking, and place the steaks on the grill. Cook about 4 to 5 minutes per side, or until browned on the outside and still pink and juicy inside for medium rare or adjust time for desired doneness. Serve at once.From "1,000 Mexican Recipes."
