Yield 4 steaks (3 cups sauce).

Number Of Ingredients 9

4 boneless beef top loin steaks (8 ounces each)
1/4 cup all-purpose flour
2 tablespoons canola oil
1 pound sliced mushrooms
2 medium onions, sliced
1 teaspoon minced garlic
1/3 cup white wine
1 can (14-1/2 ounces) beef broth
Salt and pepper to taste

Steps:

  • Sprinkle both sides of steaks with flour. In a large skillet, cook steaks in oil to desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove and keep warm. In the same skillet, saute the mushrooms, onions and garlic until tender, adding additional oil if necessary. Stir in wine. Bring to a boil; boil for 1 minute. Add the broth, salt and pepper. Bring to a boil; boil for 6 minutes or until sauce is reduced by half. For two people, serve two steaks with 1-1/2 cups sauce. Save the remaining steaks and sauce for Steak and Mushroom Soup and Steak Hash (recipes on next page). ,

¼ cup unsalted butter
¼ cup chopped onion
1 (12 ounce) package white mushrooms, stemmed and sliced
¼ teaspoon salt, or more to taste
1 teaspoon freshly minced garlic
¾ cup beef stock
¼ cup dry red wine (such as Cabernet Sauvignon)
1 teaspoon Worcestershire sauce
8 sprigs fresh thyme, or to taste
⅛ teaspoon freshly ground black pepper, or more to taste

Steps:

  • Melt butter in a skillet over medium heat. Add onion and cook until it begins to soften and turn clear, about 4 minutes. Add mushrooms and salt; stir well and cook until mushrooms begin to release their liquid, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Combine beef stock, wine, and Worcestershire sauce in a small measuring cup. Pour into the skillet and stir in thyme sprigs and pepper; bring to a boil.
  • Reduce heat and simmer, uncovered, until liquid has reduced and sauce is slightly thickened, about 15 minutes. Adjust salt and pepper if necessary.

3 cloves garlic, minced
1 ½ pounds beef sirloin
1 (16 ounce) can mushrooms, with liquid
1 (8 ounce) can tomato sauce
salt to taste
freshly ground pepper, to taste
¾ cup red wine

Steps:

  • Cut beef into cubes. In a large skillet over medium/high heat, heat the olive oil and brown beef cubes with the garlic.
  • Add mushrooms with liquid, tomato sauce, salt, pepper and red wine. Cook for 30 minutes or until beef cubes are tender. Add a little more wine while cooking if desired.

1 ½ cups sliced fresh mushrooms
1 small onion, thinly sliced
1 stick butter
1 tablespoon steak sauce
1 teaspoon Worcestershire sauce
salt and ground black pepper to taste

Steps:

  • Heat a large skillet over medium heat. Pour olive oil into the pan. When hot, add mushrooms and onion into the pan; saute until soft, 5 to 7 minutes. Add butter, steak sauce, and Worcestershire; cook until butter melts, about 2 minutes.
  • Reduce heat to low and simmer, uncovered, until everything is really soft, 15 to 20 minutes. Season with salt and pepper. Serve immediately over any type of steak.

  • Heat the butter or oil in a large sauté pan over medium heat. Once hot, add the onions and saute for a few minutes until soft. Add the mushrooms and cook for 8-10 minutes, stirring regularly, or until the mushrooms are tender. Using a slotted spoon, transfer the vegetables to a dish and set aside.
  • Turn the heat to medium-high. Add the steak tips to the pan to sear, and brown all sides, cooking for 7-8 minutes.
  • Combine the flour, salt, pepper, and thyme, and add it to the pan with the beef, stirring to coat. Add the vegetables back to the pan, along with the beef broth, vinegar, and ketchup. Combine well, reduce heat to low, and simmer (covered) for 90 minutes. Test meat for tenderness as that time, and extend if necessary (timing depends on the cut of meat). If the sauce gets too dry, you can add water a tbsp or two at a time until the beef is at the desired tenderness.
  • Serve over cooked cauliflower rice or zoodles (to keep it paleo/AIP), or cooked rice or noodles if you are not eliminating grains. Enjoy!
