STEAK BURRITOS WITH CHILI LIME SAUCE

Burritos are easy to make during the week, and they can be customized with your favourite toppings.

Number Of Ingredients 20

1 tablespoon peppercorns
2 tablespoon coriander seeds
1 teaspoon red pepper flakes
1 tablespoon brown sugar
2 teaspoon salt
1/2 teaspoon ground cumin
1 tablespoon lime juice
2 tablespoon olive oil
1 pound sirloin tip steak or skirt steak
4 tablespoon sour cream
1/2 teaspoon chilli powder
1 1/2 teaspoon lime juice
zest of half a lime
1 pound sirloin tip steak
1 package of Dempster's Flour Tortillas
1 can refried beans
1 can black beans
2 cups of cooked rice
shredded cheddar cheese (or your favourite cheese)
Cooked steak (cut into thin slices)

Steps:

  • Toast the peppercorns, coriander seeds and red pepper flakes in a small pan until fragrant.
  • Crush the spices using a mortar and pestle, or with the back of a heavy pan on a cutting board.
  • Combine the toasted spices in a bowl with the sugar, salt, cumin, lime juice and oil.
  • Place the steak into a zip-top bag and cover with the spice mixture. Marinate in the fridge for 30 minutes.
  • Combine all ingredients in a bowl, adjusting seasonings to your personal preference. Cover the bowl and place the sauce in the fridge until ready to serve.
  • Add some oil to a medium pan and cook the steaks for 2-4 minutes per side, or to your liking. Allow the steaks to rest for a few minutes before slicing them into thin pieces, cutting against the grain.
  • Heat the refried beans, either on the stovetop or in the microwave, and set aside.
  • Wrap the tortillas in tin foil and heat in the oven, or just warm them in the microwave.
  • Spread each tortilla with the refried beans, add the toppings you want, then add a dollop of the chilli lime sauce.
  • Fold your tortilla and serve with salsa, plain sour cream, guacamole or other sauces for dipping.

pico de gallo, or salsa of your choice
4 corn tortillas
1 ripe avocado
⅓ cup fresh cilantro
3 tablespoons lime juice
⅔ cup water
salt, to taste
1 ½ teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 clove garlic, minced
2 tablespoons lime juice, or 1 lime

Steps:

  • Place the avocado, cilantro, lime juice, water, and salt in a blender or food processor. Blend until smooth and set aside.
  • In a small bowl, combine the chili powder, cumin, oregano, salt, pepper, garlic, and lime juice.
  • Rub the chili lime rub all over the steak in a thin, even layer.
  • Grill the steak on either a grill or stove-top grill pan. To get the "X" grill marks, sear the steak for 1 minute, then adjust about 90 degrees and grill for another minute. Flip the steak when you've achieved desired grill marks and repeat the process on the other side.
  • Allow the steak to rest for 5-10 minutes once taken off the heat.
  • Slice the steak thinly, against the grain of the meat.
  • Prepare the tacos by topping the corn tortillas with a few strips of meat, salsa, the avocado cilantro lime sauce, and cilantro, and serve.

2 tablespoons soy sauce
2 scallions (about 1/3 cup), thinly sliced

This chili lime sauce is a great side sauce for dipping everything from pork kebabs and chicken tenders, to topping fajitas.

2 small green serrano chiles , seeded, finely chopped
1/2 cup freshly squeezed lime juice
2 tablespoons lime zest , from 2 limes
1/3 cup chicken stock
1/4 cup fresh cilantro
2 to 3 cloves garlic, quartered
1 teaspoon sugar
1 teaspoon salt
A pinch freshly ground black pepper

Steps:

  • Gather the ingredients.
  • Place all ingredients into a food processor blender. Blend mixture well.
  • Bring sauce to a simmer over medium-high heat for 1 to 2 minutes. Reduce heat to low and let simmer for 5 more minutes. Stir occasionally. Remove from heat and let cool 5 to 10 minutes before serving.
  • Follow the above directions, if using as a marinade, but let the sauce cool for 30 minutes before using. Marinade beef for 6 to 12 hours, chicken and pork for 4 to 6 hours, fish, seafood, and vegetables for 30 minutes.
  • Make this sauce ahead of time and store in an airtight container in the refrigerator for up to one week after preparation.

My husband LOVES Key Lime Pie. After a recent trip to Florida, he got a hankering for some, so luckily I found Recipe #161578 Kelly's Rich & Creamy Key Lime Pie which is just delicious and easy to make. But DH wanted me to drizzle a key lime sauce over the pie. So here is a recipe I found that, if desired, goes great with Peacefulnightdove's recipe. This would also be good drizzled over bread pudding, among other things.

1 tablespoon cornstarch
1/2 cup granulated sugar, plus
1 tablespoon granulated sugar
1/2 cup key lime juice
1/4 cup water, plus
3 tablespoons water

Steps:

  • In a small bowl, dissolve the cornstarch in the 3 tablespoons of water.
  • In a small non-aluminum saucepan stir together the sugar, the lime juice and 1/4 cup of water. Bring to a boil over moderate heat to dissolve the sugar.
  • Stir in the cornstarch mixture and boil, stirring, for about 30 seconds or until the lime sauce thickens.

For me, a steak is a steak - this is really all about the sauce. Let your tongue be your guide - the malagueta pepper is a very hot pepper. It has a range of 60,000 to 100,000 Scoville units, about the same as a tabasco or a Thai pepper. By comparison, its lowly jalapeño cousin only rates between 2,500 and 10,000 Scoville units in heat. Either way, remember to wash up after handling them! Be prepared for fragrant breath after this meal as garlic and onion are present in abundance. You may even enjoy the smell again in a hot shower the next morning as is oozes through your pores. ;-)

1/2 bunch italian fresh parsley leaves, rough chopped
3 limes, juice of
4 sirloin steaks, 1 1/2-inch thick

1/3 cup dry red wine
1 small onion, finely chopped
4 garlic cloves, finely chopped
2 teaspoons dried oregano
1 bay leaf
1 teaspoon coarse salt
1 teaspoon fresh ground black pepper

Steps:

  • SAUCE: Place the peppers and salt in a mortar and crush them with the pestle or take the less energetic way and process them in a blender or food processor until you have a thick paste.
  • Gradually add the onion and garlic and continue to mash into the paste.
  • Then add the parsley to the paste, mashing as you do.
  • Stir in the lime juice until you have a thick,liquid sauce.
  • Cover and let stand at room temperature.(Makes about 1/2 cup).

  • STEAKS: Place the steaks in a single layer in a large glass or ceramic baking dish.
  • Whisk the remaining ingredients together in a bowl and pour over the steaks, turning to coat evenly.

1/4 cup fresh Key lime juice
3 tablespoons Asian fish sauce
3 tablespoons water
2 tablespoons sugar
1 large shallot, thinly sliced
1 fresh serrano chile, chopped (about 2 teaspoons; including seeds)
Accompaniment: steamed rice

Steps:

  • Preheat broiler.
  • Pat steak dry and season with 1 teaspoon salt and 1/2 teaspoon pepper. Broil on a broiler pan 4 to 6 inches from heat, turning once, about 6 minutes total for medium-rare. Transfer steak to a cutting board and let rest 5 minutes before slicing.

1/2 dried New Mexico chili*
1 large plum tomato
1 cup water
4 tablespoons olive oil
6 garlic cloves, chopped
1 cup (or more) chicken stock or canned low-salt chicken broth
1 cup beef stock or canned beef broth
2 cups dry red wine
2 tablespoons (1/4 stick) butter
1/2 teaspoon minced fresh rosemary
4 6- to 7-ounce beef tenderloin steaks (about 1 inch thick)

Steps:

  • Place both chilies and plum tomato in heavy medium skillet. Toast over medium-high heat until chilies are fragrant and deepen in color and tomato turns black in spots, turning occasionally, about 5 minutes. Remove from heat. Cool. Stem, seed and tear chilies into small pieces. Chop tomato. Place chilies, tomato and 1 cup water in small saucepan. Bring to boil. Reduce heat and simmer until chilies are tender, about 10 minutes. Puree chili mixture in blender until smooth.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add garlic and sauté 1 minute. Add 1 cup chicken stock and beef stock, then wine; boil until reduced to 1 cup, about 15 minutes. Stir in chili puree, butter and rosemary; simmer 1 minute. Season sauce to taste with salt and pepper. (Sauce can be prepared 1 day ahead. Cover and refrigerate.)
  • Heat remaining 1 tablespoon oil in large nonstick skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and cook to desired doneness, about 4 minutes per side for medium-rare.
  • Bring sauce to simmer, thinning with more chicken stock if necessary. Place 1 steak on each of 4 plates. Top each with 1/4 cup sauce. Serve, passing remaining sauce separately.
