BEER-BRAISED BEEF

Beer-Braised Beef image

Provided by Nancy Fuller

Categories     main-dish

Time 5h30m

Yield 6 servings

Number Of Ingredients 14

One 3-pound brisket, first cut
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
6 cloves garlic, smashed
1 large yellow onion, roughly chopped
3 medium carrots, cut into 1-inch pieces
3 ribs celery, cut into 1-inch pieces
4 sprigs fresh thyme
2 sprigs fresh rosemary
1 bay leaf
2 tablespoons tomato paste
1/4 cup apple cider vinegar
3 cups chicken stock
Two 12-ounce bottles brown ale

Steps:

  • Preheat the oven to 325 degrees F and adjust a rack to the lower third of oven.
  • Remove the brisket from the refrigerator and let rest for 1 hour to come up to room temperature.
  • Pat the brisket dry and sprinkle it generously on both sides with salt and pepper. Heat the oil in a Dutch over or braising pot set over medium-high heat. Sear the brisket in the oil until well browned, about 4 minutes. Carefully flip and sear on the reverse side for another 4 minutes. Remove the brisket to a plate.
  • To the pot, add the garlic, onions, carrots, celery, thyme, rosemary and bay leaf. Saute until golden, about 8 minutes. Stir in the tomato paste and cook for 2 minutes. Add the vinegar, chicken stock and beer, and bring to a simmer, scrapping up any bits that are stuck to the bottom of the pan.
  • Nestle the brisket into the pot, making space between the vegetables, and cover with a tight-fitting lid. Place in the oven and cook for 3 1/2 hours, or until fork tender. Let rest for 15 minutes before slicing thinly against the grain.
  • Serve on a platter along with the vegetables and any extra braising liquid as a sauce.

BEER-BRAISED BEEF AND ONIONS

Beer-Braised Beef and Onions image

This hearty, warming beef and onion stew is flavored with Belgian beer, bay leaves and sweet paprika. A variation on a traditional Flemish carbonnade, it's rich and homey but still lively, with a ruddy color from the paprika. The very large quantity of onions adds sweetness, and also helps make the sauce velvety soft. Serve it over potatoes, noodles or polenta.

Categories     dinner, soups and stews, main course

Time 3h30m

Yield 8 to 12 servings

Number Of Ingredients 18

1 tablespoon kosher salt, more as needed
1 teaspoon black pepper, more for garnish
6 bay leaves
2 teaspoons sweet paprika, more for garnish
4 pounds boneless beef stew meat, cut into 1 1/2-inch chunks
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil, more as needed
4 Spanish or very large yellow onions, thinly sliced
6 sprigs fresh thyme
4 sprigs fresh parsley, plus chopped parsley, for garnish
1 tablespoon tomato paste
1 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
2 cups beef or chicken stock, preferably homemade
1 cup beer, preferably Belgian-style or brown ale
Flaky sea salt, for garnish
Dijon-style mustard, preferably extra-hot, for serving

Steps:

  • In a large bowl, combine salt, pepper, bay leaves and paprika. Toss meat to coat, then cover, refrigerate and marinate at least 2 hours or overnight.
  • Heat oven to 325 degrees. In a large (8-quart) Dutch oven or other heavy pot, heat butter and oil over medium-high until shimmering. Working in batches, brown beef on two sides until dark and crusty, transferring to a bowl when browned (reserve bay leaves). As you cook, add more oil and adjust heat if necessary to prevent burning.
  • When all the meat is browned, add onions to the empty pot and return the heat to medium-high if you lowered it. Cook, stirring and scraping up the brown coating on the bottom of the pan as the onions release their liquid.
  • Continue cooking until onions are deeply golden brown and soft, 20 to 30 minutes, stirring occasionally.
  • Meanwhile, make a bouquet garni by tying thyme, parsley and reserved bay leaves together with kitchen string (or just throw them in the pot and warn your guests not to eat them).
  • Push the onions to the sides, then add tomato paste, coriander and cinnamon to the bottom of the pan. Cook, stirring, 1 minute, until paste is darkened and fragrant. Stir in flour, cook another minute, then add stock, beer, 1 cup water and bouquet garni. Return beef and any juices in the bowl to the pot, bring to a simmer, then cover and transfer to oven. Cook until beef is tender, about 2 1/2 to 3 hours, turning it over halfway through.
  • If the sauce seems thin, remove the meat with a slotted spoon; cover with foil to keep warm. Return pot with liquid to stove and simmer until thickened to taste, 5 to 10 minutes. Return the meat to pot and stir to heat through. Serve from the pot or a platter. Garnish with chopped parsley, flaky sea salt, pepper and paprika. Serve with mustard on the side.

BEER BRAISED BEEF WITH ONIONS

Beer Braised Beef with Onions image

"Beer Braised Beef with Onions - just the name makes me feel warm and satisfied. Slow-braised goodness with a deep rich stock served over mashed potatoes or egg noodles. It's so easy to make, most of the time is hands-off and smelling the wonderful aromas in your kitchen will whet your appetite and set your mouth to watering."

Provided by LindySez

Categories     Beef     Main Course

Time 2h30m

Number Of Ingredients 12

2 pounds beef chuck (cut into cubes, visible fat removed)
2 tablespoons extra virgin olive oil
1 pound onions (thinly sliced (this is about 2 large))
4 tablespoons flour
2 tablespoon unsalted butter
2 tablespoon white wine vinegar*
12 ounces dark beer (I like a stout or porter*)
1 cup beef broth*
1 teaspoon dried thyme
2 bay leaves
Salt and freshly ground pepper
1 tablespoon dark brown sugar

Steps:

  • Heat oven to 325º F
  • Toss the beef with salt and pepper; in a large pot or Dutch oven, (best not to use non-stick) heat the oil over medium-high heat; add the beef, in batches and saute until well browned. Remove with a slotted spoon and set aside.
  • After the last batch of meat is mostly browned, add the onions, along with the meat that has already been cooked and any accumulated juices; and sauté until the onions are translucent and just beginning to brown. Lower the heat; add the butter along with the flour, stir and cook stirring often, for 5 to 7 minutes.
  • Continue to stir while slowly adding the beer, beef broth, vinegar, and thyme; scraping the browned bits from the bottom of the pan. Once the sauce is smooth and just starting to thicken, add the bay leaves along with salt and pepper to taste.
  • Sprinkle the brown sugar over the top. Cover and cook in the oven for 2 hours. Serve over mashed potatoes, egg noodles, pasta or rice.
  • *If cooking in a pressure cooker, use only 1 tablespoon vinegar, 6 ounces of beer, and 4 ounces of beef stock. Bring to a simmer; cover and bring to pressure. Lower heat and allow to cook for about 40 minutes. Turn off heat and allow pressure to release naturally. If using your slow-cooker (crockpot); again, use only half of the liquids; place the ingredients, once browned, into your slow-cooker and cook on high 4 hours or low 6 - 8 hours (or according to your manufactures directions.

BRAISED PORK STEAK WITH ONIONS (OVEN)

Braised Pork Steak with Onions (Oven) image

Our braised pork steak with onions is fork tender and flavorful. In this simple recipe slow cooking in moist heat creates a dish so comforting that it can easily become a family favorite. No knives needed - the pork shoulder falls apart under the pressure of a fork.

Provided by CraftBeering

Categories     Cooking Tips and How Tos

Time 2h10m

Number Of Ingredients 11

4 pork steaks, just over 1 inch thick and about 6 oz each
salt & pepper for seasoning*
1 tbsp olive oil
3 onions**, sliced
1 tbsp tomato paste (heaping)
1 tbsp chipotles in Adobo sauce***
12 oz stout ale (or porter or brown ale)****
2 cups stock (pork or beef)
1 tbsp dark brown sugar
2 tsp cumin, ground
5-6 sprigs fresh thyme (or 1 tsp dried)

Steps:

  • Heat the oven to 300 F. Trim any excess fat from the periphery of the steaks (optional) and season them liberally with salt and pepper.
  • Heat a braiser over medium-high (or a skillet if you will be braising in a roasting pan), add the olive oil and sear the seasoned pork shoulder steaks on each side, working in batches of 2. Set aside, lower the heat to medium.
  • Add the onions and sauté until translucent, 4-5 minutes. Add the tomato paste and chipotle in Adobo and stir them into the onions. Cook about 1 minute. Deglaze with the stout (or stock or wine) and be sure to scrape all the brown bits from the bottom of the braiser/skillet.
  • Add the brown sugar, cumin, thyme and all the stock. Stir to combine, place the pork steaks on top and cover with the braiser lid (or transfer everything to a roasting pan, place the steaks on top and tightly cover with 2 layers of foil so no moisture escapes). Place in oven and braise for 1.5 hours.
  • After 1.5 hours check the pork for tenderness by pressing on it with a fork. If tender enough to your liking, braise uncovered for an additional 10-15 minutes for an appetizing finish. If not tender enough, cover and braise a bit longer until satisfied (add a bit of water if liquid is really low).
  • Serve garnished with a bit of finely chopped parsley of fresh picked thyme leaves.

Time 40m

Yield 4 servings

Number Of Ingredients 12

2 slices bacon, chopped
2 tablespoons extra-virgin olive oil
1 large onion, halved and thinly sliced
3 sprigs thyme
Kosher salt and freshly ground pepper
1 12-ounce bottle brown ale
1/2 cup low-sodium beef broth
6 ounces extra-wide egg noodles
1/2 cup frozen peas
2 tablespoons unsalted butter
4 cube steaks (about 1 1/4 pounds)
2 tablespoons chopped fresh parsley

Steps:

  • Cook the bacon in a large nonstick skillet over medium-high heat, stirring occasionally, until crisp, about 6 minutes. Add 1 tablespoon olive oil, then add the onion and cook until softened, about 3 minutes. Add the thyme sprigs, 1/2 teaspoon salt and a few grinds of pepper and cook until the onion is lightly browned, about 5 more minutes. Add the beer, reduce the heat to medium and simmer until reduced by three-quarters, about 15 minutes. Increase the heat to high, pour in the beef broth and simmer until thickened, about 2 more minutes; season with salt and pepper. Discard the thyme.
  • Meanwhile, bring a pot of salted water to a boil. Add the noodles and cook as the label directs, adding the peas in the last 2 minutes of cooking. Drain and return to the saucepan. Stir in 1 tablespoon butter and season with salt and pepper; keep warm.
  • Season the steaks with salt and pepper on both sides. Heat the remaining 1 tablespoon each olive oil and butter in a large nonstick skillet over medium-high heat. Working in batches, cook the steaks until lightly browned and just cooked through, about 1 minute per side. Serve with the noodles; top with the braised onions and parsley.
