STEAK TIPS IN THE OVEN
Steak tips in the oven with a very flavorful steak tip marinade that is best suited for a hearty winter dish but can be enjoyed anytime. Feel free to experiment with the ingredients because I don't think you can really go wrong.

Steps:
- Whisk soy sauce, olive oil, balsamic vinegar, mustard, maple syrup, molasses, sesame oil, cinnamon, cloves, salt, and pepper together in a large glass or ceramic bowl. Add steak tips and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 6 to 24 hours.
- Preheat the oven to 425 degrees F (220 degrees C).
- Remove steak tips from the marinade and shake off excess. Discard the remaining marinade. Put steak tips into a baking dish and fill the bottom of the dish with beef broth.
- Bake in the preheated oven until steak tips are beginning to firm and are hot and slightly pink in the center, about 25 minutes, flipping halfway. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

NEW BRIDGE STEAK TIPS
The New Bridge Cafe in Chelsea, Massachusetts is famous for their steak tips. This recipe was given to me by someone who had a relative that worked there. A lot of people think there is ketchup in the marinade, but it is actually chili sauce. The marinade ingredients must be in equal parts, and you must use regular Coca-Cola, not diet. The sugar in the soda helps tenderize the meat, and also adds flavor.

Steps:
- Mix all marinade ingredients and place in a large zip lock bag with steak tips. Place in refrigerator and marinate for 8 hours or overnight.
- Take meat out off the refrigerator at least an hour before cooking, to reach room temperature.
- Grill, broil or bake to desired doneness.
STEAK "TIPS" MB STYLE
When I was a kid, it was a treat to go to a local steak-house restaurant like Bonanza or Hoss's in Pennsylvania. I always ordered Beef Tips with extra onions, mushrooms, and peppers. Now that I have grown, we do not eat steak often but I have made my version of "Tips" on occasion.

Steps:
- Grind Peppercorns and Coarse Salt in your spice grinder (Coffee Bean Grinder). Rub into the Sirloin Beef and cover tightly in plastic wrap. Allow to sit in the Refrigerator for 1-2 hours.
- Bring a large saute pan to medium-high heat with 2 TBS Olive OIl. Add Bell Pepper and Onion. Cook until translucent. Add Mushrooms. Cook for another 3 minutes, until softened. Remove vegetables from pan and set aside.
- Add 1 TBS additional Olive oil to Pan and bring to high heat. Add sirloin steak. Sear for 1-2 minutes on each side until crusty. Place the pan in a 450 degree oven to finish cooking through desired doneness. Stop at about 5-10 degrees shy of the desired temperature.
- Pull steak off of pan and onto a cutting board. Cover with foil and allow to rest.
- Place the saute pan back on the stove at medium-high heat. Add Butter. Once melted add flour. Whisk vigorously until mixture is golden brown. DO NOT BURN!
- Add garlic, stock, and wine. Whisk vigorously until mixture is boiling. Reduce heat to medium low. Continue whisking as sauce thickens. Season with salt and pepper.
- Slice the steak into thin strips.
- Serve each of four plates by doing the following:.
- *Ladle some sauce into the middle.
- *Add 1/4 vegetable mixture, arrange to appear pretty.
- *Arrange 1/4 steak tips on top of the vegetables.
- *Drizzle additional sauce on top.
- *Sprinkle some fresh chopped parsley on top.
- *Enjoy!
