The Best Easy Beef and Broccoli Stir-Fry image

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

3 tablespoons cornstarch, divided
1/2 cup water, plus
2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
2 tablespoons vegetable oil, divided
4 cups broccoli florets
1 small onion, cut into wedges
1/3 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
hot cooked rice, for serving
toasted sesame seeds, for serving (optional)

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.
  • Serve over rice and garnish with toasted sesame seeds (optional).

320 g tenderstem broccoli
2 x 250 g lean flank steak
2 teaspoons coriander seeds
250 g medium free-range egg noodles
3 teaspoons sesame oil
1 red onion
2 cloves of garlic
6 cm piece of fresh ginger
olive oil
3 tablespoons soy sauce
1 lime
1 fresh red chilli

Steps:

  • Trim the broccoli, cutting any larger broccoli stems in half lengthways, then place in a heatproof bowl and cover with boiling water. Add a good pinch of sea salt and leave for 10 minutes, then drain and put to one side. Half-fill a pan with water and bring to the boil.
  • Slice the steaks against the grain into finger-sized strips and season with sea salt and black pepper.
  • Pound the coriander seeds in a pestle and mortar, or bash with the base of a pan, until fine. Sprinkle over the steak so they stick to it and give it a lovely, fragrant flavour.
  • Drop the noodles into the pan of boiling salted water and cook until just tender. Drain, then toss with 2 teaspoons of sesame oil and return to the pan. Cover to keep warm.
  • Peel and finely slice the onion and garlic, then peel and finely chop the ginger.
  • Heat a splash of olive oil in a wok or large frying pan over a high heat, then add the onions, garlic and ginger. Fry for a couple of minutes, or until the onions have softened slightly.
  • Add the seasoned pieces of steak and stir-fry for 1 to 2 minutes, then add the broccoli and fry for a further 2 minutes, stirring constantly.
  • Pour in the soy sauce and 1 teaspoon of sesame oil, toss in the pan until everything is well coated, then serve with the egg noodles.
  • Cut the lime into wedges for squeezing over, and finely slice the chilli (deseed if you like), then sprinkle over the top.

  • Dissolve bouillon in water. Combine the cornstarch and soy sauce until smooth; add to bouillon. Set aside. Toss beef with garlic, ginger and pepper. 1/4-1/3 cup light soy sauce
1/4 cup sherry wine or 1/4 cup cooking wine
1 cup green onion, sliced
1 cup celery, sliced diagonally
1 tablespoon grated fresh ginger
1/2 cup carrot, cut into matchsticks
1 cup broccoli, sliced
1 tablespoon sesame oil
12 large mushrooms, sliced
1/4 cup vegetable oil
2 garlic cloves, minced
1 tablespoon cornstarch
1 1/2 cups water

Steps:

  • Toss beef in bowl with soy sauce and sherry.
  • Cover and marinate for 30 minutes.
  • Heat oil in wok, or wide frying pan.
  • Add garlic and ginger and saute over high heat.
  • Add drained beef (reserve marinade).
  • Stir fry until meat is brown.
  • Add scallions, celery, carrots, broccoli and mushrooms.
  • Cover and steam about 5 minutes.

2 tbsp + 1/3 cup water (, separated)

Steps:

  • Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
  • Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
  • Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
  • Add 1/3 cup water into the remaining Sauce. Set aside.
  • Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
  • Add onion and cook for 1 minute.
  • Add the beef and cook until it changes colour from red to light brown but not cooked through.
  • Add bell pepper and carrots and stir fry for 30 seconds.
  • Add Sauce and cook for 30 seconds.
  • Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
  • Remove from heat immediately.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.

1 pound beef ribeye or sirloin steak ((cut into 1-inch cubes))
1 1/2 tablespoons vegetable oil ((divided))
1/8 teaspoon baking soda ((optional tenderizer, depending on the quality of your steak))
1 teaspoon cornstarch
1/4 teaspoon salt ((or to taste))
5 tablespoons water
1 teaspoon ketchup
1 teaspoon Worcestershire sauce ((optional))
2 teaspoons soy sauce
2 teaspoons oyster sauce
1/8 teaspoon ground white pepper
1/8 teaspoon sesame oil
1 tablespoon cornstarch ((mixed into a slurry with 1 tablespoon water))
12 ounces fresh bok choy ((cut and thoroughly washed))
1 tablespoon vegetable oil
3-4 slices fresh ginger ((smashed))
3 cloves garlic ((chopped))
1/2 teaspoon salt
1/8 teaspoon sugar
1/8 teaspoon MSG ((optional))

Steps:

  • When you prepare the steak cubes, leave some of the fat on the steak. This adds key flavor to the dish. Transfer the cubes to a medium bowl, and add 1 tablespoon vegetable oil, ⅛ teaspoon baking soda, 1 teaspoon cornstarch, and ¼ teaspoon salt. Toss until the steak is well-coated. Set aside for 30 minutes to 1 hour.
  • In a small bowl, combine the water, ketchup, Worcestershire sauce, soy sauce, oyster sauce, white pepper, and sesame oil. Set aside.
  • Make sure your bok choy is thoroughly cleaned. We always triple wash our bok choy. Not doing a thorough job risks sand ruining your vegetables.
  • Heat wok over high heat. Spread 1 tablespoon vegetable oil around the perimeter of the wok, and immediately add your smashed ginger slices. After 5 to 10 seconds, add the chopped garlic and bok choy.
  • Quickly stir-fry the bok choy (so the garlic doesn't burn), until it begins to wilt. You can also cover the bok choy for 30 seconds if your wok burner is not producing enough heat.
  • After the bok choy is cooked and wilted (about 60 seconds or so), add the salt, sugar and MSG (if using). Mix thoroughly, transfer to a warm serving plate, and set aside. MSG is totally optional, but it really brings out the flavor of stir-fried vegetables.
  • Work quickly through these next steps, because your stir-fried bok choy is waiting to be topped with your delicious steak! Carefully rinse your wok with warm water, drain, and wipe off any excess moisture. Place the wok back over the burner set to high heat. Spread ½ tablespoon vegetable oil around the perimeter of the wok.
  • Once the wok begins to smoke, add the steak in a single layer, fat-side down for any pieces with visible fat.
  • Sear for 30 seconds or until brown. Use your wok spatula to toss everything together to ensure even cooking and browning, but resist the temptation to stir too much. High heat is essential to ensure you have a good sear and maximum flavor. I like to sear the steak until cooked medium / medium rare, which is why this steak stir fry recipe calls for large 1-inch chunks of steak.
  • Once done to your liking, turn off the heat, and scoop the steak over the bok choy to rest. (If any liquid has pooled on the bok choy plate, pour the excess off before adding the beef.)
  • You'll need at least 1-2 tablespoons of the residual oil in the wok. Pour off any excess and discard. This is pure beef flavor that will make your sauce taste that much better. Turn the wok back up to medium-high heat. Pour the prepared steak sauce into the wok, using it to deglaze the wok. If you want more sauce, you can add some additional water-bonus if you use the water from the bok choy plate, which has a nice ginger and garlic flavor.
  • When the sauce is simmering, stir up the cornstarch slurry and drizzle it into the sauce, letting it thicken until it coats a spoon. Simmer for an additional 20 seconds to ensure the cornstarch is cooked. Turn the heat off, pour the sauce over your steak, and serve immediately with steamed rice.

2 teaspoons cornstarch
2 tablespoons toasted sesame oil
8 ounces top round steak, thinly sliced against the grain
2 bunches scallions, cut into 1-inch pieces
1/2 English cucumber, quartered and cut into 1-inch pieces
1/2 head napa cabbage, cut into 1-inch-thick strips
1 cup shredded carrots (about 2)
1 tablespoon minced peeled ginger
2 red jalapeno peppers, halved, seeded and thinly sliced
3 cups cooked white rice, for serving

Steps:

  • Whisk the brown sugar, soy sauce, cornstarch, 2 tablespoons water and 2 teaspoons sesame oil in a bowl. Add the steak and toss.
  • Heat a large skillet over high heat; add 2 teaspoons sesame oil. Add the scallions, cucumber and cabbage; stir-fry until the vegetables start softening, about 2 minutes. Add the carrots and 1/4 cup water; cook, stirring, until the water evaporates and the vegetables are tender, 2 to 3 minutes. Transfer to a bowl; wipe out the skillet.
  • Heat the remaining 2 teaspoons sesame oil in the skillet over medium-high heat. Add the ginger and jalapenos; stir-fry 30 seconds. Transfer the steak to the skillet using a slotted spoon; stir-fry until browned, 2 to 3 minutes.
  • Add the steak marinade back to the skillet and cook, stirring, until thick, about 2 minutes. Return the vegetables to the skillet and heat through. Serve over rice.

Salt and freshly ground pepper
1/4 cup low-sodium soy sauce
1 serrano chile pepper, seeded and finely chopped
2 teaspoons sugar
2 tablespoons freshly squeezed lime juice (1 to 2 limes)
2 tablespoons olive oil
2 cloves garlic, grated
1 bunch scallions, thinly sliced
6 ounces fresh mushrooms, sliced
1/4 pound snow peas or green beans
1 12-ounce can baby corn, drained
1 red bell pepper, thinly sliced (optional)

Steps:

  • Season the steak with salt and pepper. In a medium bowl, whisk together the soy sauce, chile pepper, sugar and lime juice until the sugar is dissolved. Add the beef, toss to coat and set aside.
  • In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
  • Remove the beef from the skillet and set aside. Allow the liquid in the pan to reduce until thickened, about 4 minutes. Add the garlic and scallions and cook 1 minute more.   • In a small bowl or measuring cup, whisk together soy sauce, brown sugar, sesame oil, and ginger to create the stir fry marinade. Set aside.

  • Slicing against the grain, cut the Steak into thin strips.

2 tablespoons vegetable oil (divided)
1 pound flank steak (thinly sliced)
2 tablespoons cornstarch
4 cups mixed vegetables
3 cloves garlic (minced)
1 teaspoon minced ginger
⅓ cup orange juice
⅓ cup water
¼ cup low sodium soy sauce
3 tablespoons brown sugar
1 ½ teaspoons sesame oil
1 tablespoon cornstarch

Steps:

  • Season steak with salt & pepper. Toss with cornstarch and set aside while you prepare the vegetables.
  • Place 1 tablespoon of oil in a pan or wok. Cook the beef in 2 small batches over medium high until browned, about 2-3 minutes (beef does not need to be cooked through). Remove from pan and set aside.
  • Add vegetables to the pan and cook about until tender crisp, 4-5 minutes. Remove from pan and set aside with the beef.
  • Combine sauce ingredients except corn starch in a bowl and stir well.
  • Turn the heat up to medium-high and add the sauce. Bring to a simmer. Combine cornstarch with 3 tablespoons water (or broth) and add it the sauce a little bit at a time while whisking to reach desired consistency. Let simmer 2 minutes. Add vegetables, beef (and any juices) to the pan and cook until heated through.
  • Serve with noodles or over rice.

  • Heat a large heavy pan or wok over high heat and add 1 Tbsp oil. When oil is hot, add beef in a single layer and sautee undisturbed 2-3 mins. Stir and sautee another 2 min or until nearly cooked through. Season lightly with salt and pepper, add ginger and garlic and sautee 1 min.
  • Drizzle beef with sauce to taste (I added 5 Tbsp) and stir-fry another 1 min or until beef is fully cooked through. Remove beef to a plate and cover to keep warm. Wipe pan clean with a paper towel.
  • Place clean pan over high heat and add 1 Tbsp oil. Once oil is hot, add mushrooms, season lightly with s & p and stir fry until golden (5 min). Transfer mushrooms to the plate with beef.

  • For the stir fry, using a meat mallet, rolling pin or the base of a saucepan, bash the steaks to make them a little thinner. Sit them in a large dish and spoon over 3 tablespoons of the marinade.
  • Cook the noodles in boiling salted water according to the packet instructions, then drain and set aside.
  • Heat 2 tablespoons of the oil over a medium–high heat in a large non-stick frying pan. Season the marinated steaks with salt and pepper and fry for 1½–2 minutes on each side, then transfer to a warmed plate to rest.
  • Wipe the frying pan with a piece of kitchen paper, add the remaining oil and fry the red peppers and onion for 3–4 minutes over a high heat. Tip in the white parts of the Chinese leaves and fry for another minute.
  • Add the remaining marinade and the drained noodles, toss until coated, then add the green parts of the Chinese leaves, some seasoning and half of the coriander.
  • Divide the noodles among four plates. Very thinly slice the steaks and place on top of the noodles. Drizzle any resting steak juices on top and garnish with the remaining coriander to serve.
