An astonishingly good recipe for steak with butter, ginger and soy that Mark Bittman picked up from the New York chef Jean Georges Vongerichten and gave to The Times a few years later. It's simple and takes no time to make after work.

1 to 1 1/2 pounds boneless top blade, sirloin or rib-eye, cut into 2 or 4 steaks 3/4 inch thick or less
1 1/2 tablespoons butter
1 tablespoon minced ginger
2 tablespoons soy sauce

Steps:

  • Heat a large, heavy skillet over medium-high heat until it begins to smoke. Add the steaks, and cook until nicely browned, 1 or 2 minutes. Turn, and brown the second side, another minute or two. Remove the skillet from the heat and the steaks to a plate.
  • When the skillet has cooled enough so that no smoke is rising, return it to medium heat. Add butter, and when it melts, add ginger. About 30 seconds later, add soy sauce and stir to blend. Return steaks to the skillet, along with any accumulated juices. Turn heat to medium, and cook the steaks a total of 4 minutes, turning 3 or 4 times. (If pan juices dry out, add a couple of tablespoons of water.) At this point, they will be medium-rare; cook a little longer if you like, and serve, with pan juices spooned over.

2 tbsp olive oil
1/4 cup soy sauce
1/4 cup seasoned rice vinegar
1 tsp grated fresh ginger
1 clove garlic, minced
1 lb steak tips or kabob meat cut into 1-inch pieces

Steps:

  • Whisk together the olive oil, soy sauce, rice vinegar, ginger and garlic. Add the steak tips or kabob meat and mix together. Cover and marinate for at least 1 hour.
  • Cook to desired tenderness.
  • Stir-fry: Heat a skillet with 1 tbsp olive oil over medium heat. Drain the marinade and add the steak tips to the pan. Cook, turning one, until they reach desired doneness -- 7-10 minutes. (good for well-done)
  • Broil: Place on a baking sheet and broil for 3-4 minutes, flip and broil for an additional 3-4 minutes (good for a medium doneness)
  • Grill: Thread on a skewer and grill on a heated grill to desired doneness, flipping once (about 3-4 minutes per side)

2 (8 ounce/ 225 gram) sirloin steaks
Sea salt and freshly ground black pepper
2 pak choy or bok choy (even spinach or any other greens will do)
8 tablespoons soy sauce
1 thumb-sized piece of ginger, peeled
1 chilli, deseeded and finely chopped
1/2 a garlic clove, finely grated
1 lime, juiced
Olive oil

Steps:

  • On a very hot griddle pan, cook your seasoned piece of sirloin steak until medium or to your liking. Place in a plate and allow to rest for 2 minutes.
  • Now cook your greens in salted boiling water until tender.
  • While hot, douse with a good couple of tablespoons of soy sauce, and sprinkle with the garlic, ginger, chilli, lime juice and olive oil.
  • When the greens are cooked, simply divide onto two plates, thinly slice up the sirloin steaks, place on top of the greens and drizzle with any of the infused sauce left on the resting plate.

1/3 cup vegetable oil
3 tbsp soy sauce
3 tbsp balsamic vinegar
2 tbsp honey
2 tbsp minced fresh ginger
2 - 3 cloves garlic (minced)

Steps:

  • Pierce the steaks all over with a fork. I do this so the marinade gets right into the meat.
  • Place the steaks into a large ziplock bag.
  • In a bowl whisk together all of the above ingredients.
  • Pour the marinade over the steaks.
  • Close the bag then massage the bag so the steaks are completely coated in the marinade.
  • Let the steaks marinade in the bag, in the refrigerator for at least 2 hours, but overnight is best.
  • Right before you are ready to grill, give the steaks one last good massage in the marinade.

  • In a large resealable plastic bag, combine 2 tablespoons soy sauce, balsamic vinegar, 1 teaspoon garlic, brown sugar and 1/2 teaspoon ground ginger or 2 teaspoons gingerroot; mix well. Add the beef. Seal bag and turn to coat; refrigerate for at least 1 hour, turning once. In a bowl, combine the cornstarch, broth, ketchup, sherry or vinegar, steak sauce, cayenne and remaining soy sauce until smooth; set aside., In a large nonstick skillet or wok, stir-fry beef in batches in 2 teaspoons hot oil until no longer pink. Remove and keep warm. In the same pan, stir-fry red peppers and onions in remaining oil for 2 minutes. Add the peas and remaining garlic and ginger; stir-fry for 2-3 minutes or until vegetables are crisp-tender. Return beef to the pan. Stir broth mixture and add to the pan. 1/2 cup green onions (cut into 1/2 inch pieces)

Steps:

  • Place the flank steak in a bowl with the cornstarch and toss to coat evenly.
  • Add the flank steak to the slow cooker.
  • Place the sesame oil, garlic, ginger, soy sauce, brown sugar and water in the slow cooker. Stir to coat the meat in the sauce.
  • Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours.

This is a great marinade for steaks, and is wonderful for beef strips for stir-frys.

½ cup soy sauce
¼ cup real maple syrup
6 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon mustard powder
½ teaspoon sesame oil
¼ teaspoon hot pepper sauce
½ cup beer
4 (10 ounce) beef rib eye steaks

Steps:

  • In a medium size mixing bowl, combine soy sauce, maple syrup, garlic, ginger root, mustard powder, sesame oil, and Tabasco sauce; mix well to blend. Now add beer, and stir lightly to mix.
  • Prepare steaks by scoring any fatty outside areas on steak with a knife, (this prevents the steaks from curling when barbecuing). Place steaks in a casserole dish, and pour marinade over. Using a fork, punch holes in steaks so that the marinade penetrates into the steaks. Turn steaks over, and repeat punching holes.
  • Cover with clear wrap or foil, and let marinate in the refrigerator for at least 1 hour or longer. You can also refrigerate and marinate overnight.
  • Prepare and preheat barbecue to high heat. Place steaks directly on grill and sear one side for about 15 seconds. Turn steaks over and cook for about 5 minutes, then turn over and cook for another 5 minutes for medium-rare, depending on thickness. Test for doneness by cutting into the middle of the steak.

3 tablespoons vegetable oil
3 tablespoons toasted sesame oil
3 medium garlic cloves, minced
1 tablespoon fresh ginger, minced
2 tablespoons dark brown sugar
2 tablespoons orange zest, grated
1/2 teaspoon red pepper flakes
1 medium scallion, sliced thin
2 lbs sirloin tip steaks, trimmed of excess fat

Steps:

  • MAKING THE MARINADE:.
  • Combine the soy sauce, oils, garlic, ginger, sugar, zest, red pepper, and scallion in a small bowl.
  • PREPARING THE STEAK TIPS:.
  • Combine the marinade and meat in gallon-size zipper-lock bag; press out as much air as possible and seal bag. Refrigerate 1 hour, flipping bag after 30 minutes to ensure that meat marinates evenly.
  • About halfway through marinating time, turn burners on grill to high, close lid, and heat grill until hot, about 15 minutes.
  • Remove steak tips from marinade and pat dry with paper towels. Grill, covered, until well seared and dark brown on first side, about 4 minutes. Using tongs, flip steak and grill until second side is well seared and thickest part of meat is slightly less done than desired, 4-5 minutes for medium-rare (about 130 degrees on instant-read thermometer) 6-8 minutes for medium (about 135 degrees); if exterior of meat if browned but steak is not yet cooked through, move steak to cooler side of grill and continue to desired doneness.
  • Transfer steaks to cutting board; tent loosely with foil and let rest for 5 minutes. Slice steak very thinly on the bias. Serve immediately with orange wedges.

2 tablespoons soy sauce
1 teaspoon ground ginger
½ teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried basil
1 tablespoon prepared yellow mustard
1 teaspoon lemon juice

Steps:

  • Preheat the oven's broiler.
  • In a small bowl, mix together the soy sauce, ginger, salt, pepper, basil, mustard and lemon juice until smooth. Place the steaks on a broiling pan, and pour 1/4 of the mixture over each one. Massage into the meat.

1 tbsp Olive oil
¼ tsp Kosher salt
½ tsp Black pepper

2 tbsp Rice vinegar
2 tbsp Mirin ((or honey) )
2 tsp Sesame oil
2 tbsp Fresh ginger (thinly sliced)
2 tbsp Fresh garlic (thinly sliced)
2 tbsp Scallions ((green onions) )
1 tbsp Chily flakes (or 1/2 tsp cayenne powder)

Steps:

  • In a small bowl - combine all the tuna steak marinade ingredients - soy sauce, rice vinegar, mirin, sesame oil, sliced ginger & garlic, scallions, and chilly flakes.Pro tip - Use glass or plastic, never metal when marinating. Otherwise, the acid ingredients in the marinade can react with the metal.
  • Place the tuna steaks in the marinade and turn them over a few times to coat well. Leave to marinate for 15 minutes up to an hour. Pro tip - You can marinate the tuna for up to 3 hours in the fridge.
  • Sear tuna steaks - Heat a cast-iron skillet on medium-high heat. Add the olive oil and let the pan become very hot. Place the two tuna steaks in the skillet. Season with kosher salt and black pepper. Pro tip - The pan must be smoking hot this will give a nice sear and color on the tuna.
  • Cook the steak for 1 to 1 1/2 minutes on each side. (medium-rare) Pro tip - You can do up to 2 minutes on each side if you like it less rare. I would not recommend more than 2 minutes.
  • Remove from the pan and let rest for 5 to 7 minutes. Then, slice and garnish with chopped scallions.
  • Serve with plain jasmine rice, a side salad, and a vegetable side dish for a complete meal.
